木瓜既是水果,又是下廚的食材,更可藥用,從中醫角度來看,木瓜有健脾胃、幫助消化、消暑解渴的功效,未成熟的青木瓜酸甜爽脆,適合用來做涼拌菜或煲湯;煲湯尤其適合產婦飲用,因為青木瓜所含的蛋白酶比熟木瓜多,有助催乳。而熟木瓜香甜多汁,可作水果食用,或者攪拌成蓉醃肉,因為木瓜酵素能分解蛋白質,令肉質更鬆軟;用作煲湯的話可令湯水更清甜可口。
木瓜 — 性平,能健脾胃,幫助消化,消暑解渴。適合脾胃虛弱、容易胃脹不適人士服用,能紓緩食慾下降、消化不良、胃部不適、產婦乳汁不多等症狀。注意孕婦不宜食用。
食材小貼士:
黃豆性平,有健脾利濕功效,有助紓緩脾虛水腫、無胃口等症狀。適合各類體質人士食用。但注意過量服用容易引致胃脹。痛風患者忌食。
木瓜粟米黃豆湯
功效:理氣和胃,清熱利濕,紓緩腸胃濕熱引起的胃脹及便秘等症狀。
材料:熟木瓜1個、粟米2根、粟米鬚20克、眉豆20克、黃豆30克、蜜棗2枚
做法:
1. 所有材料洗淨,木瓜去皮去籽切塊;粟米去衣留鬚切段備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。
注意:由於木瓜會刺激子宮收縮,孕婦不宜食用。

Benefits of using ripe and unripe papayas to make soup
Papaya is not only a type of fruit but also an ingredient used in cooking and has medicinal properties. From the perspective of Chinese Medicine, papaya can strengthen the stomach and spleen, aid digestion, clear summer-heat, and quench thirst.
Unripe green papayas are crunchy and are both sour and sweet in taste. They are suitable for cold dishes and can be used to make soup. Soup made from unripe papayas is suitable for postpartum women as the green fruit contains more proteases than the ripe ones, and these enzymes can induce lactation.
Ripe papayas, on the other hand, are sweet and juicy, and can be served as fresh fruit or mashed into puree and be used to marinate meat. This is because the enzymes in the papayas can break down protein, tenderizing the texture of the meat. By using ripe papayas to make soup, it becomes sweeter.
Papaya – mild in nature, can strengthen the spleen and stomach, improve digestion and quench one’s thirst; is suitable for individuals with a weak spleen and stomach, and those who experience bloating. It can stimulate appetite, relieve indigestion and promote lactation. Pregnant women should avoid eating papaya.
Tips on ingredient:
Soy beans are mild in nature, can strengthen the spleen and dispel dampness. Alleviates symptoms related to weak spleen such as bloating and lack of appetite. They are suitable for all body types. Note over consumption can lead to abdominal bloating and those suffering from gout should avoid.
Papaya and corn soup with soya bean
Effects: regulates qi and stomach, clears heat and dispels dampness, relieves stress related symptoms such as abdominal bloating and constipation.
Ingredients: 1 ripe papaya, 2 ears of corn, 20g corn silk, 20g black-eyed pea, 30g soya bean, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel and core the papaya and cut into pieces. Remove husks from corn and cut into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.
Note: Since papaya can cause uterine contractions, it is not suitable for pregnant women.

中國人傳統習俗生日會吃紅雞蛋,從前的人會用花紅粉為雞蛋染色,但花紅粉為工業用色素不利健康,所以現在改用紅色食用色素,或者用紅色玻璃紙包裹。雞蛋是一種老少咸宜的食材,從中醫角度來看它屬性平和,有滋陰潤燥、養血安胎及健腦的功效,但怎樣吃才是最好?來看看以下Q&A能否解決你對雞蛋的疑問。
雞蛋 — 性平,有滋陰潤燥,養血安胎及健腦,適合體質虛弱、營養不良、氣血不足、產婦、孕婦等。蛋黃能健腦益智,增強記憶力,適合嬰兒及小兒適量食用。注意發燒及腹瀉不宜。
問:一天只可吃一隻雞蛋?

問:雞蛋哪種食法最好?
答:全熟烚蛋最好,因為生雞蛋含有抗生物素蛋白(avidin)令身體難以消化及吸收蛋白質,當雞蛋煮熟後蛋白結構會變化,蛋白質會易於被吸收,吃烚蛋我們可以吸收到雞蛋的蛋白質九成以上,但吃生蛋只可以吸收三至五成。而雞蛋中可能存在沙門氏菌,食用未完全煮熟的雞蛋例如溫泉蛋、溏心蛋等,會有感染沙門氏菌的風險,所以嬰幼兒、長者或抵抗力較差者宜吃全熟蛋。

Eggs are suitable for both young and old to consume. From the perspective of Chinese Medicine, it is mild in nature, can nourish the yin and moisten the body, nourish the blood, improve the wellbeing of the fetus, and strengthen the brain. Q: Can we eat more than one egg a day?
A: Depends on your diet. If you have consumed a lot of protein-based food like fish, meat and soy products, then one egg is enough; if there is a lack of protein in your diet, you can replenish it by taking more eggs.

