Meatloaf Cupcakes
Ingredients:
1 teaspoon olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
1 teaspoon dried oregano
2 garlic cloves, minced
1 cup ketchup, divided
700 gm ground beef
1 cup bread crumbs
2 tablespoons mustard powder
1 teaspoon Worcestershire sauce
1/4 teaspoon freshly ground black pepper
2 large eggs
Cooking spray/oil
Mashed Potatoes:
4 cups cubed peeled potatoes (about 1kg)
1/4 cup low-fat milk
1/4 cup low-fat sour cream
3 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Garnish:
3 tablespoons chopped chives
4 pieces of beef bacon- cooked & chopped
Preparation:
1. Preheat oven to 180°C. Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped carrot, dried oregano and minced garlic; sauté for 2 minutes. Cool.
2. Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.
3. Spoon the meat mixture into 12 muffin cups coated with cooking spray/oil. Top each with 2 teaspoons ketchup. Bake at 180°C for 25 minutes. Let it stand for 5 minutes.
4. While the meatloaf is cooking, make the mashed potatoes. Place potato in a saucepan; cover with water. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until tender. Drain. Put potatoes into a ricer for best results. Return potato to pan. Add milk and remaining ingredients; stir with a spoon to the desired consistency- need to be stiff enough to pipe on top.
5. Put the potatoes into a pastry bag with a wide star tip and pipe the mashed potatoes on top of the meatloaf. Sprinkle with beef bacon crumbles and chopped chives.

マッシュポテトのベーコン巻きミートローフ

材料:
牛ひき肉 900g
玉ねぎ 150g(みじん切りにして、炒めておく)
ピザ用パルメザンチーズ 1カップ
卵 2個
パン粉 50g
塩 小さじ2
こしょう 小さじ1 ½
ウスターソース 小さじ2
牛乳 ½カップ (120 mL)
パセリ 15g(細かくみじん切り)
ソース
ケチャップ 1 ½カップ (360 mL)
ブラウンシュガー ½ カップ (110 g)
マスタードパウダー 小さじ2
オニオンパウダー 小さじ2
パプリカパウダー 小さじ2
トマトペースト ¼カップ (55 g)
マッシュポテト
じゃがいも(ユーコンゴールドポテト) 455g(皮をむいて切り、茹でておく)
バター 大さじ2
塩 小さじ1
こしょう 小さじ½
牛乳 1 カップ (240 mL)
ピザ用パルメザンチーズ 1/2カップ
ベーコン 28切れ
作り方:
1.オーブンを180度に予熱しておく。
2.大きなボウルに、牛ひき肉と、炒めた玉ねぎとにんにく、パルメザンチーズ、卵、パン粉、塩、、こしょう、ウスターソース、牛乳、パセリを入れて混ぜる。よく混ぜたら置いておく。
3.別のボウルに、ケチャップとブラウンシュガー、マスタードパウダー、オニオンパウダー、パプリカパウダー、トマトペーストを入れて、ソースを作り、置いておく。
4.大きなボウルに、茹でたじゃがいもを入れて潰し、バター、塩、こしょう、牛乳、パルメザンチーズを入れて、なめらかになるまで混ぜて、置いておく。
5.ブントパンに、ベーコンを敷き詰め、刷毛を使って、(3)のソースをベーコンの内側全体に塗る。
6.(2)の2/3量を、ベーコンを敷いたブントパンの真ん中くらいまで入れ、マッシュポテトを中に入れられるように、肉をフチに押してボウル状にくぼみを作っておく。
7.マッシュポテトを、(6)で作ったひき肉のくぼみに入れ、上をなめらかに平す。その上に残った肉を入れ、上にソースを塗りつける。ソースを塗ったら、肉を全て覆うようにベーコンを畳む。アルミフォイルで包んで、オーブンで1時間焼き、途中30分焼いたところで、アルミフォイルを外す。その際に、余分に出た肉汁も注意深く取り除いてからオーブンに戻す。
8.ブントパンの上に金網を乗せて、ひっくり返して、天板の上に出す。ブントパンを外し、残しておいたソースを、焼けたミートローフの表面全体に塗る。
9.ソースがキャラメルのように色づくまで、強火で3-5分焼く。
10.完成!
Bacon-wrapped Mashed Potato-stuffed Meatloaf
Ingredients
for 8 servings
2 lb ground beef (900 g)
1 cup onion (150 g), diced, sauteed
3 cloves garlic, minced, sauteed
1 ½ cups grated parmesan cheese (165 g), divided
2 eggs
1 cup panko breadcrumbs (50 g)
2 teaspoons salt
1 ½ teaspoons pepper
2 teaspoons worcestershire sauce
½ cup milk (120 mL)
½ cup fresh parsley (15 g), finely chopped
GLAZE
1 ½ cups ketchup (360 mL)
½ cup brown sugar (110 g)
2 teaspoons mustard powder
2 teaspoons onion powder
2 teaspoons paprika
¼ cup tomato paste (55 g)
MASHED POTATOES
1 lb yukon gold potato (455 g), peeled, chopped, cooked
2 tablespoons butter
1 teaspoon salt
½ teaspoon pepper
1 cup milk (240 mL)
28 slices bacon, slices
Preparation
1.Preheat oven to 350˚F (180˚C).
2.In a large bowl, mix together beef, cooked onions and garlic, Parmesan, eggs, panko, salt, pepper, Worcestershire, milk and parsley. Set aside.
3.In another bowl, make the glaze by mixing ketchup, brown sugar, mustard powder, onion powder, paprika, and tomato paste. Reserve half of the glaze in a separate bowl for after the meatloaf is cooked. Set aside.
4.In a large bowl, mash cooked potatoes, butter, salt, pepper, milk and parmesan to desired consistency. Set aside.
5.Line a bundt pan with slices of bacon and use a pastry brush to spread a layer of glaze on the inside of the bacon.
6.Add ⅔ of the meat to the bottom of the bundt pan and spread up the sides and up the middle of the pan making a “bowl” for the mashed potatoes.
7.Add the mashed potatoes into the “bowl” and smooth out. Top the mashed potatoes with the remaining meat, smooth out, coat the top with the raw meat glaze, and fold the slices of bacon over the top of the meat. Cover with foil and bake for 1 hour, remove the foil after 30 minutes and carefully drain some of the fat before putting it back into the oven.
8.Place a cooling rack on top of the bundt pan and flip over onto a baking sheet. Remove the bundt pan and coat the meatloaf with the reserved glaze.
9.Broil on high for 3-5 minutes or until the glaze has caramelized.

