中菜廚界曾幾何時有名牌大學畢業生入行、立志做炒鑊、還要是個長相標致的女生!因為Sam Lui的出現,這幾件事一次過發生!
大約一年前吧,好友May Chow叫我在IG關注一個賬戶「Wendy’s Wok World」,click進去一看,咦,真的很有趣。一個年輕高䠷的女生,穿着肚兜在鑊前炒菜,看她炒菜節奏感十足,像是個樂手多點,兜鑊、拋鑊等功架頭頭是道⋯⋯⋯
「Wendy’s Wok World」的介紹跟她所做的同樣有趣:Sam Lui by day, Wendy by night——即是說,她有兩個身份,日夜各一個角色。玩人格分裂嗎?媽呀,我好亂。這個「Wendy」到底是誰?是真的還是假的?Sam Lui又是誰?為了搞清楚事情,我又追蹤了她另一個賬戶tough_crybaby⋯⋯⋯
Wok star, 炒鑊明星,從來,必須強調是從來沒有人會想過炒鑊可以成為明星;而wannabe的字義在中文較難譯得傳神,一般帶有某種程度的貶義,泛指「用力想要成為某種人的人」,譬如這個年代很多人想要成為美食家但其實沒甚麼底蘊,每吃了一頓較為像樣的fine dining,就在社交媒體上裝模作樣地發表評論,這些人就叫做「美食家wannabe」。Sam竟然自稱為「炒鑊明星wannabe」,這種自謔是幽默感⋯⋯⋯
Sam在哥倫比亞大學主修的是哲學....... 她進入美食界,一開始是視美食為一種藝術媒體,以表達和探索概念。中菜很快吸引了她⋯⋯⋯
想法歸想法,理論歸理論,那麼Wendy這個「wokstar wannabe」的炒鑊技術是哪裏學的呢?是中環的口利福。主廚Jowett說Sam剛開始的時候,連拋個平底鍋都做不到,但她憑着重複練習和直覺去炒着炒着,讓她走到了今天......

台灣美食為什麼那麼「Q」?
🍭 NEW TAIPEI CITY, Taiwan — As dusk falls at Lehua Night Market, the fluorescent lights flicker on and the hungry customers start trickling in, anxious for a taste of the local delicacies that give this island its reputation as one of Asia’s finest culinary capitals. Neatly arranged pyramids of plump fish balls. Bowls brimming with tapioca balls bathed in lightly sweetened syrup. Sizzling oyster omelets, hot off the griddle. Deep-fried sweet potato puffs, still dripping with oil.
台灣新北市——隨著夜幕降臨樂華夜市,燈光亮起,飢腸轆轆的客人們三三兩兩來到這裡,急於品嚐讓這個島嶼享有亞洲最佳美食之城的當地美食。整齊排成小山的飽滿魚丸。一碗碗涼圓,淋著略帶甜味的糖漿。剛從鐵板上下來,滋滋作響的蚵仔煎。還滴著熱油的炸地瓜球。

🍡 Take a bite of any of these dishes and you’ll discover a unique texture. But how exactly do you describe that perfectly calibrated “mouth feel” so sought after by local cooks and eaters alike?
Slippery? Chewy? Globby? Not exactly the most flattering adjectives in the culinary world.
Luckily, the Taiwanese have a word for this texture. Well, actually, it’s not a word, it’s a letter — one that even non-Chinese speakers can pronounce.
It’s “Q.”
隨便嘗一口這些小吃,你都會發現它們別具風味。但你該如何形容那種經過精心調配,令當地廚師和食客們趨之若鶩的「口感」呢?
滑溜?有嚼勁?黏稠?這些可算不上是美食界最好聽的形容。
幸運的是,台灣人有一個詞來形容這種口感。其實,這稱不上是個詞語,而是一個字母——就連不講中文的人也能說出它。
那就是「Q」。
-texture: 口感、質地、韻味
-calibrate: 校準、調整、調配
-be sought after: 趨之若鶩
-chewy: 有嚼勁的
🥤 “It’s difficult to explain what Q means exactly,” said Liu Yen-ling, a manager at Chun Shui Tang, a popular teahouse chain that claims to have invented tapioca milk tea in Taiwan. “Basically it means springy, soft, elastic.”
Q texture is to Taiwanese what umami is to Japanese and al dente is to Italians — that is, cherished and essential. Around Taiwan, the letter Q can often be glimpsed amid a jumble of Chinese characters on shop signs and food packages and in convenience stores and advertisements.
「很難解釋Q到底是什麼意思,」人氣連鎖茶飲品牌、號稱台灣珍珠奶茶發明者的春水堂的經理劉葉玲說。「基本上,它是彈牙、軟糯的意思。」
「Q」的口感之於台灣人,就等於「umami」(鮮)之於日本人,「al dente」(有嚼勁)之於義大利人——備受珍視,也必不可少。在台灣各地,可以在店鋪招牌和便利店、廣告的食物包裝中的一堆中文字裡瞥見「Q」這個字母。

