素食宅女的一天
大家放年假過得開心充實嗎?我卻過了幾天宅女生活,以下是我一天的行程:
1130:早上睡到自然醒,所以早餐就直接跳過吧
1230:動手做了一個紫菜味噌湯素食麵,味噌湯底讓整碗麵加分超多,還加了營養豐富的腰果
1500:上跑步機跑步,以前有一段時間訓練自己每晚跑,現在很久沒跑了,出了一身汗,挺舒服快樂的
1630:做了一個朱古力 (巧克力) 布朗尼配豆漿下午茶,這次終於用對面粉了
2030:對!又是吃,晚餐是大白菜海藻拌三色米,加了最迎的愛將 - 紅毛苔,不錯吃
2300:開始一邊擼貓一邊龜速剪影片
有時候,我還蠻喜歡宅生活,時間很多,可以多練習一下暗黑料理,自我感覺廚藝有進步 (至少吃了沒有拉肚子),賣相不好,請見諒~
[What a vegan do at home during holiday]
What did you do in Chinese New Year holiday? I stayed in a house for a couple of days. Here is one of my day's itinerary:
1130: I wake up naturally in the morning, so skip breakfast directly
1230: Made a seaweed miso soup vegan noodles for lunch, the miso soup added extra marks for the noodle, also added some cashews which contains a lot nutrition
1500: Running on a treadmill, I used to train myself to run every night for a while. Now I haven’t ran for a long time, feeling very comfortable and satisfy after sweating
1630: Made a chocolate brownie for afternoon tea, this time I used the right flour finally
2030: Eat again! Dinner is a Chinese cabbage seaweed mixed with three-color rice, plus my recent favorite - Red Seaweed, taste good!
2300: Start the playing with the cat and the turtle speed video editing
Sometimes, I like spending time at home, so I can practice my dark cuisines, feeling my cooking skill has been improved, at least not suffering diarrhea~

We miss Penang food. So today we will bring you to Pulau Penang. But because Max doesn't eat fish and Dirk is on a vegan diet, so vegetarian then!
You will need to prepare mushroom broth as the base. I didnt have mushrooms, so I did not show u in the video. You can grind the mushroom to add thickness to the soup! Also I had too little chili in the soup. Be Brave, add more!
Ingredients for 4 to 5 servings :
For the actual Laksa paste -
. 5 fresh chillies if u like it spicy
. 12 shallots
. 2 stalks lemongrass
. 4 cloves garlic
. 1 small piece turmeric around 3cm size
. 1 small piece of fresh peeled galangal (or ginger) 4 to 5cm size
. 1 tablespoon vegan shrimp paste (or miso)
- Blend all that into a paste, then saute in hot oil for 8 to 10mins -
For The BROTH :
. 6 to 7 cups of water or Mushroom broth
. around 6 pieces of Asam Keping or tamarind paste 3 tbsp. brown sugar
. salt for tasting
. 1 tbsp soy sauce
. one or more rolls of cut vegetarian fish
- Boil all together with the sauteed paste -
For Garnishing:
. Daun kesum leaves/ asam leaves
. Fresh mint. thin sliced ginger flower and lemon grass
. Chopped or sliced pineapple
. Finely sliced red onions
. Vegetarian shrimp paste for tasting
. some cut lime . you can also add thin slices of lettuce
Last but not least, the Laksa noodles or thick vermicelli/Bihun noodles.

Very tasty yet delicious Miso Ramen in 5 minutes!!!
Miso is a traditional Japanese seasoning made from fermented soybeans. It is a umami-rich paste to make a Miso Soup. There are tons of different kinds of Miso pastes in Japan. You can use any of your choice to enjoy this recipe.
I made this recipe for Vegan people but sure you can easily change the ingredients to make non-vegan Miso Ramen.

5 MIN Vegan Miso Ramen
Difficulty: VERY Easy
Time: 5 min
Number of servings: 1
Ingredients:
1 package fresh Ramen noodles
a bag of bean sprouts (remove the roots and heads if you prefer)
whole kernel corn (canned)
chopped green onion
((Miso Ramen Soup Base))
2 tbsp. Miso
1 tbsp. Soy sauce
1 tsp. Sugar
1 tsp. Kombu kelp Dashi powder
1 tbsp. ground white sesame seeds
1 tsp, garlic paste
1 tsp, ginger paste
1 tbsp. sesame oil
a few drops of La-Yu chili oil if you like
350ml hot water
Directions:
1. Wash the bean sprouts, place them in a microwavable dish, cover, then cook on medium (600w) for 2 min. Drain well, then season with salt, pepper, and sesame oil.
2. In a bowl, mix the ingredients of the Miso Broth, add hot water little by little then mix well.
3. In a pot, boil water. Add fresh Ramen noodles in the boiling water and gently stir noodles with chopsticks. Cook Ramen noodles according to your package. Drain the noodles in a strainer and place them in the soup. Then arrange the toppings.

I wanted to make Miso Corn Ramen but corn is not in season anymore.
I chose bean sprouts and green onion as vegetables ingredients but actually you could use any vegetables you like.

Ingredients:
for the ramen noodles:
200g bread flour
100g water
10g baking soda
tapioca starch(or any kind of starch powder)
for the soup:
800g water
50g miso
2 shiitake mushroom
1 clove garlic
1 tsp broad bean paste
1 tbsp coconut oil
1 tbsp sweetener
1 tsp salt(I didn't show this in the video but this is the most important ingredient)
200g bean sprouts
50g green onion
some thinly sliced dried chili pepper
Instructions:
1. bring baking soda water to a boil, then mix with bread flour
2. knead well with pasta machine and make it into noodles.
3. put all the ingredients for the soup and simmer gently.
4. boil ramen noodles for 1 minute
5. put everything together in a large bowl

中華麺
強力粉 200g
水 100g
重曹 10g
タピオカ澱粉 適量

水 800g

にんにく 1つ
豆板醤 小さじ1
ココナッツオイル 大さじ1
甘味料 大さじ1
塩 小さじ1
もやし 200g
ねぎ 50g
糸唐辛子 適量
「作り方」
1、水と重曹を混ぜ、沸騰させます。強力粉を加えます。
2、よく捏ねてからパスタマシンを使い、麺状に切ります。麺は切ったらタピオカ澱粉などを全体にまぶしてくっつかないようにしておきます。
3、スープの材料を全て混ぜ、ゆっくり煮ます。
4、中華麺を1分ほど茹でます。
5、もやしや白髪ねぎ、糸唐辛子など好みの具材を盛り付けて完成です。
