農曆新年過去,家中囤積的年糕、蘿蔔糕、角仔、糖果等應該消化得七七八八了吧?!大時大節的菜式特別油膩又重口味,也會比平常吃得更豐富,一時飲食過量及多吃肥甘厚味的食物容易損傷脾胃,引起消化不良的不適症狀。這個時候喝一碗消滯湯水,腸胃也會好起來。
食材小貼士:
麥芽屬性平和,能健胃助消化,尤其對澱粉質食物有幫助。適合大人、小孩的消化不良、胃部不適等症狀。
白蘿蔔麥芽花生湯
功效:行氣消滯,紓緩因飲食不節引起的消化不良、胃脹、大便不爽等症狀。
材料:白蘿蔔1根、麥芽20克、陳皮1角、生薏米20克、黃豆30克、花生30克
做法:
1. 所有材料洗淨,白蘿蔔去皮切大塊備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。
注意:麥芽有回乳作用,哺乳中婦女不宜飲用。

Snacks and dishes during festive seasons are often greasy, oily, and sumptuous. Excessive consumption of these foods can hurt the spleen and stomach, leading to indigestion. It would be beneficial for the stomach and intestines if we drink a bowl of soup that can help relieve the stagnation.
Tip on the ingredients:
Malt - mild in nature, can strengthen the stomach and relieve indigestion. It is especially effective for those who ate too much carbohydrates. Suitable for adults and children with indigestion, stomach upset and related symptoms.
White radish and malt soup with peanuts
Effects: Promotes qi circulation, alleviates symptoms such as indigestion, stomach discomfort, difficulty passing stool due to poor eating habits.
Ingredients: 1 white radish, 20g malt, 1 dried citrus peel, 20g raw coix seed, 30g soybean, 30g peanut
1. Rinse all ingredients thoroughly. Cut peeled white radish into pieces.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.
Note: Malt may decrease breastmilk supply, so those who are breastfeeding should avoid.

鹽 1/3茶匙

蠟腸 1 條
蝦米 25 克

Chinese Turnip Pancakes
Ingredients: (10 pcs)
Knife Supreme Corn Oil
Turnip 1/2 pc(about 350 g)
Egg 1 pc

