【暗黑料理之朱古力旦糕】
難得整組人願意陪我食素,又適逢朋友生日,本打算訂製一個美美的旦糕給大家品嚐,但時間太趕了,來不及!苦惱了一天,然後想起 Coffeewya 好琲之途 曾經教我做過一款旦糕。
很記得中秋那個晚上,花了4-5個小時,做了兩次,還給家人試味,我爸很驚喜這款旦糕居然可以入口 🙄 於是我把製成品送給了我這組朋友,再插支浮誇的生日蠟燭,賣相的確可以騙到人,朋友說味道很好食,而且覺得我會做旦糕有加分。
但實情是... 我把麵粉搞混亂了,高筋低筋傻傻分不清楚 🤣但這也很正常啊,若旦糕太完美,就不是我做的了,畢竟我強項是暗黑料理,好嗎?無論如何,大家食得開心,聚會完滿就好啦~ 😎
旦糕材料包括:非常非常熟的香蕉、有機黃糖、有機蘋果泥、水、低筋麵粉(記住!)、有機無糖可可粉、蘇打粉、鹽巴、朱古力粒

It is very rare that the whole group is willing to have a vegan night with me, and it is also a friend’s birthday. I intend to order a beautiful vegan cake for everyone to taste, but it's just too rush to order! Then I remembered Coffeewya 好琲之途 taught me to make a cake before.
I remember that on the night of Mid-Autumn Festival, I spent 4-5 hours, made the chocolate cake twice, and even gave my family to taste. My dad was very surprised that this cake could be eaten. 🙄 So I gave the finished cake to my group of friends. The cake with the beautiful candle on it, it looks really nice, my friends said that the taste is very good, and it's made by me, so add bonus marks.
But the truth is... I messed up the flour, I can't even distinguish and differences between the strong flour and pastry flour, 🤣 but it is very normal. If the cake is too perfect, it is not made by me for sure. My strength is making dark cuisine. Ok? Anyway, everyone has a good time, and the party is full of joy, that's the point 😎

●ご飯:3合
●すし酢:約90ml(様子を見ながら入れてあげて下さい)
●絹さや
●卵:4個
●砂糖:小さじ1
●塩:小さじ:1/2
●海老:お好み量
●かまぼこ:お好み量
●いくら:お好み量
●桜でんぶ:お好み量
『ちらし寿司の素』
●人参:1本
●干し椎茸:5個
●干し椎茸の戻し汁:約300ml
●醤油:大さじ2
●みりん:大さじ2
●めんつゆ(4倍濃縮):大さじ1/2(あごだし、かつおだし系)
●三温糖:大さじ2(普通の砂糖でもOK)
『酢れんこん』
●れんこん
●酢:150ml
●水:100ml
●ほんだし(和風出汁):4g
●鷹の爪(唐辛子)お好み量
●三温糖:大さじ3(普通の砂糖でもOK)
●乾燥昆布
●塩:小さじ1

ひな祭りという事で今回は絶品ちらし寿司を作りました。
今回の味の決め手、干し椎茸の出汁の旨味がとにかく凄いんですが
その出汁で作った酢飯の混ぜご飯は本当に世界一美味しいんです。
いつもの簡単なレシピに比べると、ひとつひとつ少しの手間がかかってますが
その分、色んな食材が合わさった時の相乗効果は半端なく食べた時の感動は超ヤバイです…。
今回はひな祭りという事で作らせて頂きましたが
味はもちろん最高なんですが見た目もとても華やかなので
大切な人の誕生日や、おもてなし、ホームパーティーなんかで出したら
きっと喜んで頂けると思いますよ♪
時間は少しかかりますが作ってみると意外と簡単なので
お寿司屋さんにも負けない本当に美味しいちらし寿司を
是非、ご家庭で作ってみて下さい。
[Ingredients]
● Rice: 3 cups
● Sushi vinegar: about 90ml (add more as you go)
● Snow peas
● 4 eggs
● Sugar: 1 teaspoon
● Salt: 1/2 teaspoon
● Prawns: as much as you like
● Kamaboko (Fish cake): as much as you like
● Salmon roe: As much as you like
● Sakura-denbu: As much as you like
[Chirashi Sushi Ingredients]
● Carrot: 1
● Dried shiitake mushrooms: 5
● Dried shiitake mushroom broth: 300ml
● Soy sauce: 2 tablespoons
● Mirin: 2 tablespoons
● Noodle soup (4 times concentrated) (agou-dashi, katsuo-dashi): 1/2 tablespoons
● Brown sugar (regular sugar is also fine): 2 tablespoons
[Vinegared lotus root]
● Lotus root
● Vinegar: 150ml
● Water: 100ml
● Japanese soup stock: 4g
● Takanotsume (red pepper) to taste
● Brown sugar (regular sugar is also fine): 3 tablespoons
● Dried kelp
● Salt: 1 teaspoon

As it was the Girls' Festival, I made an excellent Chirashi-sushi this time.
The key to the flavor of this dish, the dried shiitake mushroom broth,
is simply amazing, and the rice mixture made with the broth is truly
the best in the world.
Compared to the usual simple recipes, each one requires a little more
time and effort, but the synergistic effect of combining various
ingredients is unbelievable.
This time, I made it for the Girl's Festival, and of course it tastes
great, but it also looks gorgeous.
I'm sure you'll be very happy if you serve it for your loved one's
birthday, for entertaining, or for a home party ♪
It takes a little time to make, but it is surprisingly easy to make.

