Chinese style pork chop with tomato eggs leeks and steaming 🍚
This is my go to recipe for pork chops. My parents always squeezed loads of ginger juice into the marinade and it’s key for making them taste so good. And if you have time, use the back of your knife or a meat mallet to give the pork chops a good bashing to tenderise it. Whenever I’ve skipped both these steps (to save time or being pure lazy) the pork chops are never as good.
Recipe:
x4 pork chops
2” piece of ginger
1 tbsp soya sauce
1 tbsp oyster sauce
1 tbsp shaoxing wine
1 tbsp sesame oil
1/2tsp salt
1/2tsp garlic powder
1/2tsp white pepper
1 tsp sugar
2 tbsp cornflour
2 tbsp oil
2 tbsp oil, for frying
Directions:
1. Using a teaspoon, scrap the skin off the ginger. Slice ginger and then julienne. Use the back of the knife to bash the ginger to release some of the juice. Set aside
2. Using the back of a knife or a meat mallet, smash the pork chops really well to tenderise the whole chop. Once done transfer them into a deep bowl
3. Add soya sauce, oyster sauce, shaoxing wine, sesame oil, salt, garlic powder, white pepper, sugar, cornflour and oil to the pork chop. Scoop up the ginger and using your hands, try to squeeze as much of the ginger juice all over the pork chop. Then dice all the ginger finely and add to the bowl of pork chop. Mix the chops with all the ingredients so they are well marinaded
4. Heat a frying pan on height heat and add 2tbsp of oil. Lay all 4 pork chops in the pan and fry on high heat for 4 minutes. After 4 minutes, flip the pork chops over to the other side, turn heat down to medium and continue to fry for another 6 minutes. If you have any marinade left in the bowl, add it to the frying pan now
5. Once the pork chops are thoroughly cooked through, dish up and serve with steaming rice. It’s also great in a crusty roll to make a Macau style pork chop bun!

辣椒仔2隻
調味料:
鹽1湯匙(乸豬扒用)

雞汁1湯匙
處理:
1. 薑,去皮,磨蓉。
2. 豬扒用清水解凍。
3. 倒去水分。
4. 加入1/2茶匙鹽乸15分鐘,去除雪味、腥味,及加入少許鹹味。
切好蕃茄及青瓜後,要放雪櫃冷藏。
5. 將豬扒沖洗乾淨,擎乾水。
6. 用廚紙索乾水。
7. 刀背拍鬆豬扒。
8. 拍好豬扒,落薑汁,攪勻。
9. 落胡椒粉、鮑魚汁、生抽醃15分鐘。
烹調:
1. 用180度預熱氣炸鍋3分鐘。
2. 放氣炸鍋紙後,放豬扒入氣炸鍋。
3. 第一轉,用200度氣炸10分鐘。
4. 將辣椒切粒,加1湯匙蒜蓉、1湯匙淮鹽及1湯匙糖。
5. 過了10分鐘後,打開氣炸鍋,反轉氣炸另一面,用200度,氣炸最後一轉10分鐘。
6. 青瓜切片,切開蕃茄
將蒜蓉、椒鹽混合一起,放豬扒一齊攪勻。
7. 放在碟上,放入氣炸鍋,用200度氣炸5分鐘。
8. 整好伴碟,將氣炸好的豬扒放在中間,完成。
Airfrying salt and pepper pork chop:
Ingredients:
Plumhead pork chop
Tomatoes 2 Nos.
Cucumber 1 log
Garlic paste 1 tbsp
Red chili 2 Nos.
Seasoning:
Salt 1 tbsp
Pepper a pinch
Tapioca starch 1 tbsp
Sugar a pinch
Chicken sauce 1 tbsp
Light soya 1 tbsp
sauce
Preparation:
1. Prepare the ginger paste.
Defrost the pork chop with tap water.
2. Pour away the water.
3. Season the chicken steak with 1/2 tsp salt for 15 minutes to remove the unpleasant smell, and add the taste of salt.
4. Rinse thoroughly, hang dry.
5. Use kitchen towel to dry the pork chop.
6. Tomatoes cubes and cucumber slices are to be put in the fridge.
7. Pat pork chop with chopper.
8. Put ginger sauce to the pork chop and mix well.
9. Mix pepper, abalone sauce and light soya sauce and season the pork chop for 15 minutes.
Steps:
1. Preheat the airfryer at 180 C for 3 minutes.
2. Put pork chop in the airfryer after a airfrying paper has been out.
3. Airfry at 200 C for 10 minutes in the first round.
4. Dice the chili, mix with 1 tbsp garlic sauce, 1 tbsp huai salt, 1 tbsp sugar.
5. 10 minutes later, flip over pork chop, airfry at 200 C for another 10 minutes.
6. Slice the cucumber, cut the tomatoes, mix well together with garlic sauce and huai salt with the pork chop.
7. Put pork chop on plate, then airfry at 200 C for 5 minutes in airfryer.
8. Make the tomatoes and cucumber with pork chop well on plate. Serve.

