This is America’s day. This is democracy’s day.
A day of history and hope. Of renewal and resolve.
Through a crucible for the ages America has been tested anew and America has risen to the challenge.
Today, we celebrate the triumph not of a candidate, but of a cause, the cause of democracy.
The will of the people has been heard and the will of the people has been heeded.
We have learned again that democracy is precious.
Democracy is fragile.
And at this hour, my friends, democracy has prevailed.
So now, on this hallowed ground where just days ago violence sought to shake this Capitol’s very foundation, we come together as one nation, under God, indivisible, to carry out the peaceful transfer of power as we have for more than two centuries.
We look ahead in our uniquely American way – restless, bold, optimistic – and set our sights on the nation we know we can be and we must be.
I thank my predecessors of both parties for their presence here.
I thank them from the bottom of my heart.
You know the resilience of our Constitution and the strength of our nation.
As does President Carter, who I spoke to last night but who cannot be with us today, but whom we salute for his lifetime of service.
I have just taken the sacred oath each of these patriots took — an oath first sworn by George Washington.
But the American story depends not on any one of us, not on some of us, but on all of us.
On “We the People” who seek a more perfect Union.
This is a great nation and we are a good people.
Over the centuries through storm and strife, in peace and in war, we have come so far. But we still have far to go.
We will press forward with speed and urgency, for we have much to do in this winter of peril and possibility.
Much to repair.
Much to restore.
Much to heal.
Much to build.
And much to gain.
Few periods in our nation’s history have been more challenging or difficult than the one we’re in now.
A once-in-a-century virus silently stalks the country.
It’s taken as many lives in one year as America lost in all of World War II.
Millions of jobs have been lost.
Hundreds of thousands of businesses closed.
A cry for racial justice some 400 years in the making moves us. The dream of justice for all will be deferred no longer.
A cry for survival comes from the planet itself. A cry that can’t be any more desperate or any more clear.
And now, a rise in political extremism, white supremacy, domestic terrorism that we must confront and we will defeat.
To overcome these challenges – to restore the soul and to secure the future of America – requires more than words.
It requires that most elusive of things in a democracy:
Unity.
Unity.
In another January in Washington, on New Year’s Day 1863, Abraham Lincoln signed the Emancipation Proclamation.
When he put pen to paper, the President said, “If my name ever goes down into history it will be for this act and my whole soul is in it.”
My whole soul is in it.
Today, on this January day, my whole soul is in this:
Bringing America together.
Uniting our people.
And uniting our nation.
I ask every American to join me in this cause.
Uniting to fight the common foes we face:
Anger, resentment, hatred.
Extremism, lawlessness, violence.
Disease, joblessness, hopelessness.
With unity we can do great things. Important things.
We can right wrongs.
We can put people to work in good jobs.
We can teach our children in safe schools.
We can overcome this deadly virus.
We can reward work, rebuild the middle class, and make health care
secure for all.
We can deliver racial justice.
We can make America, once again, the leading force for good in the world.
I know speaking of unity can sound to some like a foolish fantasy.
I know the forces that divide us are deep and they are real.
But I also know they are not new.
Our history has been a constant struggle between the American ideal that we are all created equal and the harsh, ugly reality that racism, nativism, fear, and demonization have long torn us apart.
The battle is perennial.
Victory is never assured.
Through the Civil War, the Great Depression, World War, 9/11, through struggle, sacrifice, and setbacks, our “better angels” have always prevailed.
In each of these moments, enough of us came together to carry all of us forward.
And, we can do so now.
History, faith, and reason show the way, the way of unity.
We can see each other not as adversaries but as neighbors.
We can treat each other with dignity and respect.
We can join forces, stop the shouting, and lower the temperature.
For without unity, there is no peace, only bitterness and fury.
No progress, only exhausting outrage.
No nation, only a state of chaos.
This is our historic moment of crisis and challenge, and unity is the path forward.
And, we must meet this moment as the United States of America.
If we do that, I guarantee you, we will not fail.
We have never, ever, ever failed in America when we have acted together.
And so today, at this time and in this place, let us start afresh.
All of us.
Let us listen to one another.
Hear one another.
See one another.
Show respect to one another.
Politics need not be a raging fire destroying everything in its path.
Every disagreement doesn’t have to be a cause for total war.
And, we must reject a culture in which facts themselves are manipulated and even manufactured.
My fellow Americans, we have to be different than this.
America has to be better than this.
And, I believe America is better than this.
Just look around.
Here we stand, in the shadow of a Capitol dome that was completed amid the Civil War, when the Union itself hung in the balance.
Yet we endured and we prevailed.
Here we stand looking out to the great Mall where Dr. King spoke of his dream.
Here we stand, where 108 years ago at another inaugural, thousands of protestors tried to block brave women from marching for the right to vote.
Today, we mark the swearing-in of the first woman in American history elected to national office – Vice President Kamala Harris.
Don’t tell me things can’t change.