A: According to recent medical studies, the cholesterol we consume through food is not the main contributor of the cholesterol in our blood. A: Fully cooked eggs are the best because the raw ones contain avidin, which is hard to digest and to absorb the protein. When the eggs are cooked, the structure of the egg white will change, making it easier for the body to absorb. Our body can absorb at least 90% of the protein if they are completely boiled, but it can only absorb 30%-50% if the eggs are still raw. Moreover, eggs might contain salmonella, so we might risk getting an infection if we eat soft-boiled eggs and poached eggs that are not fully cooked. Therefore, toddlers and elders with a weak immune system are encouraged to consume eggs that are fully cooked.

d. Garlic sauce 1 tsp
e. Oyster sauce 1 tsp
f. Oil 1 tsp
Mix well.
2. Eggplant, cut into 2 shares. Each share is to be divided into 2 Nos.
3. Eggplant, use a knife to make gaps on it. This is help the eggplant easy to be cooked well and absorb the sauce easily.
4. Put meat sauce on top of eggplant.
Steps:
1. Heat up a wok of water at high flame. Steam the eggplants for 10 minutes.
2. Prepare the sauce:
a. Heat up 1 tsp oil at medium flame in wok.
b. Heat up light soya sauce 1 tsp, turn off fire.
3. Eggplant has been already steamed well. Put the sauce on top.
4. Put coriander on top. Serve.

Tempeh is a fermented form of soy that’s high in protein, low in fat and rich in probiotics, hence making it very easy to digest. For every 100g it contains 18g of protein and under 200 Calories! It is also a complete protein, containing all nine essential amino acids. Hence, making it an excellent choice as a meat replacement, without the saturated fat or cholesterol.
Although it’s firm, it still absorbs the flavours around it, so it’s an easy and versatile ingredient to add to any dish.
SWEET & SOUR TEMPEH
Ingredients (serves 4):
1. 1 (250g) packages Tempeh, cut into cubes – 482Cals
2. ½ medium red bell pepper, cut into chunks - 18.5Cals
3. ½ medium green bell pepper, cut into chunks - 18.5Cals
4. ½ Red Onion, roughly chopped – 23Cals
5. 1 cup Pineapple, cut into chunks – 80Cal
6. 2 Garlic Cloves, minced – 9Cals
7. 1.5 tbsps. Sesame Oil – 180Cals
8. A handful of Fresh Coriander, roughly chopped – 6Cals
9. ¼ tsp. Red Chilli Flakes – 2Cals
Total Calories – 819Cals
Sweet and Sour Sauce:
1. ¼ cup Ketchup - 68Cals
2. ¼ cup Rice Vinegar - 8Cals
3. ½ tbsp. Soy Sauce
4. 1.5 tbsps. Raw Honey - 96Cals
5. 1 tbsp. Cornstarch mixed with 2 tbsps. Cold Water - 30Cals
6. ¼ cup water
Steps:
1. First, prepare the sweet and sour sauce. In a bowl, whisk together ketchup, rice vinegar, soy sauce, honey, water and cornstarch. Set aside.
2. In a large pan, heat oil over medium-high heat. Stir in tempeh, bell pepper, onion, garlic, and chilli flakes. Cook until just beginning to brown, 5-7 minutes or until vegetables are slightly tender.
3. Mix in the pineapple and sweet and sour sauce mixture. Continue to cook very quickly for another 2 to 3 minutes until all ingredients are evenly coated and remove from heat.
4. Sprinkle with a little bit of cilantro and serve.
Total Calories – 1021Cals
Calories per serving – 256Cals
SAUTE VEGETABLE TEMPEH
Ingredients (serves 4)
1. 150g tempeh, cut into cubes – 290Cals
2. 1 red onion, roughly chopped – 46Cals
3. ½ medium red bell pepper, cut into chunks - 18.5Cals
4. ½ medium green bell pepper, cut into chunks - 18.5Cals
5. 2 Garlic Cloves, sliced – 9Cals
6. 1 head Broccoli – 98Cals
7. 1 tbsp. Olive Oil – 69Cals
8. 1.5 tbsps. Soy Sauce – 14Cals
Steps:
1. Heat the oil in a wok over a high heat. Add garlic, tempeh and soy sauce, stir-fry until the tempeh begins to colour.
2. Then add in onion, broccoli and bell peppers. Stir fry for few minutes or until the vegetables are tender crisp.
3. Serve immediately.
Total Calories – 563Cals
Calories per serving – 141Cals
BAKED TEMPEH
1. Start by slicing up the tempeh into different shapes and sizes, depending on the recipe. Now let’s prep the marinade sauce, I’m using 2 tbsps. soy sauce, 1 tbsp. olive oil and 2 garlic cloves, minced.
2. Pour the sauce over the tempeh to pack in more flavours. Lay them out on a tray.
3. Bake them all at 180 degrees celcius in a pre-heated oven for about 15 -20 minutes.
4. So you can enjoy, baked tempeh skewers, top your salad up with baked tempeh, make tempeh sandwich or simple enjoy it on it’s on as a snack.
TEMPEH BOLOGNESE SAUCE
Ingredients (serves 4):
1. 150g tempeh, crumbled – 290Cals
2. 1 can Diced Tomatoes – 106Cals
3. 2 tbsps. Olive Oil – 138Cals
4. 1 cup Chopped Onion – 64Cals
5. 2 Garlic Cloves, minced – 9Cals
6. ¼ tsp. Dried Basil - 1Cals
7. 1 tbsp. Fresh Coriander, minced – 2Cals
8. Salt and pepper to taste
Steps:
1. Heat oil over medium-high heat. Cook the onion and garlic, until they are lightly browned, for about 3 minutes.
2. Then stir in the crumbled tempeh and continue to cook until the tempeh begins to brown. Then mix it the diced tomatoes, basil and flavor with salt and pepper.
3. Allow all the ingredients to cook and simmer for another 5 – 7 minutes until the tempeh absorbs the flavour of the sauce. Don’t forget to stir occasionally.
4. You can either choose to serve it on pasta or rice.
Total calories – 610Cals
Calories per serving – 153Cals
