Lai Yee's Kitchen- Pandan Chicken Mel's style
Thailand again. We can never get enough of Thailand and their food.
Today I want to challenge myself to make my very first pandan chicken.
It turns out to be quite "pro" .. What I will do next time is to make the chicken thiner and slightly longer and roll up a little before I wrap with the pandan leaf. Definitely not in a big chunk size. That way all the flavours and marination will be in between the meat and It will make the chicken more juicy and flavourful.
Ingredients (enough for 6 of us):
. Pandan leaves around 20 to 30 leaves
. 1 kg chicken fillets
. oil for deep frying
For the marination:
. 5 cloves garlic
. 2 cm turmeric (Typo in my video -Oops!)
. 3 tbsp lemongrass
. 5 shallots
. 5 cm ginger (I didn't have fresh ginger and I used powder
. around 10 white peppercorns
. 2 tbsp soy sauce
. 2 tbsp oyster sauce
. 1 tbsp Tamarind juice
. 2 tbsp palm sugar or brown sugar
. 2 tbsp coconut milk
. 2 tbsp white sesame
. 1 tbsp sesame oil
. 4 coriander roots
* Blend all to a smooth paste.
* It was not funny, I accidentally deleted a part of my video and cant find it back.. So my video didnt have some of the ingredients in the clip. Apology!
* Add-on : If I am not cooking for the kids, I will add on chili to be grinded together.
For the dipping ingredients :
. 3 cut chili padi
. 3 tbsp cut shallots
. 2 tsp fish sauce
. 1 tbsp soy sauce
. 5 lime juice
. chopped coriander (I didnt show in video)
* Mix up and serve
It was so good though. I wonder if I can make a tom yam flavour version. I will definitely try soon. What is next for Thai food?

其实从以前到现在我都认为烹饪是一件很容易的事情来的,因为我每次煮来煮去的都是YouTube上学的那些牛排鸡胸炒菜煎蛋啊什么的,所以我一直以来都以为 “我很会煮”!
但其实经过这次的挑战之后 我发现,我真的是一个白痴😅
烹饪不止讲求知识 速度 观察力,最重要的是要用心!从怎么准备材料 排法顺序 观看火候 都需要很大的 耐心去完成的!
所以从这次和爸妈学煮咕咾肉上,我学到无论是烹饪还是其他事上,都有它博大精深的一面,凡事要精益求精,没有最好 只有更好😉💪🏻

I always thought that cooking is something easy for me, because every time the food that I cooked is something that I pick up from YouTube...like beefsteak ,chicken breast, stir fry vege, fried eggs etc... so all this while, I thought I am a pretty decent chef!
But after this challenge, I realised that I am such an IDIOT!!!! 😅
In cooking, you not only need to have the knowledge, speed, observation but the most important of all.... you need to have the HEART!!! From how to prepare the ingredients, arrange the food and how to take care of the fire, it all require HEART to accomplish it!
So what I learn this time from my parents is that... no matter it’s in cooking or anything else in life, there’s always BROAD AND PROFOUND side of it, so we have to keep improving ourself no matter what. Practice make PROGRESS guys💪🏻💪🏻

For this video, we went down to a special kitchen to whip up a massive 7KG Collagen Ramen Challenge with the help of Chantalle Ng (@chantalleng)! Chantalle is the star of the Mediacorp drama My Star Bride, playing the titular role in the form of a Vietnamese bride. The collagen broth comes from her very own brand, Yuan Collagen, which she co-founded with her friend Minying. The collagen is chicken-based and is extremely high in protein (10g per 100ml) with half the number of calories of your average collagen broth. The noodles we used were also provided by Chantalle’s company, a type of homemade egg noodles.
After a quick cooking process and with the help of some pre-cooked ingredients, Chantalle assembled the final bowl of noodles. It consisted of 11 portions of noodles, char siew, eggs, pork dumplings, seaweed and fried chicken, topped up with a healthy amount of the Chicken Collagen broth. It came up to almost 7KG and even more broth was added towards the end of the challenge.
It was a rich, nutritious and hearty ramen meal that I did not struggle to complete. Naturally, it was different from your typical Japanese ramen broths – a lot more “chickeny” in flavour and much thicker. The pre-cooked items were decent.
The strength of such a broth base is its versatility. You could use it for any dish you can imagine that requires some form of liquid to be added, such as risotto or hotpots. The broth acts as a flavourful and nutritious base for you to develop your meal on. In a pinch, you could even use it to cook instant noodles!

Since I am also a local Malaysian brand. I like to support local products from the local farmers, stores and brands. Today I have Ayam Kampung (village free range chicken) from Ah Lau @Ahlaufking the famous violinist @dennisviolin .. Very healthy looking chicken. Not much fat and affordable, NICE!
So I thought of sharing this recipe with you all. My Poh Poh used to make us stuffed mackerel fish, stuffed chicken and stuffed veggie, which I plan to show soon in the next IGTVs.
You need to prepare this a day ahead. Debone the chicken from the bottom up (by still keeping the whole chicken in shape, don't cut the body), marinate it overnight before you stuff the fillings the next day.
Ingredients :
. one whole chicken
MARINATION-
. 4 Cloves garlic
. lemon juice
. small piece galangal
. 3 tsp soya sauce
. black pepper
. ginger juice
- Grind them to a smooth paste -
FOR THE STUFFING-
. 1kg of minced chicken, it is also depending on the size of your chicken
. Cut spring onions
. Chop 1 big red onion
. Shredded carrot
. Green peas
. 2 cloves chopped garlic
. Sesame Oil
. Salt
. Black Pepper
. Pounded curry leaves
. Chopped coriander
-Mix them all up and leave overnight or at least few hours before using-
FOR ROASTING- You will need some oil or butter , baking paper, black pepper and Thyme.
FOR GARNISHING - use any type of vegetable, or fruits like berries and pineapple or orange.
You may also prepare a sauce of your choice to serve. I like to eat them with my own Mel's Kidnap Me Hot Sauce (you want to know how I make it?)
