我在高雄中學和一些學弟妹分享我的生活
我說要把握時間 活在當下
也說要無愧於心 逐己所愛

我告訴其中一部分的音樂班同學
喜歡主修樂器的話請繼續享受 努力
根本不喜歡音樂的話
現在掉頭才不會誤了剩下的青春

我相信學弟妹都有認真聽我的分享
才會在結束後提出對我的問題
而且有好幾個人提出類似的問題
令我錯愕又不捨的問題
「是不是因為學長的職業是牙醫師 收入不錯所以才能追逐自己的興趣?」
在他們的教育和認知中 收入竟優先於興趣

感謝學弟在提問的時候有強調『提問時沒有冒犯的意思』 而不是酸溜溜的質疑
我執著於這個問題一週之久
然後請老師幫我向學弟妹轉達以下幾點:

1.我看過很多快樂的人 成功的人 都是追求自己熱愛的事物 發光發熱 同時藉此賺取生活費 因應社會 該職業的社經地位 也許高 也許低 但都是滿足快樂的�.
2.高收入的人不在少數 就以牙醫為例 難道是所有牙醫都有追求自己喜歡的事物嗎?都幸福美滿?身體健康?我想告訴你們的是:我從興趣中找到快樂和滿足 所以分享給你們 若非為了向升學關口的你們分享職業特色 我根本懶得提牙醫這塊 因為那不是我熱衷的事情 應該由熱衷於牙科治療的誰向你們口沫橫飛地說�.
3.錢是我們生活中的一部分 就只是一小部分 不是全部 也不是必要的 我們一定比上不足比下有餘 我個人喜歡往下比 因為更容易讓我感到滿足 往上比的話我可真窮 買不起豪宅 沒有跑車 遊艇 也不能任性地說不上班就不上班 說買奢侈品就買奢侈品
如果我們的水很多 可能可以裝滿大碗公 如果我們的水很少 可以換成一個瘦瘦高高的玻璃杯 也可以有一樣的水位高度 那代表著快樂和滿足的程度 在自己的能力範圍 盡該盡的責任 享受能夠享受的舒適 公寓 大樓 豪宅 別墅 各有合適的住客 然而都是一個安全舒服的家�.
最後要提 如果你的夢想是搭豪華郵輪 除了先攢足船票的錢 也可以應徵船上服務生的工作
又例如我大學的時候沒錢學馬術 我願意刷馬 掃馬廄一個下午 換得半小時的騎乘機會

I was in my alma mater, Kaohsiung Senior High School, to give a speech to the students.
I shared with them my philosophy of life and suggest them follow their hearts, live in the present moment, do not regret.
.
I told students who majored in music, to keep enjoy in music and to work hard with their beloved musical instrument, but be brave to quit if this was not what they did enjoy in. Maybe they were forced by the society, parents or anything. Now is the most early time to save the rest of theirs youth from such a burden.
.
I knew they did listen carefully, that’s why they asked me some questions.
Many of them got the same question, which made me astonished and a bit sad,
“Do you think being a dentist with high income is the key enabling you to be engaged in your hobbies?”
Does this question mean they believe one’s income is more important than what one is interested in?
.
I cared about this question so much for one week after the speech.
And I asked their teacher to pass on to the cute and young, and maybe perplexed, students as following,
.
1.I’ve seen many people who are happy and successful. They are devoted to what they love and get money for living from it. He or she might be rich or poor, upper class or lower class, depending on the definition of the society, but their contentment and joy cannot be defined�.
2. There are a lot of people with high income. Take dentists as an example, is every dentist looking for what he loves? Or happy? Healthy? I find my happiness from my hobbies, that’s why I share this with you. Dentistry should be shared by some dentist who are enthusiastic about dentistry, not me. I shared my occupation to you only because you are facing the college entrance timing.�.
3. Money is a part of our lives, a little part of our lives. Not the whole life, and not necessary either. We are richer than many people, and at the same time, poorer than many people. I would rather compare myself with those poorer than me, because that makes me feel better, and feeling is the most important thing for a person. When I compare myself with those rich men, I am nothing, I can’t afford a villa, a personal airplane, a yacht.
If we have a lot of water, we can fill a big pot. If we have little water, we can fill a thin glass and reach the same height of water level, which represents the degree of contentment.
Make clear who we are, and take our responsibility, and enjoy what we deserve.
There are different people for different places, apartments, condominium, mansion, villa, however, the common point of them are being a nice and safe cozy home.

If you want to get on a cruise ship, you can earn enough money for the ticket or get the job as a waiter on the ship.
When I couldn’t afford the fee for equestrian class, I worked in the stable and took care of the horses for an afternoon to get the chance to ride the horse for half an hour

In a yoga philosophy class last month, Dr. Ganesh from India beautifully explained the difference between DETACHMENT and IGNORANCE or CARELESSNESS👇🏽⠀

The question was: When a person we really care for is suffering emotionally or physically, how is it possible to care for them without suffering with them? ⠀
E.g. a family member is going through depression or a loss (or going through hell because of you know what - i'm sick of talking about it 😷🙊) . Are you likely to get depressed, anxious and sad too? 🤯⠀

While showing compassion is very important, it doesn’t mean we have to suffer through the same pain! 🙌🏽⠀
E.g. When you try to rescue someone from drowning, are you drowning yourself doing it?🙄⠀
By ensuring that YOU can swim before helping anyone, you have a way bigger chance of rescuing the person!⠀