蘿蔔糕:
材料:
白蘿蔔2斤
臘腸2條
臘肉4兩
蝦米4湯匙
沾米粉200克
鹽2茶匙
胡椒粉1茶匙
油少許
處理:
1. 大火煲滾1升水,放臘腸及臘肉,烚1分鐘,去除表面的塵埃。
2. 凍水沖乾淨。
3. 先蒸熟臘腸及臘肉,會容易切一點。
4. 蘿蔔去皮,同一位置,刨2次。
5. 蘿蔔,切粗條。
6. 1條臘腸切開6小條,切碎粒,放碗中。
7. 臘肉去皮,切碎粒,放碗中。
烹調:
1. 蘿蔔條,放鑊中,加入400毫升水,煲熟蘿蔔,同時加入鹽攪勻。
2. 蝦米,清水浸5~10分鐘。
3. 蘿蔔煮至透明,表示熟透。
4. 倒出蘿蔔水,攤凍。
5. 白鑊爆香臘腸及臘肉,聞到香味,就放入碗。
6. 爆香蝦米仔,放入碗。
7. 開始處理沾米粉漿,先煲一鑊水。
8. 放沾米粉在大碗中,加入蘿蔔水,攪勻。
9. 用隔篩隔去雜質。
10. 加入胡椒粉,攪勻。
11. 加入臘腸臘肉及少量蝦米,一同攪勻。
12. 掃少量油落糕盤。
13. 所有材料,倒入糕盤中。
14. 蓋上錫紙,避免水氣倒流。
15. 用大火蒸蘿蔔糕1小時,大概每15~20分鐘,就要加入大滾水,避免燒乾。
16. 蒸了45分鐘,取出蘿蔔糕,掃上漿粉水。
17. 鋪蝦米上蘿蔔糕,細力壓實。
18. 再鋪上錫紙,蒸剩下的15分鐘,完成。
Turnip cake:
Ingredients:
White radish 2 catty
Chinese sausages 2 Nos.
Preserved pork belly 4 taels
Dried sea shrimps 4 tbsp
Rice flour 200g
Salt 2 tsp
Pepper 1 tsp
Oil little
Preparation:
1. Heat up 1L water at high flame. Boil Chinese sausages and preserved belly for 1 minute to remove dust on surface of them.
2. Rinse by tap water thoroughly.
3. To ease cutting, steam well Chinese sausages and preserved belly first.
4. Peel white radish. Peel 2 times at the same point.
5. Slice white radish thickly.
6. Divide a Chinese sausage into 6 thin slices. Then get them diced and put into a bowl.
7. Remove skin of preserved belly. Dice into small cubes. Put in a bowl.
Steps:
1. Put white radish slices in wok. Boil it up with 400ml water and salt. Mix well.
2. Soak dried sea shrimps with tap water for 5~10 minutes.
3. It means already cooked well when white radish becomes transparent.
4. Pour out syrup of white radish. Cool it down.
5. Fry Chinese sausages and preserved belly until you can feel the smell of them. Put it into a bowl.
6. Fry dried sea shrimps until you can feel the smell of it. Put it into a bowl.
7. It is time to make rice flour sauce. Boil up a pot of water first.
8. Put rice flour into a big bowl, mix well with white radish syrup.
9. Use a strainer to release the impurities.
10. Mix well with pepper.
11. Mix well with Chinese sausages, preserved belly and little dried sea shrimps.
12. Brush little oil on steaming bowl.
13. Pour all the ingredients into the bowl.
14. Cover up with aluminum foil.
15. Steam turnip cake at high flame for an hour. Add boiled~up water for every 25~20 minutes.
16. Have already steamed for 45 minutes, take it out and brush rice flour sauce.
17. Put dried sea shrimps on turnip cake and press it gently.
18. Cover up with aluminum foil again. Steam for 15 minutes more. Serve.

煎蘿蔔糕
材料:
蘿蔔糕 400克 Chinese turnip cake 400g
油 適量 oil q.s.
作法:
1.先將蘿蔔糕切成一口大小。
2.在熱鍋中加入油,將蘿蔔糕煎到四面微焦即可起鍋。
沙茶炒蘿蔔糕
材料:
沙茶 2大匙 chinese BBQ sauce 2tbsp.
蒜末 15克 garlic 15g
辣椒 15克 chili pepper 15g
九層塔 適量 basil leaves q.s.
作法:
1.在熱鍋中倒入適量的油,加入蒜末和辣椒爆香。
2.加入沙茶醬和九層塔拌炒至沙茶香氣散出。
3.加入作法煎好的蘿蔔糕,拌炒至均勻即可。
XO醬炒蘿蔔糕
材料:
XO醬 2大匙 seafood sauce 2tbsp.
香菜 適量 coriander q.s.
作法:
1.在熱鍋中倒入適量的油,加入XO醬拌炒至香氣散出。
2.加入作法煎好的蘿蔔糕,拌炒至均勻。
3.起鍋前撒上香菜即可。
麻辣炒蘿蔔糕
材料:
麻辣醬 2大匙 chilli sauce 2tbsp.
乾辣椒 適量 dried chili q.s.
蔥末 適量 chopped green onion q.s.
作法:
1.在熱鍋中倒入適量的油,加入乾辣椒爆香。
2.加入麻辣醬拌炒至香氣散出。
3.放入作法煎好的蘿蔔糕,拌炒至均勻。
4.起鍋前撒上蔥末即可。
泡菜起司
材料:
韓式泡菜 2大匙 kimchi 2tbsp.
起司絲 適量 cheese qs.
作法:
1.在熱鍋中倒入適量的油,加入泡菜拌炒至香氣散出。
2.放入作法煎好的蘿蔔糕,拌炒均勻。
3.撒上起司,待起司融化即可。

