｛零負擔的三分鐘懶人巧克力慕思. Burden-free, 3-minute Vegan Chocolate Mousse ｝（附食譜. Recipe follows).

夏天燥熱，把平日就欠缺、得靠天寒地凍來喚醒的一點甜牙蟲都趕跑了，開烤箱做烘培的意願盪到谷底。但少了偶一為之的甜點，似乎煮婦生活又少了什麼。這種免加熱、幾分鐘內搞定的食譜，最適合這時候派上場了！不用去算營養價值和熱量，光看這免加糖、不用油、不加熱，用香蕉當甜味劑，加以酪梨、堅果共譜綿密口感的配方，就知道滋味差不了 ，和健康兩字也很麻吉，那...你還等什麼呢？趕快和好朋友分享！

Vegan Chocolate Mousse
（Recipe slightly adopted from “Vegetarian Everyday” Cookbook)

Ingredients:
2 avocado, peeled and pitted
3 ripe babanas
1/2 cup soaked raw cashew （or replaced with 1/3 cup of any nut butter. Raw cashew tastes more neutral, but it also makes the color lighter.)
¼ cup raw cocoa powder
2 TBSP carob (or semi sweet chocolate) chips
a pinch of sea salt
fresh berries to serve

Directions:
In a food processor, combine all the ingredients and process until it reaches mousse-consistency. Scoop into glasses or coffee cups and chill in the fridge for 30 minutes. Serve with a thin layer of cocoa powder and topped with berries.

（改寫自“Vegetarian Everyday”一書）

食材 （4人份）：
美國酪梨2 顆，去皮去核
熟香蕉3根
浸泡過夜的生腰果1/2杯 (可用1/3 杯杏仁醬、花生醬或腰果醬替代。生腰果味道最中性，但也淡化了巧克力的顏色.)
生可可粉1/4 杯
Carob chip（類似半甜巧克力片，可直接以此取代）2大匙
海鹽少許
新鮮莓果少許

作法：
將所有食材放進食物調理機或打汁機中，打成綿密如慕絲的口感，分裝於玻璃杯e或咖啡杯內，進冰箱冷藏半小時。食用前輕灑上一層生可可粉、綴上莓果。

Ingredients:

40g your choice of anaerobic coffee beans
700ml water
100g beet sugar
1 tsp agar powder
1 1/2 kudzu powder (you can skip this)
50ml water

150ml coconut milk
50g oat milk
50g maple syrup
1 tbsp vanilla bean paste

Instructions:

1. roast your coffee bean and brew it.
2. mix agar powder, kudzu powder and water then add the mixture and beet sugar to coffee.
3. keep heating until it almost brings to a boil. transfer it to a pan. leave it in a fridge.
4. mix coconut milk, oat milk, maple syrup and vanilla bean paste.
5. cut coffee jelly and pour cream mixture.
6. Enjoy!

「材料」

アナエロビックコーヒー豆　40g
水　700ml
甜菜糖　100g
粉寒天　小さじ1
葛粉　大さじ1.5
水　50ml

ココナッツミルク　150ml
オートミルク　50ml
メープルシロップ　50g
バニラビーンペースト　大さじ1

「作り方」
１、コーヒー豆を焙煎して淹れる。
２、粉寒天、葛粉、水をよく混ぜ合わせ、甜菜糖と一緒にコーヒーに加える。
３、沸騰直前くらいまで火にかけて温める。型に流し入れ、冷蔵庫に入れておく。
４、ココナッツミルク、オートミルク、メープルシロップ、バニラビーンシロップを混ぜ合わせる。
５、コーヒーゼリーをカットし、４のクリームをかける。
６、エンジョーイ！

Ingredients: makes 6 mini kouglofs

For the kouglof :
100 pastry flour
130g orange
25g oat milk (or whatever you like)
30g oil
60g beet sugar
1 tsp baking powder

For the frosting :
100g icing sugar
7g cacao powder
1 tsp coconut oil
1 1/2 tbsp home made vanilla extract (or water)

coconut flakes

Instructions:

1. In a blender, combine orange, oil and oat milk together and blend well.
2. add pastry flour, sugar and baking powder and mix well.
3. pour the mixture into a kouglof pan. bake at 180C/356F for 30 minutes.
4. mix all the ingredients for the frosting and pour over kouglof. sprinkle coconut flakes.
5. set aside and wait until it completely dries (it takes about a few hours to a day)
6. Enjoy!

「材料」ミニクグロフ６個分

薄力粉　100g
オレンジ　130g
オーツミルク　25g
オイル　30g
てん菜糖　60g
ベーキングパウダー　小さじ1

「作り方」

１、オレンジ、オイル、オーツミルクをブレンダーで滑らかになるまで混ぜる。
２、薄力粉とベーキングパウダーを篩い入れ、混ぜ合わせる。
３、クグロフ型に流し込み、180℃で30分、オーブンで焼く。
４、フロスティングの材料を全て混ぜ合わせる。必要に応じて水で固さを調節する。クグロフ全体に垂らす。
５、完全に乾くまで待ちます。（数時間〜１日ほど）
６、エンジョーイ！