本週連續幾天參加了一些餐會,其中最幸運的是去 Supu Ramen avec Guy Savoy 時,竟然在試吃完拉麵後被招待去品嚐了 Guy Savoy 三星餐廳的甜點。
拉麵與壽司在巴黎很流行不是新聞,但在巴黎有三星餐廳、紐約有二星餐廳,甚至訓練出 Gordon Ramsay 的傳奇主廚 Guy Savoy 竟然在自己旗下另外一家餐廳「Les Bouquinistes」結束營業後,改成賣拉麵就是新聞。不過這並不是本文的重點,週四我原本是去參加 Supu Ramen avec Guy Savoy 的工作坊,但沒想到 Guy Savoy 主廚得知我們一行人來訪,便非常親切地說要招待我們去他同一條街上的三星餐廳吃甜點。要知道 Guy Savoy 連午間套餐都要 €250(不含酒水),平常沒事是沒什麼機會可以去的,而且還是主廚本人親自邀請,用千載難逢來形容都不為過。
我們被安排在餐廳最裡面的包廂,外面就是塞納河的秋日風景。當天很難得地出了太陽,整個包廂被黃葉映染、美不勝收。Guy Savoy 主廚隨後出現,很親切地歡迎我們。本來還在想主廚毫無架子,但當他說出會先招待我們他招牌的朝鮮薊黑松露濃湯(Soupe d’artichaut à la truffe noire)搭配塗了黑松露奶油的酥皮蘑菇布里歐許麵包(brioche feuilletée aux champignons et beurre de truffe)、然後會讓我們品嚐各種餐後甜點(搭配酒)的時候,在場所有人都為他的慷慨和自己的幸運感到驚奇、甚至有些說不出話。
在湯與布里歐許麵包之後,依照一般上菜順序上來了前甜點(pré-dessert)與兩輪的甜點(請直接點圖依序欣賞),每一樣都以完美的平衡擄獲了大家的心。正當我們以為幸福已經到達頂峰的時候,侍者竟然來提醒我們還沒結束,後面還有「一整車」的雪酪、冰淇淋、米布丁、花式小點(mignardise)等可自由選擇、與咖啡或茶搭配。在我們驚嘆連連、最後也實在吃不下的過程中,Guy Savoy 主廚與他的助理多次過來關心狀況、並與我們親切閒聊。那天因為當場太震撼、甜點也上得很快,有些沒有品嚐到、有些來不及記下,照片中的甜點元素組成,都得感謝主廚的助理 Carine Polito 女士的協助,不然我也無法精確地傳達這些作品的細緻之處。其實這是整個體驗中最讓我印象之處,餐廳與甜點作品本身的風格真切地反映了主廚的個性,能夠讓人感受到深厚功力、沈穩但毫不做作。雖然是三星餐廳,但卻沒有任何拘謹的距離感,可以感受到主廚本人希望藉著美食讓更多人感到幸福的信念。
當天餐會結束之後走出 Guy Savoy 大門,持續陰雨的巴黎因為短暫放晴,竟然在塞納河岸出現彩虹,真的是從頭到尾都很完美的一天呢!

Got invited for several tasting events this week, and the most memorable one is for sure the unexpected visit to restaurant Guy Savoy. Initially we were participating a workshop at Supu Ramen avec Guy Savoy, a new ramen restaurant of the brand transformed from “Les Bouqunistes”, but the chef Guy Savoy was so kind that he would like to say hi in person and let us taste the desserts at his Michelin 3-starred restaurant.
All of us actually got really thrilled as visiting a Michelin 3-starred restaurant is not a casual thing and being salué and invited by the legendary chef is a one-of-a-kind experience for sure.
We sat in a room situating with a gorgeous view at the bottom of the restaurant and received a very warm welcome by the staff and the chef. As we already got surprised by the chef’s friendliness, what he said later on further stunned us. We were told that we would be served with the restaurant's signature entrée, the artichoke soup with black truffle that comes with a layered mushroom brioche with truffle butter, followed by a series of desserts and wine pairings. I believe all of us got speechless by the generosity of the chef and our good luck for a moment.
After the amazing soup and brioche (the best I’ve ever tasted!), came the pré-dessert and two-rounds of plated dessert (check the photos for details). Everything was made of a perfect balance among different textures and tastes. As we thought we’ve reached the peak of happiness and that was probably the end of this whole incredible experience, the waiter informed us that it wasn’t finishing yet as a dessert trolley would come after this and we could choose what we’d like to taste among the rice puddings, sorbets, ice-creams, and mignardises that go with our coffee or tea. We were wowed so many times during that 1 and half hours that it was very difficult to note down what exactly have we tasted. Mme. Carine Polito helped me to distinguish the components of each dessert so that I could share this post with you all.
Everything that we’ve tasted that day was exceptionally good but the most remarkable thing to me is probably the friendliness of the chef. His warm hospitality and charm are well-reflected in the dishes served. Those desserts are undoubtedly made with a brilliant talent, top quality and skills, but they’re never pretentious and distant, just as himself. Taste them and you’ll realise without any difficulty the chef’s philosophy to make people happy with great food.
There was sun shining on the Seine river with a rainbow in the sky when we went out of the restaurant. It was for sure one of most wonderful days I’ve had recently.