Here we stand across the Potomac from Arlington National Cemetery, where heroes who gave the last full measure of devotion rest in eternal peace.
And here we stand, just days after a riotous mob thought they could use violence to silence the will of the people, to stop the work of our democracy, and to drive us from this sacred ground.
That did not happen.
It will never happen.
Not today.
Not tomorrow.
Not ever.
To all those who supported our campaign I am humbled by the faith you have placed in us.
To all those who did not support us, let me say this: Hear me out as we move forward. Take a measure of me and my heart.
And if you still disagree, so be it.
That’s democracy. That’s America. The right to dissent peaceably, within the guardrails of our Republic, is perhaps our nation’s greatest strength.
Yet hear me clearly: Disagreement must not lead to disunion.
And I pledge this to you: I will be a President for all Americans.
I will fight as hard for those who did not support me as for those who did.
Many centuries ago, Saint Augustine, a saint of my church, wrote that a people was a multitude defined by the common objects of their love.
What are the common objects we love that define us as Americans?
I think I know.
Opportunity.
Security.
Liberty.
Dignity.
Respect.
Honor.
And, yes, the truth.
Recent weeks and months have taught us a painful lesson.
There is truth and there are lies.
Lies told for power and for profit.
And each of us has a duty and responsibility, as citizens, as Americans, and especially as leaders – leaders who have pledged to honor our Constitution and protect our nation — to defend the truth and to defeat the lies.
I understand that many Americans view the future with some fear and trepidation.
I understand they worry about their jobs, about taking care of their families, about what comes next.
I get it.
But the answer is not to turn inward, to retreat into competing factions, distrusting those who don’t look like you do, or worship the way you do, or don’t get their news from the same sources you do.
We must end this uncivil war that pits red against blue, rural versus urban, conservative versus liberal.
We can do this if we open our souls instead of hardening our hearts.
If we show a little tolerance and humility.
If we’re willing to stand in the other person’s shoes just for a moment.
Because here is the thing about life: There is no accounting for what fate will deal you.
There are some days when we need a hand.
There are other days when we’re called on to lend one.
That is how we must be with one another.
And, if we are this way, our country will be stronger, more prosperous, more ready for the future.
My fellow Americans, in the work ahead of us, we will need each other.
We will need all our strength to persevere through this dark winter.
We are entering what may well be the toughest and deadliest period of the virus.
We must set aside the politics and finally face this pandemic as one nation.
I promise you this: as the Bible says weeping may endure for a night but joy cometh in the morning.
We will get through this, together
The world is watching today.
So here is my message to those beyond our borders: America has been tested and we have come out stronger for it.
We will repair our alliances and engage with the world once again.
Not to meet yesterday’s challenges, but today’s and tomorrow’s.
We will lead not merely by the example of our power but by the power of our example.
We will be a strong and trusted partner for peace, progress, and security.
We have been through so much in this nation.
And, in my first act as President, I would like to ask you to join me in a moment of silent prayer to remember all those we lost this past year to the pandemic.
To those 400,000 fellow Americans – mothers and fathers, husbands and wives, sons and daughters, friends, neighbors, and co-workers.
We will honor them by becoming the people and nation we know we can and should be.
Let us say a silent prayer for those who lost their lives, for those they left behind, and for our country.
Amen.
This is a time of testing.
We face an attack on democracy and on truth.
A raging virus.
Growing inequity.
The sting of systemic racism.
A climate in crisis.
America’s role in the world.
Any one of these would be enough to challenge us in profound ways.
But the fact is we face them all at once, presenting this nation with the gravest of responsibilities.
Now we must step up.
All of us.
It is a time for boldness, for there is so much to do.
And, this is certain.
We will be judged, you and I, for how we resolve the cascading crises of our era.
Will we rise to the occasion?
Will we master this rare and difficult hour?
Will we meet our obligations and pass along a new and better world for our children?
I believe we must and I believe we will.
And when we do, we will write the next chapter in the American story.
It’s a story that might sound something like a song that means a lot to me.
It’s called “American Anthem” and there is one verse stands out for me:
“The work and prayers
of centuries have brought us to this day
What shall be our legacy?
What will our children say?…
Let me know in my heart
When my days are through
America
America
I gave my best to you.”
Let us add our own work and prayers to the unfolding story of our nation.
If we do this then when our days are through our children and our children’s children will say of us they gave their best.
They did their duty.
They healed a broken land.
My fellow Americans, I close today where I began, with a sacred oath.
Before God and all of you I give you my word.
I will always level with you.
I will defend the Constitution.
I will defend our democracy.
I will defend America.
I will give my all in your service thinking not of power, but of possibilities.
Not of personal interest, but of the public good.
And together, we shall write an American story of hope, not fear.
Of unity, not division.
Of light, not darkness.
An American story of decency and dignity.
Of love and of healing.
Of greatness and of goodness.
May this be the story that guides us.
The story that inspires us.
The story that tells ages yet to come that we answered the call of history.
We met the moment.
That democracy and hope, truth and justice, did not die on our watch but thrived.
