With Mother's Day around the corner, what will you be cooking for mummy dearest? On our side, we'll be making an absolutely delicious dish of Salt Baked Chicken using the Weber Genesis.
For this dish, we also used the Weber Gourmet BBQ System Pizza Stone, as it creates a high temperature similar to a stone oven used for baking, to give that nice flavorful finish that mum is sure to love! So give it a go and cook something unique for this special occasion today! :-)

We’ve always been a fan of all things BARBEQUE – Last week, we visited Weber Australia HQ in Adelaide for an immersion of the Weber Experience.
It's always an eye opener as to how, people who are passionate about cooking come out with tools to help them get the best possible results.
In a nutshell, the guys at Weber are the barbeque people – They’ve pretty much thought about everything about BBQ and even more by stepping it up a notch to expand on the capabilities of direct and indirect cooking on their grills!
There’s a truckload of ways to cook with them, and from our experience - it goes all the way from making a pizza with an awesome crust, to roasting or even baking, and the choices are stunning.
We’re food people, so to us at the end of the day, it's ALL about taste and Weber is big on that!
Thanks so much to the folks from Weber HQ Australia and Weber Asia, allowing us to try on this interesting experience, and taking such good care of us on the our trip there!

Using a similar method use for making cantonese roast duck, we created our crispy mandarin peel duck using the Weber Q. We used dried mandarin orange peels in our dry rub and also used fresh mandarin oranges in our sauce, just to go along with the roast duck!
By blanching the skin with maltose and vinegar mixture, we help to firm up the skin before air drying it. This is key to help create crispy skin when roasting the duck in the weber Q in indirect heat with the use of the roasting shield. The best part is that this only takes an hour!
The mandarin orange base sauce, which is made using plum sauce, is sweet and tangy and helps to cut the richness of the roast duck. A tasty recipe for a home brunch of a outdoor BBQ day!
