Whampoa Keng Fishhead Steamboat has opened a new outlet at 512-514 Geylang Road! We had big chunky red garoupa in thick and slightly sweet broth.
Sweet & Sour Spare Ribs were juicy and served with Golden Crispy Cod Strips. We also had the crispy Deep Fried Nan Ru Pork Belly, Poached Chinese Spinach with Assorted Eggs, Claypot Indonesian Style Chicken and soft Signature Crab Meat Foodstreet Tofu in Gravy.
Still a satisfying dinner but parking might be an issue here. Opens till 1am and they are open throughout CNY!

Finally got down to try this Thai Kway Chap and the soup reminded me of Bak Kut Teh! Had the signature bowl ($5) which comes with curled kway teow strips, fish sausages, deep fried pork belly, pork stomach and sliced pork. Both the fish sausages and deep fried pork belly were excellent but we ordered something different for the side—Thai Style Deep Fried Mid-Joints ($6) which are served piping hot, crispy and juicy 🤤
No service charge or gst but do look out for the dining crowds especially during weekends peak hours

Olive fried rice is a Chinese style fried rice commonly found in Thailand. I remember the time when I have never tried this dish - I was rather put off by the greyish outlook of the rice - I mean it doesn't really look very appetising right. Haha. But the first time I finally gave it a taste, lo and behold, I love it!!! Love it love it love it! If you have never tried Thai Olive Fried Rice before, I really encourage you to give it a try. You might turn into an advocate like me too :)))

Ingredients:
Serves 3 - 4 pax
5 cloves of chopped garlic
8 pieces of salted Chinese black olives (remove pits & chop)
200g of minced pork (can be replaced with minced chicken)
A few dashes of white pepper
600g of cooked rice (left overnight in the fridge)* see note below 2 tablespoons of fish sauce
Fry 3 beaten eggs into an omelette and cut it into strips
Fry 25g of dried shrimp until crispy (rehydrate the dried shrimp first)
Also prepare some freshly cut shallots, roasted cashew nuts, wedges of lime and some small pieces of lime with skin on. If you like your rice to be spicy, cut up some bird's eye chilli as well.
*To prepare this amount of cooked rice, simply cook 290g of uncooked rice. If you do not have the time to cook the rice the day before, spread the rice out in the open once you have cooked them. The purpose of this step is to remove as much moisture from the cooked rice as possible.

Tomato source pasta with beef and eggplant
Ingredients(2 servings)
140g pasta
100g beef(thin-sliced)
2 eggplant
5 leaves Japanese basil
3 cloves(15g) garlic(sliced)
3 chili pepper(sliced into rings)
2tablespoons olive oil
1tablespoons soysource
proper amount of grated parmesan cheese
salt and pepper to taste
300g canned tomato(diced)
100ml pasta water
pre-cooking
Cut off the tip of eggplant and cut into quarter 2〜3cm thick.
Cut Japanese basil into thin strips.
① Cook pasta follwing the package instructions.
②While pasta is cooking, add olive oil , garlic, chili pepper into warmed frying pan over low heat and stir gently until garlic is fragrant.
③ Add beef and eggplant into frying pan with salt and pepper to taste over medium-high heat.Stir until eggplant is soft then pour soysource and combine quickly.(reserve some for presentation
【A】Add diced tomato and pastawater into frying pan and cook over medium heat until the mixture just bigins to boil then add salt and pepper to taste.
Add drained pasta into frying pan and toss until well mixed.
Put cooked pasta in a serving plate. Top with reserved no.③ and sprinkle Japanese basil and grated cheese over pasta.

・水菜 1束
・ツナ缶 1缶(70g)
・韓国海苔 8枚(全形1枚)
<たれ>
・鶏がらスープの素 小さじ½
・しょうゆ 小さじ2
・酢 小さじ2
・砂糖 小さじ1
・ごま油 小さじ1
・おろしにんにく 少々
・白すりごま 大さじ1
手順
1. 水菜は食べやすい大きさに切り、水で洗ってよく水気を切っておく
2. ボウルにツナ缶を汁ごといれ、たれの材料を全て入れてよく混ぜる
3. 水菜を入れてなじませたら韓国海苔を適当な大きさにちぎり入れて混ぜる