That our America secured liberty at home and stood once again as a beacon to the world.
That is what we owe our forebearers, one another, and generations to follow.
So, with purpose and resolve we turn to the tasks of our time.
Sustained by faith.
Driven by conviction.
And, devoted to one another and to this country we love with all our hearts.
May God bless America and may God protect our troops.

二十一世紀第二個十年,台灣樂迷前仆後繼夢寐以求解答的千古之謎,第一是 stu sis 到底是誰(最近因為某支 MV 的緣故,這一題又掀起一陣波瀾);其次,大概就是壞特到底是誰了。
2019 年 6 月 28 日,藉吳卓源的表現在樂壇打出名號的音樂廠牌 ChynaHouse,在 YouTube 頻道釋出了壞特的第一支單曲〈Cazzo〉。這首以義大利髒話為名的作品立刻登上 StreetVoice 的新歌週報,並被冠以 R&B 標誌新聲的期待。真正讓這個名字和 9m88 和陳嫺靜相提並論的,則是三個月後發佈的另一首歌〈睡不著〉。短短一個月,〈睡不著〉不只在發表當週就成為街聲榜單冠軍,兩個月內更在 YouTube 衝破二十萬點閱。那時,壞特僅僅不過發表了三首歌曲。

先聞其聲不見其人,這樣的操作在台灣歌壇不是首例。早些,有 2007 年的郭靜,藉網路上「歌聲好聽卻不露面,難道是其貌不揚的女版楊宗緯」話題帶起聲量;再近一點,2010 年剛從 S.H.E 單飛的田馥甄,第一張個人專輯也用同樣手法成功讓聽眾關注藏身團體裡那位 Hebe 的唱腔。然而,壞特的身份之謎走向與這些歌手稍有不同:直到首支單曲發表近一年後的此刻,她依然沒有公開自己的「真實身份」。就連參與濕地 Venue《2019 新条通樂園夜祭躁動》的演出,她都戴著墨鏡和草帽遮擋自己的面容。若不是髮型和身形有所區別,有網友還曾猜這個嗓音是玩饒舌的陳嫺靜閒暇之餘想唱唱英文老歌。
隨著日子過去,網友們漸漸明白,壞特隱藏身份並非為了短期的話題熱度,而是另有原因。
或許因為用字特殊,至今仍常有人叫錯她的化名。有些人喊她「懷特」,有些人以為英文表記的問號是顯示錯誤,把她寫作「te」。不過,網路上已經能找到「?te 壞特」這個名字的來由了:? 等於 why,?te 唸起來諧音 white,媒體寫這是因為壞特私下是一位醫生,white 取白袍之義。事實上這個解釋有兩個誤解:首先,壞特不是一位醫生,她是一位醫務工作者;其次,一開始她也並不只因為白袍而取了這個名字,而是因為〈Cazzo〉本來想找音樂人 YELLOW 黃宣合作。
「我想說,他的名字是 yellow,那我也來個顏色好了。後來才想到,這名字別人聽起來會覺得⋯⋯妳的音樂是白人音樂?好像還滿種族的。」在我面前,脫下墨鏡和帽子的壞特笑開了。我才意識到自己聽她的歌時,從沒想到她是會這樣大笑的人。
為了和別人一樣
她和音樂最早的聯繫,是家裡那台電子琴。液晶螢幕上可顯示動態樂譜,她沒有老師,自己跟著上頭的音符按琴鍵,光是這樣竟也練成了一首〈小步舞曲〉。
琴其實是爸媽為了安撫她才買的。小學時,她的好朋友是典型的市區小公主:會彈鋼琴,會吹長笛,「真的會覺得她是一個偶像,然後她跟妳當朋友欸!妳不學一點嗎?」她和爸媽吵著要買琴,偏偏她是三兄妹裡的老大。「百般拜託後才成功了,我看著電子琴上面那個示範音樂有點點在螢幕上跳,就慢慢地跟著彈,像〈卡農〉和〈小步舞曲〉……」
壞特談起老家,總是說:我以前住海邊。「海邊」在她的語境裡,是「市區」的相對,在城市邊陲成長的她,時常覺察自身與他者的經驗落差。「你知道,那種爸爸的同事的小孩,就會跟你講『妳最近在幹嘛?』、『我最近在上英文課』,然後你就會覺得英文課很厲害。」