As you know, we almost rarely cook on weekdays because of work. Usually we just dabao (get takeout) from the coffeeshops near our place and one of our favourite choices of dinner is economy rice or more fondly referred to as Cai Png in Hokkien. In case you didn't know what an Economy rice stall sells, think Panda Express-- the stall pre-cooked a good variety of dishes and customers can select any of these dishes to go with white rice. This sticky honey pork dish was inspired by one of the cai png stalls Roland usually patrons. They cooked this dish so well that I had to get Roland to cook it at home too.

Ingredients:
Serves 6
1st - marinate the pork for at least 2 hours

600g of pork loin with bones
1.5 tablespoons of light soya sauce
1 tablespoon of Chinese white rice wine
1 tablespoon of oyster sauce
1/2 teaspoon of baking powder
A generous dash of white pepper
3 tablespoons of cornflour
2nd: Deep fry pork twice (1st fry over medium heat & 2nd fry over high heat)
3rd: Putt the dish together

1/2 thumb size of ginger - julienne
4 cloves of garlic - chopped
1 cup of water
2 tablespoons of light soya sauce
2 tablespoons of honey
1 tablespoon of dark soya sauce
Add marinated pork

材料:
梅花肉排 3片
蒜泥 1茶匙
薑泥 1茶匙
太白粉 3大匙
Ingredients:
3 pieces of plum pork steak
1 teaspoon of minced garlic
1 teaspoon of minced ginger
3 tablespoons of cornstarch
調味料:
鹽 1/4茶匙
細砂糖 1/2茶匙
胡椒粉 少許
米酒 1大匙
胡椒鹽 適量
Seasoning:
1/4 teaspoon salt
1/2 teaspoon fine granulated sugar
A small amount of pepper
1 tablespoon rice wine
Salt and pepper suited to taste
作法:
1. 用刀將梅花肉排筋切斷。
2. 蒜泥、薑泥及所有調味料拌勻,再放入作法1的肉排抓勻。
3. 熱鍋加入沙拉油,於豬排表面沾上一層薄薄的太白粉後放入鍋中,以小火煎至兩面金黃,取出裝盤,再沾胡椒鹽食用即可。
BOX:
豬排沾粉再煎較不容易焦,且也能讓調味料好附著於豬排上,吃起來口感和滋味都較佳。
Preparation Instructions:
1. Use a steak knife to cut out the ribs.
2. Add minced garlic, minced ginger and all the seasonings. Mix well, then dip 1 pork chop into the breading mix.
3. Add salad oil to a heated frying pan. Place the pork chops with their surfaces thinly coated in cornstarch into the pan and fry over low heat until golden on both sides. Move to a plate and then dip them in salt and pepper for eating. That's it.
BOX:
Pork chops dipped in breading are less likely to burn and this also allows for better seasoning adherence to the pork chop. The texture and flavor really come out when eating.
