【也談米其林】
HTC表示:「我也想歸還股王寶座...蛤?我早就還了?那當我沒說...」
米其林評鑑不過就是家輪胎公司為了增加車主的里程數(加快輪胎磨耗速度)在1900年搞出來的花招。
1920年以前還只是免費贈送的一種宣傳品,常被汽車維修工拿來墊桌腳。
三顆星的分等本身其實說了等於沒說:
一星:"A very good restaurant in its category" (Une très bonne table dans sa catégorie) -- 同類別中的優秀餐廳。
二星: "Excellent cooking, worth a detour" (Table excellente, mérite un détour) -- 傑出的烹調,值得旅程中繞個路過去吃。
三星: "Exceptional cuisine, worth a special journey" (Une des meilleures tables, vaut le voyage). -- 出類拔萃的特殊料理,值得專程去吃。
就我的經驗,米其林餐廳難吃且服務差的我也碰過幾間。說實在這個評鑑很見仁見智,三顆星不見得就一定比一、二星好。價碼比較貴這點倒是機率很高。
評鑑者本身素質到底夠不夠資格評鑑?這也讓人很有疑問啊。我就遇過一些號稱很懂美食的朋友,口味讓我不敢恭維。而事實上口味之於人真的是太過主觀,大家多多少少也碰過這樣的朋友吧?
有位Pascal Remy宣稱自己曾擔任米其林評鑑員並出書描述評鑑工作,很有意思啊:"Rémy described the French Michelin inspector's life as lonely, underpaid drudgery, driving around France for weeks on end, dining alone, under intense pressure to file detailed reports on strict deadlines. He maintained that the guide had become lax in its standards. Though Michelin states that its inspectors visited all 4,000 reviewed restaurants in France every 18 months, and all starred restaurants several times a year, Rémy said only about one visit every 3½ years was possible because there were only 11 inspectors in France when he was hired, rather than the 50 or more hinted by Michelin. That number, he said, had shrunk to five by the time he was fired in December 2003.
Rémy also accused the guide of favouritism. He alleged that Michelin treated famous and influential chefs, such as Paul Bocuse and Alain Ducasse, as "untouchable" and not subject to the same rigorous standards as lesser-known chefs. Michelin denied Rémy's charges, but refused to say how many inspectors it actually employed in France. In response to Rémy's statement that certain three-star chefs were sacrosanct, Michelin said, "There would be little sense in saying a restaurant was worth three stars if it weren't true, if for no other reason than that the customer would write and tell us."

a. 每三年半才會去評鑑餐廳一次,因為評鑑員過少。
一者我相當懷疑評鑑員的口味水準究竟如何前已述及,二者我也懷疑人數這麼少下,評鑑結果的可參考性有多高?
乾脆公布餐廳營收、來客數比高低不是更好?後者才是市場競爭下的真實結果。
其實這件事也用不著米其林來做,知名餐廳自己就很愛公布 -- 第100萬桌客人、第1億籠小籠包、百年老店...。
比較特殊的就是民國初年的譚家菜 :在北平赫赫有名的飯館東興樓辦一桌燕翅席要價16塊大洋時,譚家菜一桌家常菜就要80~100塊大洋!而且還要留一席給主人譚篆青。(當時請一個管家月薪才2塊大洋)
這家餐廳自認不是餐廳,叫「沾潤」。不廣告,純靠口耳相傳而流行於當年北洋政府高官之間。這種餐廳的經營模式就跟一般餐廳不同了。現代東京也有一些沒有推薦人不接待的餐廳,就是類似模式。
張大千認為譚家菜的紅燒鮑魚、白斬雞為中國菜登峰造極之最!鮑魚邊猶如蜂窩豆腐,鮑魚心嫩似熔漿、晶瑩凝脂色如琥珀。
白斬雞由譚家親自飼養培育,飼料、天數都有限定;用老母雞高湯燙熟。(各位注意,好吃的白斬雞都是燙熟而非蒸煮熟的,這是秘訣喔!)
b. 從經濟分析看,米其林必然對知名主廚有特殊待遇,如Remy所言:"untouchable"。因為這種評鑑是「魚幫水、水幫魚」,如果多數名廚都公開對這個評鑑嗤之以鼻,則這個評鑑在市場上就很難活下去了。
就是說,新手無名廚師即便表現90分,不見得上得了米其林;反之名廚就算表現只有60分,很可能繼續拿三顆星。
因為工作關係,參加過幾次知名廚師料理節目的錄影,只能說電視上拍起來跟實際看到聞到的差很多啊!差多少呢?錄影現場煮好的菜我竟不敢動筷品嚐,還深深佩服主持人被迫吃下肚的難處,感嘆演藝圈真辛苦 XD
我比較好奇的是:已經被印刷出來的過去年度星星要怎麼退還啊?
頂多就像張國榮那樣宣布放棄接受未來獎項吧?
可如果真到金剛經所言:「無我相、無人相、無眾生相、無壽者相」這等境界,那也用不著大張旗鼓宣布放棄或退還吧?反而是:你愛不愛來評鑑、愛給怎樣的評鑑,老子壓根不在乎。