「我又問媽媽那可不可以上英文課?跟她說英文對以後很・有・幫・助,這樣以後才可以跟別人競爭。媽媽聽了後就擠出錢給我去上英文課。那是我安親班以外第一個上的課。」
從 ABCD 開始學的壞特,纏著老師,什麼都問。因為,那是她第一個得來不易的補習。如今,壞特以個人名義釋出的三支作品皆是華語外語夾雜,英文歌詞的咬字除了嗓音銷魂,乾淨的腔調也讓不少聽眾猜測她有外國來歷。其實她從未在國外長住,小時候家在新竹。英文唱得那麼好,原來是因為爸爸同事的小孩。

為了和別人不一樣
和鋼琴有這樣一段淵源,壞特後來主練的卻是吉他。她說或許是創傷:某次校內表演,她自告奮勇要上台,彈那首自己看螢幕練起來的〈小步舞曲〉,結果被老師轟下台。小孩子耗費童年,在家裡一鍵一鍵跟電子琴學的曲子,對這個世界而言終究太陽春了。
一上高中,她頭也不回地加入了吉他社。
在那之後,她有過一段順遂的時光 —— 或許太順遂了。她剪了俐落的短髮,自彈自唱,走到哪都是學妹的目光。於是同一首歌她唱了三年。她的歌聲好,但在那時的升學環境裡,連她自己都把這件事當成附庸,高二高三還是專心唸書去了。
原本應該會這樣下去:成績不錯,進了大學,唸一唸也兩年過去;朋友不少的她,也不愁什麼系邊疏離的心境問題。沒有人知道她為什麼在大二結束之後休學。
「是因為開會,」她說。「在學校,學生都會聚起來開一些學生的會。你知道嘛,討論一些未來的理想。」
「某天開會的時候,我突然覺得,我怎麼好像都在學校裡?國中高中大學,然後我從小到大都沒有出過國,一直在台灣的教育體制下上來的一個女生。我想說天啊,我就要這樣過了,一睜開眼就要三十歲了,我的路已經很確定了。我眼睛張開,所有身邊的人都一模一樣。」
她忽然覺得非常非常焦慮。「那個環境下,你只要有一點點會彈吉他,有一點點會唱歌,他們就會給你無限的掌聲。然後你就會覺得,哇自己好棒喔。我那時只覺得這樣好像怪怪的。」會議結束後,她打了一通電話,給學校附近的吉他教室,說:不好意思,我想要找一個老師,我想學一個樂器。任何樂器都可以。
小時候為了和別人一樣,吵著要學樂器的她,這時是為了和別人不一樣而學樂器了。
「對方問我會什麼,我說我會一點點吉他,好,那就學吉他。」她說。
休學那年,為了營生,也為了摸索,她什麼都做。學烘焙、學咖啡,每天早上起床上班,她調一杯又一杯拿鐵,做很多很多個蛋糕。後來,又去節目的公司實習,做過後製,跟著出過外景、翻譯、寫腳本、找道具⋯⋯,那一年,她平均每三個月換一份工作,「因為要試過,才會覺得『噢,這個我已經試過了』,那份焦慮才比較緩解。」
另一邊,吉他教室裡,她也才知道自己什麼都不會。高中時會的一點吉他,專業老師看了只是搖頭。「以前那些地方大家都在唸書,沒有一群人會有一個方法,讓你變得越來越厲害。」吉他老師帶著她進台大爵士樂社,徹底清洗了她的認知,「就連抓歌這件事,都是跟著那個吉他老師進爵士樂社,才知道說哇原來有一群人在玩這個東西。如果我可以早三四年知道,我覺得……應該⋯⋯」
話後面沒說完,她有點惋惜的樣子。一種希望自己的人生能早點開始的表情。
我隔年一定要上台
吉他課上,老師第一天放〈Fly Me to the Moon〉standard ,接著開節拍器,要她視譜,她嚇死了。在社課,「坐在後面,看大家每個人都拿著一樣樂器,薩克斯風、小號,看起來很專業。jam 之前會各自練習,每個人都在那邊彈一些很厲害的東西,我在旁邊 wow,剛學吉他,什麼都不會,要唱,好像也唱不太出來。」爵士樂社課上,壞特抱著吉他,或許有點像她小時候上英文課。也是自小的那份倔強讓她沒有起身離去:「我沒有挫敗欸,就是回去上吉他課的時候會更認真。會說老師老師,拜託對我兇一點,我要練好這首,下禮拜我想要上去 jam session。我想要上去。」
一首標準曲有很多不同版本,有時候 Ella Fitzgerald,有時候是 Billie Holiday 唱,有時候是 Sarah Vaughan。壞特在那時才開始認識這些爵士樂的名字,Bill Evans,Pat Martino,如今也不難發現她愛法國歌手 Cyrille Aimée:今年初,她在音樂演出平台「例假日」發表的〈Just the Two of Us〉翻唱,就是 Cyrille Aimée 與吉他手 Diego Figueiredo 編曲的版本。
聽她如今琅琅上口的這些歌,誰想得到小時候她的爸爸愛放翁立友,媽媽愛聽陳淑樺?
