免焗白朱古力莓果蛋糕
上次個自家種檸檬cheesecake好受大家歡迎(https://www.facebook.com/1474983002812768/posts/2837037816607273/),今次我又做咗另一個免焗cheesecake。老老實實咁熱嘅天氣,開焗爐就成屋都變焗爐,況且夏天食凍嘢係常識。呢個White Chocolate Berries Cheesecake好flexible,可以用你鍾意嘅莓果嚟做。我本想做士多啤梨,點知竟然買唔到,咁就用raspberry啦。其實用blueberries都好㗎!至於如果大家唔想用白朱古力,用普通50%或以上朱古力都可以,只要自己調番甜度,隨自己喜好加減糖份就可以。至於蛋糕層,今次我用咗lady finger同amaretti兩種意大利餅,佢哋吸收咗cheesecake同berries sauce嘅水份會變成蛋糕texture。你可以只用其中一款,又或者英式茶餅同瑪利餅都可以。不過我自己鍾情lady finger同amaretti,因為本身有厚度,所以出嚟效果會似一層sponge cake。Amaretti用杏仁粉做,所以仲會多一種nutty味道,所以我加埋落去增加味度層次。這兩款餅可以喺西式超市或烘焙材料店買到。
呢個蛋糕完全易整,最難已經係煮個berry sauce。大家懶亦可skip咗佢,或者只搽jam就算。係咪真係好flexible呢?
材料:
士多啤梨、紅莓或藍莓 約200g
果醬 (用你選生果同一口味或顏色) 100g
白朱古力 300 g
Cream Cheese 600g
打發用淡忌廉 250ml
砂糖 30g
Lady finger 及 amaretti餅 適量
裝飾用水果及餅 隨意
做法:
1. 先做水果淋醬。將你所選用的莓果洗淨瀝乾(較大的如士多啤梨可先切細),跟果醬一同放入小窩加熱,煮至水果軟化,醬開始收水即成。倒入另一容器內,用保鮮紙蓋好放雪櫃冷凍備用。(冷凍後會變得再杰身一點。)
2. 白朱古力切細件,隔水煮溶,或用微波焗爐每次30秒的叮直至全溶。稍為放涼備用。
3. 在磅蛋糕模上薄薄抹一層油,再鋪上保鮮紙以方便脫模。備用
4. 將cream cheese 和砂糖打勻,再加入忌廉打發至幼滑,再加入已放涼的白朱古力拌勻。
5. 在磅蛋糕內倒入一半份量的4,稍為抹平再倒入一半份量的1,抹平。在上面排一層lady finger,再倒入餘下的4,再抹平。在最上面排一層amaretti,輕輕的將每一塊餅按壓在在芝士蛋糕上。這將會是餅底,所以一定要盡量令它壓好及壓平。用保鮮紙包好,放入雪櫃雪過夜。
6. 取出蛋糕,取去面層保鮮紙,倒轉放在碟上脫模及取走其餘保鮮紙。將餘下的1抹在蛋糕面,再隨自己喜歡以水果及之前用剩的lady finger及amaretti作裝飾。

Hello friends! Today we're going to show you how to make no-bake white chocolate cheesecake with delicious maple Bourbon whiskey syrup.
No-bake cheesecake is the perfect dessert for summer! You don't even need to turn the oven on, and it’s super easy, only uses a few simple ingredients, but tastes creamy, rich and amazing.
Usually, making no-bake cheesecakes needs gelatine to set, but this no-bake cheesecake is made with white chocolate ganache to instead of gelatine and to help the cheesecake set in the fridge overnight to a perfect, tenderly firm consistency. Moveover, we make a maple bourbon topping for it, it’s a great addition to waffles, french toast and cakes. Can’t wait to share the recipe to you guys, hope you like this video. Enjoy! :-)

No-Bake White Chocolate Cheesecake Recipe
☞ cake mold: ⌀ 7.5cm Diameter
✎ Ingredients
☞ For the cake
unsalted butter 20g, melted
digestive biscuit 65g
whipping cream 30g, warm
white chocolate 90g
cream cheese 100g
mascarpone 80g
☞ For the syrup
maple syrup 40g
bourbon whiskey 3g
✎ Instructions
1. To prepare the cake crust, place digestive biscuits and a little bit of sea salt into a food processor and blend until fine crumbs.
2. Add melted butter with crumbs and blend until well combined.
3. Press the biscuit mixture evenly & firmly into a 8cm diameter cake mold.
And refrigerate until firm.
4. Add the chocolate chips and warm whipping cream In a small bowl, then place the bowl over another bowl of hot water, set for 5 minutes.
5. Once the chocolate is all melted, stir the ganache until smooth. Let cool.
6. In a large bowl, whisk soften cream cheese and mascarpone together by a hand mixer on low speed, until well combined.
7. Add the melted chocolate ganache and whisk on low speed, until just incorporated.
8. Spoon the cheesecake filling over the cooled and set biscuit base, then smoothing with a spatula.
9. Return to the fridge, and chill at least 5 hours or overnight.
10. Serve with bourbon maple syrup, enjoy.

免烤白巧克力起司蛋糕 怎麼作呢?
下面是免烤白巧克力乳酪蛋糕的做法與食譜:
☞ 份量:2人份;烤環尺寸為直徑7.5cm, 高5cm
📌 烤模尺寸換算方式:

✎ 材料 / Ingredients
☞ 蛋糕
融化的無鹽奶油(butter) 20g
消化餅乾 65g
溫熱的鮮奶油(whipping cream) 30g
白巧克力 90g
軟化的奶油乳酪 100g
馬斯卡邦起士 80g
☞ 糖漿
楓糖漿 40g
波本威士忌 3g
✎ 做法 / Instructions
1. 將消化餅乾用食物料理機打成粉末狀,加入一小撮鹽之花 (不加也可以) 攪勻
2. 再倒入融化的奶油充份攪拌均勻
3. 將餅乾粉屑舀進烤環裡,並均勻地壓實,壓實的餅乾底約為一公分厚,用好後送進冰箱冷藏最少半小時
4. 將白巧克力跟溫熱的鮮奶油倒入小碗裡,然後架在另一個裝有熱水的碗上隔水加熱,讓它靜置五鐘
5. 一旦白巧克力都融化了,就可以慢慢的跟鮮奶油攪拌均勻,然後將白巧克力甘納許放涼備用
6. 另外準備一個大料理盆,加入完全軟化的奶油乳酪跟馬斯卡邦起士,以手持攪拌器的低速攪勻
7. 加入白巧克力甘納許,再繼續用低速攪打均勻至滑順的質地
8. 將起士內餡舀進有餅乾底的烤環裡,內餡的高度約為2.5~3公分,然後表面稍微弄平整,然後送進冰箱冷藏過夜,或最少冰5個小時
9. 來調糖漿,將波本威士忌與楓糖漿混勻
10. 吃之前,淋上波本楓糖漿享用

This is definitely one of my most favourite no-bake desserts. The mangoes are now in season so they are perfect for mango cheesecake!
I am using Mexican Ataulfo Mangoes. Feel free to use the best types of mangoes that you could find at where you live. The more golden yellow/orangish the mangoes, the better looking the cake will be!
If you are using gelatin powder, there is brief instruction @8:18 in the video as to how to use it instead of gelatin sheets.
