Do you know what STINKY TOFU is? If you have been to Hong Kong and Taiwan night markets, you will know what this is. I have been craving for these tofu. My neighbour bought me some from the SS2 shop, I have tried and found them not smelly enough and just more herbal. I think they are more Taiwanese style. So I told them, let me try to make my own Hong Kong style stinky type. So I went on doing some research on how we can make the fermentation. Guess what, I must say I am super happy and excited over the stinkiness in my house. Weird but true. I felt like I was in a Hong Kong night market! I gave myself a 7/10 mark. Hahaha.
HK Style Fermentation Ingredients (2.5 litres jar):
. 1 whole mustard green/spinach, cut
. 4 to 5 stocks of coriander/spring onions, cut
. 200 g or more old ginger, sliced
. 20 to 25 pcs or more fresh prawns for prawn heads
. 5 pieces of fermented bean curds, mashed. 1 cup rice wine
. 1 litre rice water (water from washing rice)
. 1 litre cooled down cooked water
. 1/2 cup of salt
* Mix all above into an air-tight glass jar & leave it in your storage for 2 weeks to 1 month. It can get very smelly!!
For Fried Stinky Tofu Ingredients :
. 20 pcs of small to medium size firm tofu (not the soft tofu)
. oil for frying
* Soak the tofu in fermented water overnight in a sealed container overnight in the refrigerator.
To serve (dig a whole in the middle of the tofu & add below ingredients) :
. Spicy sauce or
. Pickled cabbage or kimchi
. Cut coriander or spring onions
My only advice for you all is fry your tofu outside the house or with your hood on full blast! Otherwise you will end up having the night market store smell for 1.5 days like I had. I don't hate it, but everyone in the house was hiding inside their rooms!
I am glad I found the secret of making this. Hope I will improve this and make them even more smelly and yummier? Yes I will soak the tofu for more than a day. So what is next? I still have a huge jar of Taiwanese fermentation going on. I will be able to try it in 2 weeks. I am determined to let it ferment for a month. Will let u all know soon.
Yes they are stinky when u prepare them and fry them up. But they taste far better than they smell. It has many health benefits like helping the digestive system and treating cold symptoms. According to some studies, eating stinky tofu can also help prevent osteoporosis, lower the risk of prostate and breast cancer, and reduce cholesterol. Hmm, interesting. I love them no matter what!

Been ages since I had yoshinoya and thus I’m not sure if the menu of it’s @313somerset food republic outlet is the same with those elsewhere. Nonetheless, here’s a comforting sukiyaki beef pot that comes with rice and onsen egg 😌
There’s not only beef but also tofu, cabbage, Enoki mushrooms, spinach and udon in the pot. Broth is on the sweet side but I guess that’s what makes it yoshinoya!

Whampoa Keng Fishhead Steamboat has opened a new outlet at 512-514 Geylang Road! We had big chunky red garoupa in thick and slightly sweet broth.
Sweet & Sour Spare Ribs were juicy and served with Golden Crispy Cod Strips. We also had the crispy Deep Fried Nan Ru Pork Belly, Poached Chinese Spinach with Assorted Eggs, Claypot Indonesian Style Chicken and soft Signature Crab Meat Foodstreet Tofu in Gravy.
Still a satisfying dinner but parking might be an issue here. Opens till 1am and they are open throughout CNY!

This is a highly requested recipe and we’re excited that we can finally dish it out to you. Roland got this recipe from our uncle who is a retired zichar chef. It took him a few tries and a few consultations with his cousin who is still a zichar chef, to get this right. Hopefully you can make this recipe on your first try. Roland's cousin suggested that we use Thai yam because its texture is the best for yam ring so if possible, get Thai yam.

According to Hungrygowhere, yam ring is a uniquely Singapore dish, which was first created as a vegetarian dish. Today yam ring or sometimes referred to as yam basket, has become a zichar staple. For yam ring

300g Thai yam

1 teaspoon sugar

60g wheat starch (the one we used: Sunflower Wheat Starch - Tim Sum Flour https://fairprice.com.sg/product/sunflower-tim-sum-flour-wheat-starch-500g-147430)
90ml (slightly more than 1/3 cup) hot water
30g lard (can be replaced with margarine, butter or vegetable shortening)
1/2 teaspoon baking powder (https://amzn.to/2ZqpSvr)
Note: If you don't know how to get lard, just buy a piece of pork fat from your butcher and follow this video: https://youtu.be/PHlRSf6VpQo. The oil that comes out from the pork fat is lard - just let it cool down and then store it in the fridge and it will solidify. Use the crispy lard in your dishes by sprinkling some over. Super yummy!
For stir fry

20g sliced carrots

100g thinly sliced chicken

Bechamel:
- ½ yellow onion, finely chopped
- 2 cloves garlic, finely chopped
- 3-4 tbsp olive oil
- ¼ cup corn starch
- 2 cup unsweetened plant-based milk
- 2 tbsp nutritional yeast
- ½ tbsp dijon mustard (or 1 tbsp lemon juice)
- Salt & pepper to taste
- Pinch of nutmeg
Filling:
- ½ courgette, finely sliced
- 1 small aubergine, finely sliced
- 2 cloves garlic, finely chopped
- 5 chestnut mushrooms, sliced
- 1 can green lentils, rinsed & drained (about 400g)
- 2 handfuls of baby spinach
- 2 tsp dried rosemary
- 1 tsp dried thyme
- 1½ tbsp tomato puree
- 1 bottle passata (about 680g)
- Salt & pepper to taste
Lasagna:
- Lasagna sheets (not the ones that need to be boiled)
- Nutritional yeast
Prepare according to the video instructions
Bake at 180°C
