全部食材配方列表如下:
主食材:
雞腿 6隻 和 大骨腿 2隻 (或全部用雞腿 8隻)
醃料粉漿材料:
太白粉 20公克
低筋麵粉 20公克
地瓜粉 20公克
常溫開水 30cc
鹽 10公克
味精 10公克
胡椒鹽 12公克
五香粉 2小匙 (約4公克)
(也可用 1/2小匙 百草粉替代五香粉, 炸出來的香味更濃郁突出)
全蛋 2顆
沙拉油或芥花油 100cc
油鍋炸油:
油炸用油適量(能蓋滿雞腿的油量,建議用油炸專用油)
做法:
1. 先準備好醃漬雞腿的濕粉漿粉料調味料(上列醃料粉漿材料)
2. 準備一醃漬鋼盆, 放入所有備齊的醃料粉漿材料, 用打蛋器將所有醃料粉漿材料等全部打到均勻混合呈現光亮狀態
3. 將雞腿仔細去除細毛後洗淨, 再用廚房紙巾擦乾雞腿表面水分
4. 將雞腿一隻隻放入打好的醃漬粉漿中, 並讓每隻雞腿都有均勻醃漬到粉漿, 將醃漬鋼盆蓋好保鮮膜放冰箱冷藏醃漬18小時以上
5. 放冰箱醃漬期間每6個小時需拿出來翻拌雞腿1次再放回冷藏, 其目的是讓每隻雞腿都能均勻醃漬入味
6. 18小時後將冰箱醃漬好的雞腿取出, 再次翻拌勻後放置常溫下半小時
7. 準備一油鍋, 油量須蓋過欲炸雞腿數量, 油溫請預熱後恆定溫在170~175度之間
8. 雞腿炸前將先雞皮整理好並裹上濕粉漿, 再稍甩落些溼粉漿, 使其雞腿上一層薄薄的濕粉漿後放入油鍋
9. 雞腿下油鍋後先不要去翻動, 等2分鐘讓雞腿炸定型後再翻動, 每隻雞腿油炸時間15分鐘
10. 油炸15分鐘時間到後取出雞腿瀝乾油分, 趁熱食用
Recipe
Main Ingredients:
6 chicken drumsticks and 2 chicken leg quarters
(or all use chicken drumsticks)
Ingredient Of Marinades:
20g Potato starch
20g Low gluten flour(Cake flour)
20g Sweet potato starch(Tapioca starch)
30cc Water
10g Salt
10g MSG
12g Pepper salt
4g Chinese five spices powder
(If you don't like the taste of chinese five spices powder,
you can use the 2g thyme powder & 2g garlic powder replace it.)
2 Eggs
100cc Soybean oil or Canola oil
Fried oil:
Appropriate amount
(Oil quantity must over the number of chicken legs and
recommended the use of fried special oil; Soybean oil or Canola oil second.)
Method:
1.Prepare all Ingredient Of Marinades for chicken legs.(Please see the above list.)
2.Take a mixing bowl.
3.Add all ingredient of marinades in the mixing bowl.
4.Mix all ingredient of marinades.
5.Prepare the Main Ingredients. (Please see the above list.)
6.Carefully remove the fine hair on chicken legs, wipe dry the surface of chicken legs with kitchen paper towels after cleaning.
7.Put the chicken legs one by one in the marinade.
8.Have each chicken leg coated with marinade.
9.Cover the mixing bowl with plastic wrap.
10.Put in the refrigerator, marinate chicken legs for 18 hours.
11.During the marinade, stir well the chicken legs every 6 hours.(Purpose to make each chicken leg delicious.)
12.Remove the marinated chicken legs from the fridge after 18 hours.
13.Stir well again after placing half an hour at room temperature.
14.Prepare a deep fryer with oil quantity over the number of chicken legs.
15.Preheat deep-fry oil temperature to 170-175℃ (338-347℉) and then control the oil temperature in this range.
16.Before frying chicken legs, adjust the chicken skin first.(Let the chicken legs look good after frying.)
17.Then wrap the chicken legs in a thin layer of marinade, deep-fry them.
18.Chicken fried time 15 minutes and set the alarm.
19.Do not flip the chicken legs first, then flip the chicken legs 2 minutes later.
20.After the 15 minutes, pinch out the fried chicken legs and drain the oil.
21.Fried chicken legs have all been completed; eat hot and crispy.