她望著這些遙遠的名字,不知不覺找到了不同於海邊老家的聲響。

閒暇時,她混台北的爵士酒吧。最常去 Sappho,幾乎每個禮拜都去;Blue Note 偶爾。「我記得我是休學那年的二月十四號去 Sappho 的,看到他們的 jam session,然後看到傻眼。」
「看完我就對自己說,我隔年二月十四號一定要上台。」
看到什麼,就要自己成為什麼。對自己說:我也要一樣。原來不只因 YELLOW 而起的化名,早在被聽見以前,壞特身上的許多特質都是這樣掙來的。分不清是飢餓讓她有了決心,還是決心讓她保持這份飢餓。
但這些種種之外,爵士圈子的文化帶給她最多的,是讓她不再被自己的優勢所盲目。「嗓音好聽,在爵士圈子其實不會太被在意,大家更注重你所呈現出來的音樂內容。你唱的樂句能讓別的歌手想要學,那才是好。妳的聲音怎麼樣,樂手之間很少去討論這種事。」
2017 到 2020 年這一波台灣新歌手,有樂評者以 ASMR (Autonomous Sensory Meridian Response)特徵在樂曲與唱腔中的出現,描述 9m88、陳嫺靜、壞特這一批歌手嗓音擄獲人心的質地,在於她們運用唱腔的方式包含了這類刺激顱內高潮反應的氣聲或唇齒音。但在台大和 jazz bar 打滾的壞特練功時卻從未特別被這樣提醒,反而能更專注在歌曲的其他部份。
一切都在隔年天時地利:在 bar 與 bar 之間,她的演出吸引到一位老闆。壞特口中這位「小小很可愛的女生」原來是那年某場演出的負責人。壞特得到第一次登上大舞台的機會,同場演出的音樂人竟有陳珊妮、舒米恩和夜貓組。
「每個都超大咖,我就想說是不是也該找一些厲害的人。我認識的吉他手也不多,Tower 就是我腦海浮現的人。」後來成了壞特製作人與共同創作者、曾以 Juzzy Orange 成員出道、如今主理 ChynaHouse 的陶逸群(Tower da Funkmasta),是台大爵士樂社的學長。「我就密他問可不可以跟我去表演。也不知道人家有多大咖,不知天高地厚地問了,不知天高地厚地把我的 DEMO 送過去⋯⋯」
那場表演合作,陶逸群婉拒了。然而,壞特的 DEMO 躺進了他的硬碟裡。直到一年多後,某日福至心靈,他點開了她的檔案,驚為天人。壞特在那個瞬間誕生了。

休學一年後,壞特回到學校。與其說有了音樂以後她感到安心,不如說那一年的各種經歷,讓她有了「我試過了」的安全感。
Tower 與她的合作效率極高,一方面是他身為製作人的經驗,一方面也因為她的職業性質。工作時間零碎,休息時間往往只有幾小時,壞特會在這個時間用手機錄下靈感,每個月整理一次,大約幾十個樂句音檔;到錄音室,三到四個小時就要和 Tower 把一首歌拼湊起來。
一開始找黃宣,也代表原先曲風走向不是目前的 Lo-fi R&B。做〈Cazzo〉時壞特和 Tower 碰面,壞特帶了一把舊吉他,彈奏時不停打弦、音還不準。沒想到 Tower 一個轉念,用 Lo-fi 思維將雜訊和環境音融入錄音,就這樣成了壞特在聽眾耳中的第一印象。
前陣子他們受街聲「未來進行式」節目專訪,Tower 曾開玩笑,說他們每做一首新歌,就要和觀眾解釋一個新詞的意思,像音樂界的 Urban Dictionary。其實那些放在歌曲中的外語單詞,多半是從壞特生活經驗來的。英文能力優異的她,外國朋友也多,他們的俚語都成了她歌詞的細節。
「當然有時候也會拿起手機,找一下『how to name your lover』、『how to call your lover』,找到一長串字,然後一句一句試唱:you're my gummy bear、you're my 什麼什麼 bear,然後噢,baby cakes 可以!It works!偶爾也會用這個方法。」

預計在今年夏天發行的新專輯,暫定名為《A Bedroom of One's Own》,借用 Virginia Woolf 的《A Room of One's Own》。「從自己的房間變成自己的臥室,一方面是呼應女性主義在這個時代的命題轉變,也呼應最近像 Billie Eilish 在 bedroom 做的這種 bedroom pop,成為音樂人新的創作方式,我們想呼應這個潮流。」陶逸群說。
「新專輯我們希望有些不同風格,因為前面那幾首比較一致。新專輯裡,純吉他的聲音、有點 Disco 風格的。可能台語也會加進去。」壞特說。或許前面的幾首歌真的讓她給人一種不愛笑的形象,但在專輯裡她會嘗試比較高亢的音域,「即便那可能不是大家期待的我。」
為了真正的掌聲
這兩年,已有一批在網路累積聲量實力的新音樂人發片,專輯中不約而同都有成名焦慮的思索。然而,平均一首歌有近百萬點閱的壞特,卻沒有被這種焦慮所籠罩。因為,其實身邊幾乎沒有人知道她是她。「我會看到有同學分享壞特的歌;也收到爵士樂團的訊息說很喜歡我的聲音,想找我當 vocal,結果一看發現是以前 jam session 的老師。但說真的,我到現在都還沒有爆紅的感覺,回到工作,老師還是唸我:妳要記得看那個報告喔,明天要講給我聽噢。」
