Claypot Chicken Rice
Ingredients:
Serves 3 - 4 pax

Marinated chicken
+++++
250g boneless chicken thigh meat (remove skin & cut into bite size pieces)
1 tablespoon oyster sauce
1 teaspoon light soy sauce
1/2 teaspoon sugar
1 teaspoon rice wine (or water)
1.5 tablespoons of cornflour
A few dashes of white pepper
1 tablespoon sesame oil

Fry 10g of dried salted fish until brown and crispy

Sauce
+++++
1 tablespoon shallot oil or normal cooking oil (Shallot oil recipe: https://youtu.be/7ZAC099Xw3o)
2 tablespoons premium dark soy sauce
1 tablespoon light soy sauce
80ml or 1/3 cup water
1 teaspoon sugar

Other ingredients
+++++
2 cups or 300g of jasmine rice (use a rice cup to measure)
2 cups or 340ml of water (use a rice cup to measure)
60g of Chinese sausage (slice the sausage first then soak in hot water for about 5 mins to remove casing)
1 piece of wet salted fish
A handful of your favourite greens (we used kailan or Chinese broccoli)
Pour the sauce over the rice and add the crispy salted fish on the rice before serving. Mix well and enjoy.

If you have only been using your rice cooker to make plain white rice, you have not used it to its fullest potential. In fact, you can make a variety of simple one dish meals with it and some rice cookers even can let you bake cakes in them. If you're still using a normal old school rice cooker with only one function i.e. cook rice function, it's time to switch it out for something slightly more advanced or perhaps you can even consider switching to a multi-cooker that comes with pressure cooking function. Don't go just because you still own an old-school rice cooker. The good news is even though we have used a multi-cooker for this Glutinous Rice with Chicken recipe, you can also use your normal rice cooker to prepare this dish too. FYI Glutinous Rice with Chicken is also known as Lor Mai Gai or 糯米鸡 in Chinese. This is a super easy and delicious Chinese recipe. Happy cooking!

1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)
1 teaspoon of cornflour

There is nothing more satisfying than to enjoy a perfectly roasted chicken that's still juicy within. This is another easy recipe (in our opinion) Yes I know you need to stir fry the glutinous rice stuffing on the side but technically there are only three cooking steps to this recipe. Marinate, fry and bake/roast. I don't know about you but I love glutinous rice. Roland was spot on with the flavours on the rice. Super yummy!

Serves 4 - 6
Ingredients for marinated chicken
---------
1 stalk of spring onion - lightly smashed & tied into a knot
1 cilantro root - lightly smashed
4 cloves of garlic - lightly smashed
4 pieces of shallots - lightly smashed
2 tablespoons of Chinese white rice wine
2 tablespoons of light soy sauce
2 tablespoons of oyster sauce
1.5 tablespoons of fresh ginger juice (grate some ginger & squeeze)
1/2 teaspoon of sugar
1 tablespoon of premium dark soy sauce
1.2kg fresh chicken
Ingredients for glutinous rice
-----------
3 slices of young ginger
2 cloves of chopped garlic
160g of glutinous rice (soak for 3 hours before use)
6 pcs of dried Chinese mushroom (soak in water to rehydrate & dice)
60g of Chinese sausage (soak in hot water & remove skin then dice)
60g of Chinese chestnut (use ready-to-eat type for convenience)
1 tablespoon of light soy sauce
1 tablespoon of oyster sauce
1/2 teaspoon of premium dark soy sauce
A few dashes of white pepper
160ml of water
Other materials:
2 pieces of dried lotus leaves
2 - 3 pieces of baking paper
Bake the wrapped stuffed chicken in the oven for 40 mins at 180C / 356F. If you want to brown the skin of your chicken, remove the chicken from the package and bake the chicken for 20 mins at 180C / 356F. If you just want to cook the chicken in one step without removing it from the package, bake the chicken in the package for a total of 1 hour at 180C / 356F.