Both of us are working at home most of the time. Just like you, we like our meals to be easy, quick and yet still delicious on a working day. As we try to limit ourselves from going out too often, we usually stock our pantry with long-lasting vegetables, such as potatoes, carrots and onions. We love this Chinese style chicken stew recipe because it's so easy to cook and we have all of the ingredients ready in our pantry. Best of all, it is really yummy. You can have them as is, serve them with some steamed rice or even pasta - really versatile!

Chinese Chicken Stew 中式炖鸡
Ingredients:
3 - 4 pax

4 chicken drumsticks (~600g or 21.16 oz in total)
2 red onions (cut into quarters)
4 potatoes (cut into chunks)
400g or 14.1 oz carrots (cut into chunks)
Enough water to cover the drumsticks
0.5 teaspoon salt
2 tablespoons light soy sauce
2 tablespoons oyster sauce
2 tablespoons premium dark soy sauce
Add more salt to taste (we added 1 teaspoon)

Soy sauce chicken leg:
35 oz(992g)chicken leg quarters(2 pieces)
Soy sauce mix:
1 Tbsp dark soy sauce
1 Tbsp oyster sauce
1 Tbsp
mushroom dark soy sauce
Some white pepper
3 cups water
3 cloves garlic w/ skin 2 sections tangerine
Some ginger
1 cinnamon
1 star anise
1 oz rock sugar
2 Tbsp MEI KUEI LU CHIEW(Any cooking wine can be use)

海鮮蒸氣鍋 (蒸海鮮+鮮菇粥)
上層材料:
蛤 8顆 clam
軟絲 2尾 Neritic Squid
蝦 10尾 shrimp
淡菜 8顆 mussel
下層材料:
白飯 400g steamed rice
新鮮巴西蘑菇 100g Agaricus blazei mushroom
水 2000cc water
作法:
1.蒸氣鍋蒸氣鍋底部溝槽加入水至滿水線,將湯鍋放上不鏽鋼湯鍋,倒入水與白飯、巴西蘑菇,再放上304不鏽鋼蒸盤,上層材料鋪上蒸盤,蓋上鍋蓋,按下開關→[蒸煮]
鍵。
2.待約8分鐘後掀蓋將上層材料取走,湯鍋內的粥品可繼續蒸煮,可依個人喜好直接食用或再加料即可。
雞肉蒸氣鍋(蒸大雞腿+蔬菜火鍋)
上層材料:
大雞腿 3隻 chicken leg quarters
米酒 1大匙 cooking rice wine 1tbsp.
下層材料:
洋蔥 1顆 onion
娃娃菜 適量 baby Chinese cabbage
水 2000cc water
鹽 2茶匙 salt 2tsp.
火鍋料 適量 hot pot dumplings and balls
作法:
1. 洋蔥切大片、娃娃菜洗淨備用。
2. 蒸氣鍋底部溝槽加入水至滿水線,將湯鍋放上不鏽鋼湯鍋,倒入水、洋蔥、娃娃菜與火鍋料。
3. 放上不鏽鋼蒸盤,上頭放上大雞腿,淋上米酒,蓋上鍋蓋,按下開關→[蒸煮]鍵,待運轉完畢,起鍋前在火鍋湯中加入鹽巴調味。
4.將蒸好的雞腿切好盛盤,即可搭配蒜頭醬油與火鍋一同食用。
蔬菜蒸氣鍋 (蒸蔬菜+薏仁排骨湯)
上層材料:
紫山藥 250g purple Chinese yam
娃娃菜 2顆 baby Chinese cabbage
玉米 1條 sweet corn
地瓜 1條 sweet potato
南瓜 300g pumpkin
下層材料:
燙過排骨 500g pork ribs (blanch first)
薏仁 100g Semen Coicis
米酒 2大匙 cooking rice wine 2tbsp.
水 1800cc water
薑片 20g ginger
紅棗 10顆 red date
鹽 2茶匙 salt 2tsp.
作法:
1. 排骨先汆燙過、薏仁先稍微泡水過備用。
2. 蒸氣鍋底部溝槽加入水至滿水線,將湯鍋放上不鏽鋼湯鍋,倒入水、排骨、紅棗、薑片與米酒。
3. 放上不鏽鋼蒸盤,上頭放上各種蔬菜,蓋上鍋蓋,按下開關→[蒸煮]鍵,待運轉完畢,起鍋前在排骨湯中加入鹽巴調味即可。