「有時候點開貼文,發現有四十幾個朋友按壞特讚,可能是同系的哪個學弟妹,他按妳讚,但不知道是同一個人。昨天晚上我在三四百人面前表演、今天回到現實工作,常常是這樣。」
落差那麼大,不會很難調適?「不會啊,我覺得還滿平衡的。一戴上口罩就沒有人認出我,那種感覺還滿好的。」
我想起《黑暗騎士:黎明昇起》裡 Bruce Wayne 的台詞:面具的意義在於成為一個符號,一個概念,正因為面具底下是誰都無所謂,所以這個象徵得以長存。壞特躲在壞特的名字底下,得到了一個靈活的空間,所有嘗試的危險都和自己隔了一段距離,反而成為創作者跳脫框架的籌碼。
但不是沒有焦慮了。她說起自己最愛的 Cyrille Aimée:「她很會 scale,然後 scale 得很好聽。有些人 scale 的時候你會覺得有點不舒服,感覺只是樂句唱得比較不一樣而已,可是 Cyrille Aimée 唱的東西你自己去吉他上對對看,除了符合 chord 之外,她還有技巧性地讓音在和弦內外變化。她是清楚的。你聽就會覺得天啊,一個歌手能做到這樣真的不簡單。」
「焦慮有是有的,就是要變強。有很多需要練的地方。對,要變強。」
她還是老樣子,看到別人做到了,自己也要做到。
壞特這個名字,不是自己也無所謂。就像那些年在 jam session 台上,樂手們不太在乎對方是誰,表演完之後一句:喔、不錯喔,繼續練,加油。對她而言,那或許是真正的掌聲 —— 不因為任何名字、個人史、外貌、性格和其他任何音樂以外的事物所影響、單單只靠歌曲獲得的掌聲。
很遺憾的,我們依舊無法告訴你壞特是誰。但對壞特的歌迷而言,這一點也不重要對吧?

[Books / 書訊] Yann Brys 與 François Perret 主廚出版新書、 Fou de Pâtisserie 食譜書將出中文版 / Chef Yann Brys and François Perret publish their first books, Fou de Pâtisserie book launch traditional Chinese version soon (for English, please click “see more”)
我想法國主廚們跟書商完全沒有要讓消費者喘口氣的意思,11 月好書連發,最近輪到陀飛輪(tourbillon)創始人、擁有法國最佳工藝職人(MOF)頭銜的 Yann Brys 主廚和巴黎麗池酒店 Ritz Paris 的主廚 François Perret 出新書;甜點雜誌 Fou de Pâtisserie 去年出版的同名食譜書也確認即將推出中文版。
Yann Brys 主廚過去的資歷顯赫,他師承 MOF Philippe Urraca、在 FAUCHON 時在有「甜點小王子」之稱的主廚 Sébastien Gaudard Pâtissier 底下工作,接著經歷巴黎數個豪華酒店,包括宮殿級酒店(palace)的 Hotel Le Bristol Paris,然後前往 DALLOYAU。他在 2009 年發展了現在聞名世界的「陀飛輪」擠花手法,2011 年通過一系列的嚴格比賽與鑑定、獲得法國最佳工藝職人的頭銜,並在同年被任命為 Dalloyau 的創意總監。Yann Brys 主廚在這本即將在 11/27 上市的書中分享了以陀飛輪手法裝飾的多種蛋糕、還有其他或經典或創新的精彩作品。
現任 Ritz 酒店甜點主廚的 François Perret 的經歷也不遑多讓,他幾乎在巴黎所有宮殿級酒店都工作過,一開始在 Le Meurice、接著在 Four Seasons Hotel George V Paris,然後在 Hotel Lancaster Paris 擔任甜點主廚。2010 年他協助巴黎香格里拉飯店 Shangri-La Hotel, Paris 開幕,並很快幫後者的 L’Abeille 餐廳取得米其林二星。接著他加入 Ritz,這個歷經四年整修的巴黎傳奇宮殿級酒店在他與主廚 Nicolas Sale Officiel 的協力合作下,一年之後便分別為酒店內的兩個餐廳取得米其林二星(La Table d'Espadon)與一星(Les Jardins d'Espadon),他和 Nicolas Sale 也分別奪下 2017 年由《Le Chef》雜誌頒發的年度甜點主廚與年度主廚獎項。上月 François Perret 主廚再獲肯定,被 Les Grandes Tables du Monde 協會選為「meilluer pâtissier de restaurant du monde」(「全球最佳餐廳甜點主廚」)。如同書名「Instants sucrés au Ritz Paris」指明的,本書是以「Rtiz 的甜點時光」規劃,從早餐、午餐、下午茶、晚餐等都有相應的作品。François 主廚的的知名創作如瑪德蓮蛋糕、蜂蜜等都收錄其中。另外有一個好消息要跟台灣讀者分享,本書的繁體中文版已經被 大境文化&出版菊文化(生活美食地圖) 簽下,大家再稍等一下就能看到囉!