INGREDIENTS
7 pounds boneless pork shoulder
3 tablespoons brown sugar
2 tablespoons coarse kosher salt
2 tablespoons paprika
2 teaspoons mustard powder
1 tablespoon ground cumin
1 tablespoon garlic powder
1 tablespoon chile powder
2 teaspoons ground coriander
1 tablespoon onion powder
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 russet potato, halved lengthwise
12 hamburger buns or dinner rolls
Coleslaw, for serving (optional)
Mac ‘n’ cheese, for serving (optional)
Pickles, for serving (optional)
Barbecue Sauce
1½ cups ketchup
¼ cup packed dark brown sugar
3 tablespoons molasses
2 tablespoons Worcestershire sauce
2 tablespoons apple cider vinegar
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon Dijon mustard
½ teaspoon cayenne pepper
Special Equipment
2 wooden skewers
PREPARATION
Preheat the oven to 300°F (150°C). Arrange an oven rack on the lowest setting, removing the other racks if needed.
Place the pork shoulder on a cutting board and slice the meat into 2-inch thick slices.
In a small bowl, combine the brown sugar, salt, paprika, mustard powder, cumin, garlic powder, chile powder, coriander, onion powder, black pepper, and cayenne.
Sprinkle the spice mixture all over the sliced pork and toss to coat evenly.
Set a wire rack over a baking sheet and grease with nonstick spray. Place the potato halves on the rack, cut sides down. Insert a skewer into each potato half.
Thread the pork slices onto the skewers.
Cover the pork tower with foil, place in the oven, and roast for 4 hours or until the pork is fully cooked and tender.
To a small pot on medium heat, add oil, minced onion, garlic, and the leftover spice mixture. Stir the vegetables and cook until soft.
Make the barbecue sauce: In a medium pot over medium heat, combine the ketchup, brown sugar, molasses, Worcestershire sauce, apple cider vinegar, garlic powder, paprika, Dijon, and cayenne. Whisk and bring the sauce to a boil. Remove from the heat and set aside until ready to use.
Once the pork is finished cooking, remove the foil and pour the barbecue sauce over the pork tower. Use a brush to evenly cover all of the meat.
Return the pork to the oven for 30 minutes, or until the sauce starts to caramelize.
Carve the pork tower with a serrated knife. Serve the meat on the buns, with sides like coleslaw, mac ‘n’ cheese, and pickles.

處理:
1. 煲大滾水烚腍薯仔,去皮。
2. 剪去菠菜頭,清水洗乾淨。
3. 加入少量水分,攪碎菠菜。
烹調:
1. 放薯仔入煲內。
2. 加入已攪碎的菠菜蓉入煲內。
3. 可隨意加入肉類或海鮮。
4. 大火煲滾。
5. 壓爛薯仔。

Preparation:
1. Boil up a pot of water. Soak the potatoes until they are soft enough. Peel them.
2. Cut the root of spinach. Rinse thoroughly.
3. Blend the spinach well with little water.
Steps:
1. Put potatoes into pot.
2. Put blended spinach into pot.
3. Put meat or seafood depends on personal favorite.
4. Heat up at high flame.
5. Blend the potatoes.
6. Add minced meat (if any), until it boils up.
7. Add sugar 1 tsp and abalone sauce 1 tsp.
8. Get the mugs ready.
9. Pour the soup into mugs.
10. Put them into halogen cooking pot.
11. Put a piece of crepe on each mug.
12. Bake at 175 C for 15 minutes.