🌱 如何開始吃全食物蔬食 🌱
繼上一篇發文後,有人詢問該怎麼開始吃全食物蔬食。對我來說,因為吃全食物蔬食的時候已經是轉蛋奶素的11年後、轉vegan的8年後了,所以對我來說這個轉換其實是「如何戒掉加工食品」,跟素不素已經無關了。這是我的一些小撇步:
1️⃣ 做菜的時候用水或蔬菜高湯代替油
2️⃣ 用味增代替鹽,或是如果你買得到又不忌五辛,可以試試鹽代替品「Table Tasty」(味增鈉含量也高,但是是目前唯一已知不會升高血壓或讓你得胃癌的高鈉食品)
3️⃣ 用自製椰棗糖漿代替糖(作法:去核椰棗泡熱水一小時後加點檸檬汁用果汁機攪拌。具體請參考葛雷格醫師的「食療聖經食譜」)
4️⃣ 用小米、藜麥、全麥麵條等代替白米、白麵條等精緻澱粉
5️⃣ 最好家裡不要放加工食品,這樣想吃也沒得吃
6️⃣ 外食的時候盡力就好了。真的想吃甜膩膩的vegan巧克力奶油蛋糕,那就放鬆心情好好享受吧!你偶爾吃什麼,真的沒有每天吃什麼來得重要(我自己昨天才剛吃了兩塊草莓蛋糕)
7️⃣ 請餐廳配合。我常去的一家餐廳有道菠菜沙拉裡頭會放年糕,我總是請他們不要給我年糕,多給我點菠菜
8️⃣ 找到你喜歡的有機蔬菜農場,跟種出你每天吃的菜的人聊聊天。我個人覺得這會讓我更充滿感激,也給整個備餐體驗加分
9️⃣ 更多食譜,可以參考「食療聖經食譜」或關注NutritionFacts.org取得最新的科學實證營養資訊(我們還沒有中文網站,但是大部分影片都有中文字幕可以選)
最後......這張照片是幾年前在瑞士旅遊拍的(已經忘記「旅遊」是什麼東西),目測當時大概比現在胖+黑百分之十。想回到曬黑的日子,至於肥肉就不用了~~

🌱 How to start eating more whole food plant-based 🌱
After I made the post about being mostly whole food plant-based (WFPB), I received some questions from people who’d like to know how they can start doing that, too. I think it’s worth noting that when I started eating WFPB, it was already 11 years since I went vegetarian and 8 years since I went vegan. So for me, it was really about cutting out processed plant foods rather than cutting out any animal products. Here are some of the tips that have helped me:
1️⃣ Replace oil with water or vegetable broth when cooking.
2️⃣ Replace salt with miso, or if you have access, try salt substitute “Table Tasty.”
3️⃣ Replace sugar with date syrup when baking (search “date syrup” on NutritionFacts.org for recipe).
4️⃣ Replace refined grains with whole grains such as millets, quinoa, whole wheat noodles, etc.
5️⃣ Try not to have processed foods at home at all so you naturally wouldn’t eat them.
6️⃣ Try your best when you eat out, and if you really want that vegan chocolate cake topped with cream and packed with sugar...just enjoy it and don’t feel bad (I just had two pieces of an amazing vegan coconut strawberry cake last night). It’s really the day-to-day stuff you eat that counts.
7️⃣ Ask the restaurant to accommodate. For example, one of my favorite restaurants adds rice cakes to their spinach salad dish. I always ask them to take out the rice cakes and give me more spinach instead.
8️⃣ Find your favorite organic vegetable supplier and know where your food comes from. Talk to the people who grow your food. It may bring appreciation and make your meal prepping experience nicer, at least for me!

Short time ago i invited my friends from Japan and USA to enjoy night market culture with me。We spend two hours in the night market and they really appreciate cleanness of stalls ,streets etc 😊 Besides,we played a game Whether spending 10 USD$ is enough or not for three of us?
In Taipei night markets with 10 USD$ you can buy many things,but in Japan and USA it is not enough to buy that much food 😂

What would you send overseas? A lot of the things I want to package up to send wouldn't really do well in a package, like food sold at the night market or small restaurants. In this video, I continue my travels in the south of Taiwan, specifically in and around the beach town of Kenting. I head to a seafood restaurant for lunch, trying some of the freshest and most affordable seafood Kenting has to offer, such as sashimi, basil clams, and sweet and sour fish.