●茄子:2本
●みょうが:3本
●カブ:5個
●オクラ:2パック
●赤パプリカ:1個

●醤油:100ml
●めんつゆ:50ml(白だしでもOK)
●みりん:100ml
●お酒:150ml
●鶏ガラスープの素:大さじ1/2
●豆板醤:大さじ1/2(コチュジャンでもOK)
●酢:大さじ2
●塩こんぶ:大さじ1/2
●干し椎茸:2個
●生姜
●炒りごま:お好み量
●唐辛子:お好み量
※野菜はお好みで旬の物を入れてあげてね
※豆板醤の辛みが苦手な方は赤味噌同量+にんにく少々
※色んな物にかけて食べられるよう味は濃いめにしてあります。
そのまま食べたい方はお好みに合わせて味を薄めてあげたり、野菜の量を増やしてね

今回は父が亡くなる前に家族を想って遺してくれた
僕にとっては宝物みたいなご馳走レシピから
『超やべぇ野菜漬け』を作らせて頂きました。
小さい頃の僕にでも簡単に作れるよう
難しい行程は全部省いて美味しく出来るように
父ちゃんが考えてくれたものです。
色んな出汁が良い感じにあわさっていて
とても深みのある味わいに仕上がってます。
今回は思い入れの強いレシピだったので撮影するかどうか悩んだんですが
お客様の美味しい笑顔を見るのが本当に大好きな父ちゃんだったので
コロナで大変な世の中ですが、このレシピで少しでも多くのご家庭の食卓で笑顔が作れたら
父ちゃんも天国で喜んでくれると思い動画にさせて頂きました。
今回動画で合わせている素麺はもちろん、うどんやご飯、豆腐、鶏肉や豚肉、サラダなどなど
合わせられるものは無限大です。
漬け時間が短くても野菜のシャキシャキ食感が楽しくて美味しいですし
半日後には味が染みて、これまた最高に美味しいです。
どちらも是非試してみて欲しいです。
本当に簡単なので是非作ってみて下さい。
【Ingredients】 (Preservation period: about 4 days refrigerated)
● Cucumber: 2
● Eggplants: 2
● Myoga: 3
● Turnip: 5
● Okra: 2 packages
● Red Paprika: 1
● Yellow Paprika: 1
● Shiso leaves: 10
● Soy sauce: 100ml
● Men-tsuyu (white soup stock can be used): 50ml
● Mirin: 100ml
● Sake: 150ml
● Chicken soup stock: 1/2 tablespoon
● Dou ban jiang (gochujang is also OK): 1/2 tablespoon
● Vinegar: 2 tablespoons
● Salted kelp: 1/2 tablespoon
● Dried shiitake mushrooms: 2
● Ginger
● Roasted sesame seeds: as you like
● Chili pepper: as you like
※ Add whatever vegetables are in season to your liking.
※ If you don't like the spiciness of Dou ban jiang, use the same
amount of red miso + a little garlic
※ If you prefer to eat it as it is, you can dilute the flavor or
increase the amount of vegetables according to your taste.

This time, I made "Amazingly Yummy Pickled Vegetables" from a treasured
recipe that my father left for my family before he passed away.
In order to make it easy even for me as a child to make, My father's
idea was to make it tasty without all the difficult steps.
The sauce has a good combination of various dashi and has a very deep flavor.
I had a hard time deciding whether or not to publish this recipe
because I had such strong feelings about it.
My father really loved to see the smiles on the faces of his
customers, so I decided to make a video because I thought he would be
happy in heaven if I could bring smiles to the faces of as many
families as possible with this recipe in a world that's in trouble
with Corona.
This recipe can be used not only with somen noodles, but also with
udon noodles, rice, tofu, chicken, pork, salads, etc.
There are no limits to what you can eat with it.
Even if the marinating time is short, the crunchy texture of the
vegetables is fun and delicious, and after half a day, the flavors
have soaked in and it tastes great.
