面紅代表氣血好?
很多人認為面色紅潤代表氣血好,不過從中醫角度來看,面色偏紅可能與熱證有關,如果身體出現手心潮熱、多汗、口渴、小便短黃、大便乾結等症狀,就代表身體有熱,熱可來自虛火或實火,長期熬夜、產後、更年期人士易有虛火,症狀為兩顴潮紅,因為體內陰氣不足,需要滋陰,宜適量進食有滋陰功效的食物例如雪耳、百合、雪梨、石斛、麥冬、蜂蜜等改善症狀。
實火是指陽氣超出正常水平,過量進補、多吃燒烤、火鍋、煎炸、辛辣食物都容易導致熱氣,症狀為滿面通紅、口乾、口臭、生暗瘡、小便黃等,需要清熱,除了適量飲用涼茶,亦可適量進食有清熱功效的食材例如冬瓜、青瓜、西瓜、火龍果、奇異果等。

What do flushed cheeks mean?
Many people think having flushed cheeks means they have a good blood and qi circulation, but from the perspective of Chinese Medicine, it can also be a heat-related symptom. If a person has warm and sweaty palms, hard and dry stools, sweats profusely, feels thirty regularly, and experiences a decreased output of urine that is yellowish, this means heat has already accumulated in the person’s body.
There are two categories of heat: asthenic heat and excessive heat. People who sleep late, women who have just given birth, and those with menopause tend to have asthenic heat, and having flushed cheeks is one of the symptoms. This is due to the lack of the yin energy. Hence, individuals with this condition need to nourish the yin and consume ingredients such as snow fungus, lily bulb, snow pear, dendrobium, radix ophiopogonis, and honey.
On the other hand, excessive heat refers to the accumulation of the yang energy. Heat would accumulate in a person’s body when he or she consumes grilled, fried, and spicy foods excessively. Likewise, symptoms may be flushed cheeks, dry mouth, bad breath, acnes, and urine in yellow color. To eliminate heat from the body, consume an appropriate amount of herbal tea and ingredients such as winter gourd, cucumber, watermelon, dragon fruit, and kiwi.

CheckCheckCin:不少孕媽媽以為懷孕覺得很熱就是有「胎毒」,胎兒屬「元陽之軀」,孕婦感到熱是正常的,假如你在孕期過度進補、多吃辛辣煎炸食物、經常熬夜,以致出現喉乾口渴、口瘡口氣、暗瘡、尿黃便秘、心情暴躁等體內偏熱症狀,才需要適量為身體清熱清胎毒。然而清胎毒必須靠醫師的辨證論治,對症下藥,因為每位孕婦的體質都不一樣。坊間流傳的白蓮鬚有清心益腎、益血固精作用,主治夢泄遺精、吐血崩漏、瀉痢,建議孕婦經醫師診治下才服用。如果孕婦體質本身偏寒涼、虛弱,胡亂自行「清胎毒」,反傷母子正氣。
濕疹是很普遍的皮膚病,如父母雙方都有濕疹,遺傳給孩子的機會高達七成;濕疹除遺傳因素外,空氣、環境、塵蟎、食物敏感等都可致病,與其只顧「清胎毒」,不如微調生活及飲食習慣,避免過份進補、減少進食辛辣、重口味食物。

チョコレートはタブレットタイプのクーベルチュールを使用しています。
補足1:ガナッシュをチョコでコーティングする際、テンパリング後のチョコが冷えてもったりしてきたら、適宜湯せんで温めて(33℃を超えないように注意)作業してください。

(a small amount of dark chocolate, spare) → If it doesn’t cool to 31-32 ℃ / 88-89 F, use spare chocolate. Add a small amount of finely chopped chocolate, and stir again.
NOTE: If melted tempered chocolate becomes heavy, soften it with hot water so as not to reach 34℃ / 91.4 F or more.

焦糖烤布蕾是我會教烘焙新手做的一道入門款甜點,這個配方做法簡單、美味,零失敗,而且糖度可以自己靈活調整,非常適合完全沒有烘焙經驗的朋友做。
今天使用的是太子牌速溶蜂蜜姜王晶,在原味的烤布蕾基礎上增添了一點淡淡的薑味,入口絲滑、綿密,姜味和鮮奶油濃郁的奶味完美融合,食用前撒上姜王晶和砂糖,用噴槍烤至表層焦脆,非常好吃,一口一口停不下來。
融合姜王晶的焦糖烤布蕾,享受美味的甜點的同時還能兼具養生,何樂而不為?
食譜:
175C 40分鐘
分量:四個約3寸的模具
材料:
動物性鮮奶油 340g
白砂糖 30g
太子牌速溶蜂蜜姜王晶, 1小包
蛋黃 4
香草精 1茶匙
姜王焦糖表層:
太子牌速溶蜂蜜姜王晶
白砂糖
製作步驟:
1. 將鮮奶油煮至鍋邊沸騰。
2. 加入姜王晶並攪拌均勻。
3. 將鮮奶油慢慢倒入蛋黃中,混合均勻。
4. 將蛋液過篩。
5. 倒入模具。
6. 在烤盤中倒入熱水,高度至模具一半。
7. 用錫箔紙蓋住。
8. 烤至布丁液凝固即熟。
9. 從烤盤中移除,放涼。
10. 在布丁鋪上姜王晶和白砂糖,用噴槍噴至焦糖狀。
11. 享用美味的薑味焦糖烤佈蕾吧!
Ginger creme brulee recipe:
yield: four (3inch mold)
350F 40minutes
Ingredient:
heavy cream 12 oz
granulated sugar 1 oz
Prince of Peace Instant Ginger Honey Crystal, 1 sachets
egg yolk 4
vanilla extract 1 teaspoon
ginger caramel topping:
Prince of Peace Instant Ginger Honey Crystal
granulated sugar
direction:
1. Scald heavy cream with granulated sugar.
2. Add in Prince of Peace instant ginger honey crystals, mix well.
3. Temper egg yolks.
4. Strain the mixture.
5. Pour into the mold.
6. Fill the pan half way up with warm water.
7. Cover with foil.
8. Bake until the center is set.
9. Remove and chill.
10. Finish by sprinkling ginger honey crystals and sugar and torching.
11. Enjoy the delicious ginger creme brulee.
