Originated from Taiwan, Din Tai Fung is known internationally for its xiaolongbao & was named one of the top 10 restaurants in the world by The New York Times. We're glad to have DTF here in Singapore. Whenever we eat there, we always order the same few dishes & this Crispy Golden Prawn Pancake is one of our favourite. Hope you like Roland's rendition of this dish using the pan frying method.

材料 (約二十隻) Ingredients (~20 dumplings):
小籠包皮 Wrapper
一百五十克中筋麵粉 150g Plain flour
八十毫升熱開水 80ml hot water
餡料 Filling
三百克豬肉碎(三分肥肉,七分瘦肉) 300g Minced pork (30% fat, 70% meat)
三百五十毫升雞湯 350g Chicken stock
一湯匙魚膠粉 1tbsp Gelatin powder
二十克薑米 20g Ginger
二十克紅蔥頭碎 20g Shallots
六十毫升熱開水 60ml Hot water
一茶匙幼鹽 1tsp Salt
半茶匙胡椒粉 1/2tsp Ground pepper
兩茶匙生抽 2tsp Soy sauce
一隻雞蛋 1 Egg
一茶匙麻油 1tsp Sesame oil

I LOVEEEEEEE Din Tai Fung 鼎泰豐. Their food is soooo yummy. Thanks to BreadTalk, we are lucky to have DTF here in Singapore so we can eat this anytime we want. Every time I pass by one of their restaurants, I will always have an urge to dine in there. Some of my must-order dishes in Din Tai Fung include fried rice with five-spice pork cutlet, xiao long bao as well as this crispy golden prawn pancake. While Roland is still trying to replicate the taste of their fried rice, he's pretty good in replicating this dish which is really easy to make.

1 piece of beancurd skin (wipe clean and cut into 4 pieces)
1/3 of carrot chopped
1 teaspoon of cornflour or tapioca flour
2 - 3 stalks of chinese coriander
1 tablespoon of light soya sauce
egg white from 1 egg
