Nasi Ayam ala hotel..
Lauk Ayam:
1 ekor ayam
2 inci halia
4 ulas bawang putih
5-6 ulas bawang merah
Bahan perap:
1 sudu besar sos tiram
1-2 sudu besar kicap cair
1 sudu besar kicap manis
1-2 sudu besar madu
1 sudu besar minyak bijan
Kisar halia dan bawang putih dan bawang merah. Perap ayam dengan bahan kisar selama 30 minit. Ini cuma anggaran. Kalau belum cukup kerana saiz ayam besar, boleh tambah.
Didihkan air di dalam periuk dan masukkan ayam tadi dan perlahankan api sehingga ayam setengah masak. Selepas itu angkat ayam tadi dan perapkan dengan bahan perap seketika. Lumur rata dan gantungkan ayam sekurang kurangnya satu jam.
Goreng ayam secara deep fry atau di dalam periuk yang dalam sehingga minyak menenggelami ayam.
Untuk lebih mudah, sangkutkan ayam dengan besi penyangkut ditepi periuk agar mudah mengangkatnya setelah masak. Setelah ayam masak angkat dan gantung untuk toskan minyak. Potong ayam dan hidang.
Nota:
Ayam jangan dipotong, biarkan seekor. Setelah digoreng atau dipanggang barulah dipotong agar ayam masak cantik. Tapi kalau susah untuk menggoreng, bolehlah dipotong 2 atau potong 4 sahaja.
Saya potong 2 sebab nak menjimatkan minyak semasa menggoreng. Saya lebih suka goreng dari dipanggang. Jadi saya tidak gantung, sejatkan di atas jaringan sehingga betul betul kering airnya.
Nasi Ayam:
2 sudu besar mentega - tak guna
Ketulan lemak ayam - panaskan dan ambil minyak ayam - saya tambah
5 ulas bawang merah - tumbuk
3 ulas bawang putih - tumbuk
2 inci halia - tumbuk
2 helai daun pandan
1 helai daun salam (bay leave)
1/4 cawan susu full cream
1/2 - 1 kiub serbuk pati ayam
1 sudu kecil garam
Secubit gula
Rempah penumis - 3 bunga lawang, 4 buah pelaga, 2 kulit kayu manis
Basuh beras wangi, tos dan masukkan ke dalam rice cooker.
Di dalam kuali masukkan mentega (saya guna minyak ayam), tumis bawang putih, bawang merah dan halia yang telah ditumbuk, bunga lawang, buah pelaga, kayu manis, daun pandan dan daun salam.

Set aside and let it cool down before wrapping.

Resepi Pulut Mangga Ala Thai
Bahan-bahan (Pulut Mangga)
1 kg beras pulut
1 cwn santan pekat
50 ml air
1/2 sk garam
2 helai daun pandan (disimpul)

1 sb gula
bijan hitam (secukupnya)
Bahan-bahan (Kuah santan)
1 cwn santan pekat
1 cwn air
2 helai daun pandan (disimpul)
1 sk garam
1 sb gula
1 sk tepung jagung
Cara memasak
1. Rendam beras pulut sekurang-kurangnya 30 minit sebelum dikukus.
2. Masukkan daun pandan yang disimpul dan kukus beras pulut hingga masak selama 25 minit.
3. Angkat dan ketepikan.
4. Campurkan santan, air, garam dan gula. Kacau sebati.
5. Tuangkan campuran santan ke dalam pulut yang siap dikukus dan gaul sehingga sebati. Ketepikan.
6. Kuah Santan: Panaskan air sehingga mendidih dan masukkan daun pandan.
7. Tuangkan santan dan kacau seketika.
8. Perasakan dengan garam dan gula secukup rasa.
9. Masukkan tepung jagung dan kacau sehingga kuah santan pekat. Ketepikan.
10. Hidangkan pulut, kuah santan dan hirisan mangga segar. Hiaskan dengan taburan bijan hitam.
11. Pulut mangga manis siap untuk dihidangkan.

1 kg glutinous sticky rice
1 cup of coconut milk
50 ml water
1/2 tsp of salt
2 strands of pandan leave (knotted)
mango
1 tbsp of sugar
black sesame (as needed)
Ingredients (Coconut Sauce)
1 cup of coconut milk
1 cup of water
2 strands of pandan leave (knotted)
1 tsp of salt
1 tbsp of sugar
1 tsp of corn starch
Cooking methods
1. Soak glutinous rice for at least 30 minutes before steaming.
2. Add in pandan leaves and steam until cook for 25 minutes.
3. Remove and set aside.
4. Mix coconut milk, water, salt and sugar. Stir to combine.
5. Pour the coconut milk mixture into steamed glutinous rice and mix all well. Set aside.
6. Coconut Sauce: Boil water and add in pandan leaves.
7. Pour coconut milk and stir well.
8. Season with salt and sugar to taste.
9. Add in corn flour and stir the sauce until thicken. Set aside.
10. Served the glutinous sticky rice, coconut sauce and fresh mango slices. Garnish with black sesame.
11. Sweet mango glutinous sticky rice is ready to be served.

Kicap

3 tsp of brown sugar
2 tsp of chicken stock powder
150 ml water
Ingredients (Soy Sauce)
1 cup of chicken stock
1/2 cup of soy sauce from the marinated chicken
Cooking methods (Soup)
1. Saute garlic, shallot, ginger and onion inside a pan.
2. Put in soup spices, coriander roots and scallion roots. Stir well.
3. Put in soup powder and stir until fragrant. Pour in half litre of water and stir for a while.
4. Then, add in chicken and one litre of water. Cook until the chicken is softened.
5. Cook soup for a while and season with salt, white pepper and chicken stock powder.
6. Cook until the soup bubbling and reserve the chicken in a bowl.
Cooking methods (Chicken)
1. Put in soy sauce, oyster sauce and honey. Coat boiled chicken thoroughly.
2. Season the chicken with salt and marinate it for an hour.
3. Preheat cooking oil and deep fry at medium heat until it is fully cooked.
4. Lift up and drain excess oil off chicken. Now, it’s ready to be served.
Cooking methods (Rice)
1. Heat the pan, cook butter until fully melted and sauteed cardamoms, star anise and cinnamon bark until fragrance.
2. Put in sliced garlic, ginger, shallot, onion and knotted pandan leaf. Saute them until golden brown.
3. Place washed rice inside a rice cooker.
4. Lastly, pour in chicken stock sauteed ingredients. Mix them well and cook seasoned rice.
Cooking methods (Chili sauce)
1. Using the blender, blend dried chilies into paste.
2. Then, put in bird’s eye chilies, shallot and garlic. Blend them until well-combined and smooth in texture.
3. Pour the blending mixture into the pot, add water and cook until bubbling.
4. Lastly, season the sauce with salt,chicken stock powder, lemon juice and sugar to taste.
5. Chili sauce is now ready to be served with the chicken and rice.
Note: Brown sugar can be replaced with granulated sugar.
Cooking methods (Soy Sauce)
1. Mix chicken stock with the balance of soy sauce from the marinated chicken.
2. Mix them well soy sauce is now ready to be served.