最後則是甜點雜誌 Fou de Pâtisserie 去年十月出版的同名食譜書,近日剛剛發表了德文版,同時也宣布簡體和繁體中文版即將推出。這是一本想要認識法式甜點經典、同時一覽法國主廚們各種精彩重新詮釋版本的讀者們必定要收藏的作品。書中精選了 17 種最經典的法式甜點,如 Baba 巴巴、Opéra 歌劇院蛋糕、Saint-Honoré 聖多諾黑泡芙、Tarte au citron 檸檬塔等,每個主題前先解釋該甜點的起源、並以詳細的步驟圖介紹一個最具代表性的作品,接著介紹該甜點的重要組成元素、然後呈現四五個不同的變化版本(全部由知名主廚提供),最後提供一個能夠使用市售商品與簡便方法,在家快速重現經典的食譜。能夠一次飽覽當代最知名的40 位甜點主廚們的作品、領略法式甜點不斷推陳出新的活力,大概也只有 Fou de Pâtisserie 可以辦到。

This November is marked by beautiful pastry recipe books. If you still remember that we’ve talked about the books of the chef Yann Couvreur, Angelo Musa, and Michelin Guide, now there’re some more! The MOF chef Yann Brys and François Perret, head pastry chef of Ritz Paris are publishing their books this week as well. Moreover, Fou de Pâtisserie has just announced that their great recipe book is going to have its traditional and simplified Chinese versions soon.
Even if you don’t know the chef Yann Brys, you must recognise his world-renowned gesture “tourbillon” still, a technique to pipe cream on a turntable to create a whirl effect. He learnt a wide range of skills from another MOF chef Philippe Urraca, and then worked with Sébastien Gaudard, the “petit prince de la pâtisserie” when he was at Fauchon. He then went through several luxury hotels such as Concorde Lafayette (current Hyatt Regency Paris Étoile) and Hotel Bristol Paris. After that he joined Dalloyau and was named the Creative Director in 2011. He passed through a series of competitions and got his MOF title the same year. In this book “Tourbillon”, the chef shares with us lots of beautiful cakes employing the technique and his other creations as well as the know-how as a Meilleur Ouvrier de France.
Having worked at most of the Parisian palace hotels, François Perret, current chef pâtissier of Ritz Paris also boasts impressive experiences at Le Meurice, George V before he was appointed as the head pastry chef at Hotel Lancaster Paris. He joined Shangri-La Paris in 2010, assisting its opening and contributing to the Michelin two stars gained in two years for L’Abeille, the fine-dining restaurant at the hotel. He then joined Ritz and has been collaborating with the chef Nicolas Sale ever since. The legendary hotel situated on Place Vendôme reopened in 2016 after 4 years of renovation, but the duo has gained the hotel 3 Michelin stars in total in just a year - La Table d’Espadon got two stars and Les Jardin d’Espadon got 1 star in 2017. The both were further awarded as “Pastry chef of the year” and “Chef of the year” by the magazine “Le Chef” in the same year. François was elected as “Best restaurant pastry chef of the world 2019” last month by Grandes Tables du Monde. The book “Instant sucrés au Ritz Paris” presents those sweet moments offered by the hotel, starting from breakfast, wonderful pastries and desserts served in lunch time, tea time, and on dinner tables are all included. The chef’s signature desserts like the entremets Madeleine, Miel, Île flottante are also covered. Good news is that both the English and traditional Chinese version of the book are on their way. English and Chinese-speaking readers will only need to be patient for little while to learn more about the sweet universe of the chef.
Last but not least, the Fou de Pâtisserie book published last October is now having its German version. The traditional and simplified Chinese versions will be available soon, too. Collaborating with 40 great French pastry chefs, this book offers pastry passionates a wonderful opportunity to learn about those great French classics as well as their creative variations. 17 classic like baba au rhum, Opera, Saint-Honoré cakes, etc are presented. Their origins and legends are well explained, followed by a signature recipe illustrated step-by-step and presented by one famous chef, followed by four to five variations with real recipes provided by influential chefs. Then finally an express version using existing products sold in shops or supermarkets is featured. This is a fantastic book to glance through some of the best creations of our time and to learn the spirit of creation.

Hello friends! Today we're going to share with you how to make a flourless chocolate cloud cake. (Richard Sax's Chocolate Cloud Cake)
This is an amazing cake, it came out perfect and very tasty. Everyone loved it. It really is the easiest, most delightfully velvety cake in the world, especially with the whipped cream! It just cannot go wrong! At least, this one is foolproof for us. 😊
Chocolate Cloud Cake uses just four ingredients – chocolate, eggs, butter, and sugar, all of them to make a crunchy-on-the-outside, airy-on-the-inside cake. Like a magic.
This cake was a classic dessert of the writer and cooking instructor Richard Sax. We cut down the sugar to make it not too sweet, and the mousse-like consistency tastes perfect. Never thought gluten free could be so yummy? Please try it. You will be so impressed by this cake. We urge all chocolate lovers to try this recipe.

