✅1 Egg
✅3 Cups Water
✅1 Tsp Sesame Oil
✅1 Cup Aged Kimchi
✅1/2 Cup Sliced Onion
✅1/2 Cup Sliced Carrot
✅2 Tbsp Chopped Garlic
✅1 Cube Knorr Ikan Bilis
✅1/2 Cup Chopped Scallions
✅1 Block Of Soft Tofu (Cubed)
✅1 Tsp Gochugaru (Korean Red Chili Flakes)
✅1 Tbsp Gochujang (Korean Hot Pepper Paste)
✅1 Chicken Thigh Or Breast Meat (Skinless, Boneless & Cut Into Bite-Sized Pieces)

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
🔸Place Kimchi, Chicken, Garlic, Scallions, Sesame Oil, Gochujang, Gochugaru & Knorr Ikan Bilis Cube in the pot.
🔸Pour in water & bring to a boil.
🔸Reduce the heat to a simmer & cook for 5 mins.
🔸Add-In Tofu, Carrots & Onions.
🔸Continue cooking for another 5 mins, adding the egg & scallions at the very end.
🔸Serve immediately, over steaming white rice if desired.

What a great day last night. After finished the race, I got back to the hotel. Had lunch and the have a short nap. Then say goodby to my friend @bashirabdi204
Then I received a message on Instagram from a Malaysian, Nik who based in Newcastle and they would like to invite me to come over to the race site for Nasi Lemak as they have set up a camp at the field next to it over there there, together with a group of Malaysian (Akmal, Mahat, Shu, Hilmi) and other members.
Took a 2 mile walk from the hotel that I stayed to their camp, and throughout the journey, I got to see the runners still doing their run. Last 2 mile to the finishing line. Gave them some cheer and motivate them to keep going. Jog or brisk walk, don't stop.
Super happy to have Malaysian food - Nasi lemak over there. We have a great time chatting and sharing about the race experience and got to know more about each other.
Later I got invited to one of their house, Abang Jamal, for coffee time and dinner. Got to meet their family members at his home and they are all so kind and thoughtful. Brought up some cakes, snacks, of course coffee ☕.
Warm welcome from them and then we had dinner together (kuey teow ladna, chicken, basmati rice).
We exchanged ideas, thoughts and sharing of our own experiences. I got to learn some new valuable information from them.
Then Abang Jamal fetch me back to the hotel at 10pm. Once I entered the lobby of the hotel, I got to see the Elite Athletes like @kingcheserek
@shazrine @bygolly.molly @stewy_mac3 @galenruppofficial @charlottepurdue
And the organizer, Matt.
And so I joined them. We have a great time laughing, talking, chatting. They are really funny and lovely. Super happy to spend time with them. Forgot to take a wefie for this moment! 😭
Enjoy the atmosphere so much. Wanna visit the 👑 @kingcheserek definitely after the Empire State Building Run Up and to train with them.
Thanks @great_run for all this wonderful experience.
I am looking forward already to come back to Newcastle for the Great North Run 2022 and this time I will be prepare for it and to hit a much faster timing (perhaps the NR!).

枝豆おにぎり3種
■しば漬けしそにぎり
おにぎり3〜4個分
材料:
ごはん 200g
A枝豆 25g(さやから豆を取り出した状態で)
Aしば漬け 40g
A塩 2つまみ
A白ごま 大さじ1
しその葉 適宜
作り方:
1. しば漬けは細かく切り、ごはんにAを混ぜたら握りしその葉をつける
■天かすエビかまぼこにぎり
おにぎり3〜4個分
材料:
ごはん 200g
枝豆 25g(さやから豆を取り出した状態で)
天かす 大さじ1
干しあみエビ 大さじ1
ピンクのかまぼこ 25g
めんつゆ 大さじ1
作り方:
1. かまぼこを細かく切って、全ての材料をごはんに混ぜて握る
■そぼろしょうがにぎり
おにぎり3〜4個分
材料:
ごはん 200g
枝豆 25g(さやから豆を取り出した状態で)
鶏ひき肉 100g
焼肉のたれ 大さじ2
白ごま 大さじ1
しょうが 1かけ( 約12g)
万能ネギ 2本
作り方:
1. フライパンで鶏ひき肉を炒め火が通ったら焼肉たれで味を付ける
2. しょうがは細かいみじん切りに、万能ネギも小口切りする
3. 全ての材料をごはんに混ぜて握る