My latest work - I collaborated with jewellery brand TSL!
I love this video as it pretty much sums up my life in Shanghai and the way I work on each project. I'm inspired by the older parts of Shanghai - I love strolling through the old alleyways where I stay to see how the locals go about their daily lives. I love brainstorming and sketching in quaint little cafes on Wukang Lu in the French Concession area, and sometimes I work from my Shanghainese grandaunty's living room whenever I miss her and want to say hi. I source my materials from wholesale markets (I usually go to the one at Yuyuan - it's got everything!), and spend a lot of time hunting and bargaining in these markets. I transport all these materials and my canvases to my studio and create my pieces there.
The jewellery collection shown here were inspired by elements of South America. I chose materials and patterns that reflected these elements and gave all four women different distinctive personalities. My favourite piece is the Estrella collection - which in Spanish means "Starry Flower". I've used thread and pins for that piece and turned them into dandelion-like patterns that flow into the night sky. The necklace in this collection contains 100 facet-cut diamonds (diamonds conventionally have 58-facets) - the dandelion patterns are carefully calculated for the positioning of the pins. The thread is then tied onto the pins. The inner circle of the dandelion is much more intricate with more concentration of threads, reflecting the craft behind the Estrella collection.

BB仔時發出ee oo聲, 原來是世界各地各種語言.
長大後我們母語才因為環境因素而慢慢會建立.
所以其實小時候的我們已經是精通所有語言的天才bb!
有報導指2024年印度將會成為全球最多人口的國家. 而我住的城市一向都是很多印度人的.
所以我要學印度話, 我覺得對於我4年後的將來也會好有幫助.
今次評價成功的準則就是24小時後, 到我小時候常常去吃飯的印度餐廳用印度話order到一餐. 而要他們以為我真的是印度人.
Day 1
(學習口音)
Ok, 我們的口音學到了一點點. 但學一種新語言, 最重要的根基還是學基本詞匯
Su=shoe
Police=polise
Hindi (印地話) 是印度語言裡面最出名的. 相信也是最簡單. 30分鐘應該就可以. (Show learn Hindi in 30 minutes)

hai= 存在
aap se milkar khushi hui= 很高興認識你

因為印度跟香港一樣曾有一段很長的時間是英國籍民地.
Hindi本身分開兩種說話方式
如果要跟一些印度本地居民用言語溝通, 可以用 ‘Urdu’ 即是比較俚語一點的. 正式一點的埸合就需要用sanskrit, 書面語.
這個知識好重要, 因為之後叫東西吃幾多個份量一定要講清楚.
但我覺得在此學生字這些不能確定自己能100%完成到叫外賣這個任務. 所以我決定網上聘請一個私人美女導師幫一幫手.
我就去睡一睡先.
發現印度語跟中文很相似的地方是喜歡用portmanteau. 即是將兩個字合為一個全新的意思.
像印度話?面 ‘phir milenge’ 是再見的意思. 第一個Phir的意思是 ‘再一次’ 而milenge是 ‘我們會見面.
再一次, 我們會見面.
每一個語言字和意思的結構都是不同
Hindi一個句子的結構是 (subject) (object) (verb) 名詞/形容詞...
I want to make a food order
Main, ek khaana ordar karana chaahata hoon
(I). 1 Food order). (I want to one)
我就想叫這個Tandoori Lamb champ,
Main tandoree memne chaimpiyan ordar karana chaahata hoon
大家可以看到比之前只是要 ‘food order’ 少了 “ek” 作天學到的1數目字. 但句字的前後也是一樣的.
我覺得聆聽比只懂得講話來得更重要.

開始做暗網仔其中一樣最叻的事, 就是看歷史.

我真心覺得學寫印度話識一點簡單的英文比較容易翻譯.
原來印度話的重要發音是 ‘a’ 聲. 差不多所有的字都會有這個發音.

印度話另一樣特色就是用一clothesline (晾衣繩) 連起每一個字
其實經歷過這3天我最大的感受是看到以前讀書的自己. 第一天開始總是精力充沛, 但真正學到的東西都是最表面的東西. 也當然喜歡玩.
其實我之前在日本住了幾個月. 之後常常後悔一句日文也沒有學到. 只是用英文跟其他人溝通. 但現在我覺得...不學也ok. 因為我學習能應該只是很一般!