How to make Chocolate Cloud Cake
Here is the Chocolate Cloud Cake Recipe
☞ Pan Size: round pan, diameter is 15cm, height is 6cm
✎ Ingredients
📍For Cake
70% bittersweet chocolate 113g
unsalted butter 55g, at room temperature
egg 3 (M~L size)
granulated sugar 100g
Cointreau Orange Wine 10g
📍For Topping
whipping cream 180g
powdered sugar 15g
** cocoa powder and chocolate shavings for garnish
✎ Instructions
1. Line the bottom and side of the round pan with parchment paper.
2. Add the chocolate chips in a mixing bowl. Pour some water into the saucepan and the water not touching the bowl. Then bring the water to a boil and reduce the heat to very low.
3. Set the chocolate bowl over the simmering saucepan. When it’s melted, remove the bowl from the heat, and then let the butter melt in the warm chocolate until smooth.
4. Separate 2 eggs in two bowls, one for egg yolk, another for egg white. Add a whole egg and half amount of sugar (about 50g) into the egg yolk bowl and whisk until combined.
5. Then add the egg yolk mixture into the warm chocolate, gently and slowly whisk until mixed well. Set aside.
6. Beat the 2 egg whites for about 1 minute, then add the remaining 50g of sugar in 3 batches, beat for 30 seconds each time, then switch to very low speed to beat until glossy soft peaks (not too stiff) for 30 seconds to 1 minute.
7. Gently fold about one third of meringue into the chocolate mixture, then fold in the remaining merinque to lighten it until well combined.
8. Pour the batter into the baking pan and bake for 18-22 minutes or until the top is puffed and cracked and the centre is no longer wobbly.
9. Let the cake cool in the pan on a rack, the middle will sink as it cools.
10. Whip the 180g of cream and 15g of powdered sugar together with a handheld mixer until soft but not stiff peaks form.
11. Fill the crater of the cake with the whipped cream, and lightly dust the top with cocoa powder. Enjoy.

Mini Gingerbread House Mug Topper Recipe
🎄 Preparation:

➋ piping bags and nozzles, or make a parchment bag for piping, 2mm is for sticking, 1.5mm is for decoration
🎄 Yields: Can make 14~16 gingerbread houses
✎ Ingredients
🎄 For the cookies
unsalted butter 125g, softened
brown sugar 90g
molasses 58g
egg 1, at room temperature
all purpose flour 370g
baking soda 5g
salt 2.5g
grated ginger 10g
ground cinnamon 1.5g
nutmeg powder 1g
🎄 For the Royal Icing
vanilla extract 1.5g
powdered sugar 200g, sifted
powdered egg white 7.5g
warm water 25g~30g
✎ Instructions
🎄 For the cookies
1. In a large bowl, add butter, sugar and molasses, beat on mid-low speed, mix well until light and smooth.
2. Add egg and ginger, beat on medium speed until well combined. Scrape down the sides and the bottom of the bowl and beat again if needed to combine.
3. Sift the flour, baking soda, ground cinnamon, nutmeg powder and salt.
4. Fold in all dry ingredients, continue to mix until well blended, the dough should come together.
5. Transfer the dough out onto a work surface and knead until the dough is smooth and combined. Wrap the dough with plastic wrap and place in the fridge for 1 hour to chill.
6. Preheat the oven to 170°C.
7. Lightly flour the work surface and roll the dough to about 3mm thick.
8. Dust the dough lightly with flour to avoid sticking. Place the house pattern pieces on the dough, dip the knife into flour and cut out the pattern pieces from the dough (cut the door, but remove it after baking). You will need TWO of each shape.
9. Bake at 170°C for 10 minutes or until the edges are just beginning to brown. Large pieces will need more time.
10. Once baked, cut the door first, and then remove all cookies on racks to cool completely.
🎄 For the royal icing
1. Sieve the 200g of powdered sugar and 7.5g of powdered egg white in a bowl.
2. Add 1.5g of vanilla extract and 25g of warm water and beat at medium speed for 5 minutes.
3. Fill the Pastry Bag With Royal Icing. You will need at least two piping bags, one is for a thick line to glue the pieces of house together. Another one is a thin line to decorate the house. The royal icing is the best icing to use for gingerbread houses, it'll dry hard and last throughout the holiday season.
🎄 Assembling
1. Start with the front and the back pieces and two sides, then take the side piece and stick them together, do the same with the other side.
2. Grab the back piece and give it a nice firm. Then the base of the house is done. Wait for the icing sets before adding the roof.
3. Sticking the roof pieces in the same way, add lines of icing on all the edges, hold them together and allow the icing to set. It's probably best to let this dry overnight that way all the royal icing is definitely hard before decorating.
4. You can decorate with any pattern you like and custom detail. You can practice how to draw a line or draw a pattern on a board or plate before putting them on your house. But remember, once finished the decorating, please let the icing dry for a couple hours. Have fun.