200g steamed rice
25g edamame
40g shibazuke (Japanese pickles)
Some salt

PREPARATION
1. Chop shibazuke. Mix rice with chopped shibazuke, edamame, some salt, and white sesame seeds. Shape the rice into balls. Place some perilla leaves.
■Tenkasu, shrimp, and fish cakes
Servings: 3 to 4 rice balls
INGREDIENTS
200g steamed rice
25g edamame
1 tablespoon Tenkasu (Tempura flakes)
1 tablespoon dried shrimp
25g fish cake (pink color)
1 tablespoon noodle soup base
PREPARATION
1. Chop the fish cake into small pieces. Mix all ingredients with rice. Shape the rice into balls.
■Ginger chicken soboro
Servings: 3 to 4 rice balls
INGREDIENTS
200g steamed rice
25g edamame
100g ground chicken
2 tablespoons Japanese BBQ sauce
1 tablespoon white sesame seeds
1 piece (abt. 12g) ginger
2 strings scallion
PREPARATION
1. Cook ground chicken in a pan. When cooked, add some BBQ sauce.
2. Mince a ginger piece. Cho scallions.
3. Mix all ingredients with rice. Shape the rice into balls.

食 材:
鮮蝦 125g
蛋白 1/2顆
米酒 1小匙
薑片
鹽 1小匙
黑胡椒 1小匙
蔥花 少許
蛋餅皮兩張
市售泰式辣醬
把鮮蝦
蛋白
米酒
薑片
鹽
黑胡椒
蔥花
全部放入食物調理機攪拌均勻
挖一大匙蝦泥在蛋餅皮上
再拿一張蛋餅皮覆蓋在上面
用手把蝦泥壓均勻
叉子插幾個洞
放入氣炸烤箱180C 12分鐘
將剩餘的蝦肉捏成蝦餅
煎到兩面金黃
無油氣炸的月亮蝦餅就完成拉!
切塊上桌
沾一點泰式辣醬
就可以開心享用了

ヘルシーチョコムース
2人分
材料:
バナナ 2本
アボカド(切っておく) 小1個
ココアパウダー 25g
バニラエクストラクト 小さじ1/2
メープルシロップ 小さじ4
塩 ひとつまみ
おすすめのトッピング:
チョコチップ
ベリー
ココナッツフレーク
ナッツ
カカオニブ
バナナ
グラノーラ
作り方:
1. フードプロセッサーにバナナとアボカドを入れ、かくはんする。内側の壁面に付いたものはへらで落とし、ココアパウダー、バニラエクストラクト、メープルシロップ 、塩を加える。滑らかになるまでかくはんする。
2. (1)をボウルに移し、ラップをかけて15〜30分冷蔵する。
3. ムースを2つの容器に分ける。好きなトッピングで飾って、完成!

Healthy Chocolate Pudding
for 2 servings
Ingredients:
2 ripe bananas, sliced
1 small avocado, ripe but not mushy, diced
1/4 cup unsweetened cacao powder(25 g)
1/2 teaspoon vanilla extract
4 teaspoons maple syrup
1 pinch kosher salt
TOPPING IDEAS:
chocolate chip
mixed berry
toasted coconut flake
toasted nut
cacao nib
banana, sliced
granola
Preparation:
1. Add the banana and avocado to the bowl of a food processor and process until completely smooth. Scrape down the sides of the bowl, then add the cacao powder, vanilla, maple syrup, and salt. Blend until smooth and the color is the same throughout.
2. Transfer the pudding to a bowl, cover with plastic wrap, and refrigerate for 15–30 minutes.
3. When ready to serve, divide the pudding between 2 serving bowls and top with your favorite toppings, such as chocolate chips, berries, toasted coconut flakes, toasted nuts, cacao nibs, sliced banana, and/or granola.
4. Enjoy!