Naked Cake is perfect one for baking with kids. Easy-peasy, but looks gorgeous! Our 4-yo son and I baked a naked cake with cream and berries for daddy's birthday!

Birthday cake with cream and berries
Original recipe by Nordic Bakery Cookbook (see the link below)
(We arranged a bit from original recipe. Use 3 eggs for a 18cm tin. Measure other ingredient with glasses like in the video. If you use normal flour, you can put extra baking powder. We use orange juice + maple syrup, instead apple juice. Baking time can vary depends on tins size. 18cm➡︎25~30min)
2 loose-bottomed cake tins.
26 cm in diameter, greased
Serves 8-10
Cake
4 eggs, at room temperature
225g caster sugar
1 teaspoon baking powder
170g self-rising flour
Filling
500 ml whipping cream
Vanilla sugar or icing sugar to taste and for dusting (optional)
300ml apple juice
your choice of fruit (e.g. strawberries, blueberries, blackberries, sliced bananas, chopped kiwi fruit, tinned pineapple pieces)
Preheat the oven to 200°C (400°F) Gas 6.
Put the eggs and sugar in a large mixing bowl and whisk with a handheld electric whisk until the mixture is foam-like – this will take unt 10 minutes. When it is ready, it will be almost white, have doubled in size and the batter will drop off the beaters in a figure-of-eight when you lift them out of the bowl.
In a separate bowl, sift the baking powder and flour together, then fold into the egg mixture as gently and briefly as possible – do not overwork the mixture otherwise it will lose its fluffiness.
Divide the mixture between the prepared cake tins. Bake in the preheated oven for 35-40 minutes, until the cakes are golden brown and a skewer inserted into the centre of each comes out clean. Leave to cool while you make the filling.
Whip the cream until soft peaks form. Add vanilla sugar or icing sugar to taste, if you like.
Remove the cooled cakes from their tins. Cut each one horizontally through the middle to make two equal layers. Lay one layer on a cake stand. Sprinkle one-quarter of the apple juice evenly over the cake layer to moisten it. Spread one-quarter of the whipped cream over it, followed by one-quarter of your choice of fruit. Repeat this process four times, finishing with a decorative assortment of fruit on top. Dust lightly with vanilla sugar or icing sugar and serve.

Used Half the food colouring than other recipes and No cocoa powder added in my Red Velvet Cake recipe. I know you will ask why?
because cocoa powder makes the red colour dark maroon so you end up adding a ton of food colour, It also gives brown patches.
We eat chocolate cake, we eat vanilla cake, the main point of making Red velvet cake is the beautiful Red colour of this cake And I want my red velvet cake to be smooth ruby red without extra food colouring.
So I made the base cake vanilla instead of chocolate cake.
I've tried both and I prefer this way. The colour is way more vibrant.
My amazing cream cheese frosting recipe is enough to bring out the flavour.
If you still want the chocolate flavour then add a little bit of chocolate essence. Try this new recipe for a soft moist great tasting vibrant red velvet cake on this Christmas.

Ingredients:
1 3/4 cups (200g)all-purpose flour
3 Tbsp(25g) cornstarch
1 Tsp (5g) baking soda
1/2 Tsp (3g) salt
3/4 cup (180g) sugar
4 medium eggs
3/4 cup (160g) oil (sunflower, canola)
2tbsp (30g) lemon juice
2 tsp (10g) vanilla extract
1/2 cup (100g) milk, room temperature
1- 2 Tsp red food colouring oil base(or as needed)
Cream Cheese Frosting
350g cream cheese, cold
160g butter, room temperature
1 tsp (5g) vanilla extract
1 3/4 cup (215g) powdered sugar (sifted)
For glaze
whipped cream 200g (3/4cup)
icing sugar (10g )2 tbsp
1. Preheat oven to (150C)300F. Line two 7" round cake pans with parchment paper.
2. In a large bowl sift together the flour, baking soda and cornstarch whisk and sift to combine very well. (important)
3. In another bowl mix eggs with sugar, salt until frothy and pale then Mix in, vanilla extract, oil, then milk. Place the bowl over another bowl of hot water until the mixture reaches 39°C.
4.Incorporate flour mixture in three addition. Make sure not to over mix.
5. Gradually add red food colouring until the desired colour is reached.
6. Pour the batter evenly into the parchment paper-lined pans.
7. Bake for about 40 minutes until a toothpick inserted into the centre comes out clean.
8. Let pans cool on a cooling rack for 10 minutes.
9. Remove the cakes from the pan and let them cool completely.
10. Prepare the frosting.
In a bowl add cold cream cheese, room temperature butter vanilla essence and sifted powdered sugar. Beat until smooth and fluffy.
11. Assemble the cake. Cut the tops of the cakes to create flat surfaces if needed.
12. Place 1 cake layer on your serving plate. Spread evenly with 1/4" of frosting. Add the second layer of cake. spread a thin layer frosting on top and sides of the cake to seal the crumbs then refrigerate to firm up about 30 mins.
13. gradually spread rest of the frosting and smooth out the surface as neatly as possible. then refrigerate again.
14. beat whipped cream and icing sugar around 50%. slowly pour on top till drips from the side. you can keep it dripped halfway or cover the whole cake.
The cake is ready to serve.
15. The leftover frosted cake can be covered and refrigerated for up to a week.
