很多人都寫巴斯克乳酪蛋糕
今天就趁著情人節
來分享這個低碳減糖的巴斯克乳酪蛋糕食譜~
吃起來就跟一般的起司蛋糕一模一樣啊!
選用了低脂奶油乳酪
和杏仁粉取代麵粉
减少了脂肪與碳水
熱量也少了很多!
能夠享受乳酪蛋糕的美味
做法又超快速
做成迷你版的可愛
也好控制熱量
一次一個不暴衝
重點是做法超簡單
新手友善,真的超快速!
零失敗攪一攪就行!
要做生日蛋糕或情人節蛋糕的
就放到模具裡面
但是材料要多一倍才夠放滿六寸喔!

材料:
130克軟化過的低脂奶油乳酪
70克打發淡奶油
兩顆蛋
25克(零卡代糖)阿洛酮糖或赤藻糖醇
6公克的杏仁粉
加四分之一顆檸檬汁更棒
作法:
1⃣️奶油乳酪先軟化
2⃣️把食材全部放到食物調理機
3⃣️攪打均勻後過篩,口感才會更細緻
4⃣️拿出模具放上烘焙紙
5⃣️倒入蛋糕糊
6⃣️放到烤箱220度20~25分鐘,完成!
7⃣️放涼之後冷藏一個晚上,就可以享用了
切開裡面是漂亮的淺金黃色澤
超香超濃郁的乳酪味
我都會一次做好冷凍保存
就變成了巴斯克乳酪蛋糕冰淇淋
超級好吃~~~

🧀️Keto Mini Basque Cheese Cake
130g low-fat cream cheese
70g light whipped cream
2 eggs
25g allulose
6g almond flour
1/4 lime juice
Mix all the ingredients
Fill cupcake liners with batter
Place the ramekins on a tray and bake for 20-25 minutes
Let it cool down and chill them for at least 4hrs
Then you can enjoy the next day
I love the taste after freeze them :)

前日下午去參加了 The Westin Paris-Vendôme(巴黎威斯汀凡登酒店)甜點主廚 Florence Lesage 的復活節巧克力蛋與春季下午茶作品發表會。雖然新年剛過沒多久,突然發現已經開始發表復活節作品有點反應不過來,但很開心知道春天馬上就要到了。
最近女性議題、女性力量在廚藝界是熱門關鍵字,許多推動重要食物議題的代表性人物都是女性。巴黎的甜點界也沒有置身這個浪潮之外,開始有越來越多女性甜點主廚展露頭角,Florence Lesage 主廚就是其中一位。年僅 25 歲,Florence 在甜點領域擁有多項資格(包括 BEP, Bac Pro, BTM 等),並獲得多項國際比賽大獎,如 Olympiades des Métiers (職業奧林匹克競賽)中獲得法國區域比賽金牌(2014)、全國金牌(2014)、全球銀牌(2015),及 2015 年 Wolrdskills Competition (世界技能競賽)的銀牌。她的糖工藝技術高超,今年更將代表法國參加 MDAS Mondial des Arts Sucrés(全球糖工藝競賽)。
我之前在為商業周刊寫的 2019 耶誕蛋糕專題中曾經介紹過 Florence 主廚的作品「瑪麗安東妮的耶誕」(Le Noël de Marie-Antoinette),細緻柔美、充滿浪漫風格,這其實是我在去年巴黎巧克力大展時看到最喜歡的耶誕蛋糕作品。這次非常幸運能夠和主廚本人見面、品嚐她的甜點,沒想到她也記得我,希望以後有更多機會能夠交流。
Florence 主廚的復活節巧克力蛋作品最令人驚奇的部分,是將其懸吊在巧克力雕塑製成的提燈中。提燈的主體部分由 40% 牛奶巧克力與 64% 黑巧克力製成,巧克力蛋外面以金箔包裹,內部則裝填了黑巧克力與白巧克力搭配帕林內(praliné)夾心的迷你巧克力蛋。春季的下午茶甜點則有五款,包括巧克力修女泡芙(religieuse chcocolat)、香草芒果米布丁(riz au lait vanille-mangue)、厚片開心果餅乾(cookie pistache)、法式布丁塔(flan)、大黃覆盆子塔(tarte rhubarbe framboise)。整體而言非常清爽,但味道都有足夠的深度與層次感。主廚並在我們前面敲碎巧克力蛋與大家一起分享,相關影音請點此欣賞(記得按到最後):https://tinyurl.com/seaq8qu。記得點照片看更多資訊!

Got invited to the discover the Easter egg creation & 2020 spring tea time menu of the chef Florence Lesage the day before yesterday. I was actually very surprised to find out that it seems Spring is coming soon though the new year holidays were not so long time ago.
Female chefs, women power are the keywords recently when talking about food topics. French pastry industry is of no exception. More and more female chefs are making their way to stand out of the crowd. The chef Florence Lesage is one of them. Aged only 25, she is now the head pastry chef of The Westin Paris-Vendôme, boasting several pastry qualifications such as BEP, Bac Pro, BTM, and a dazzling background. Florence was awarded gold medal at the regional and national trials of Olympiades des Métiers in France during 2014 and 2015, she then won the silver medal in the global competition in 2015. She also won the silver medal in the 2015 Wolrdskills Competition that took place in São Paulo, Brazil. This year she is will be representing France in the Mondial des Arts Sucrés ( Sugar Art World Championship).
I’ve briefly talked about her wonderful Yule log creation in my article published on Business Weekly Taiwan last December. The “Noël de Marie-Antoinette” (Christmas of Marie-Antoinette) creation shows a delicate golden candle stand made of almond-orange cake with vanilla mousse and with 6 pink mini candles which are in fact a French mousse cake featuring the combination of marmalade and hazelnut mousse. This sweet and graceful work is actually my favorite among all Yule log creations that were exhibited at the Salon du Chocolat last year. It was really a pleasure that I finally got to meet the chef in person! Really can’t wait to see more of her future creations!
Entirely covered by gold left and filled with black and milk chocolate eggs with hazelnut praliné filling, this chocolate egg is directly attached to the chocolate sculpture shaped as a lantern. The chef demonstrated how it should be broken and shared with the family and friends that day which wowed everyone of us. 週二受邀至巴黎半島酒店品嚐 Dominique Costa 主廚創作的聖誕節蛋糕以及聖誕節下午茶甜點。Dominique 主廚的「Vigne Enchantée」(「魔幻葡萄藤」)聖誕節蛋糕,我之前已經在巴黎巧克力大展時看到、也已分享給大家,當時一直很好奇味道,沒想到最後很幸運地在年末親自品嚐到了。
「魔幻葡萄藤」以歐洲聖誕節必備的熱飲「熱紅酒」(vin chaud / mulled wine)為主題,外觀分成兩部分,上方是巧克力與榛果帕林內做的葡萄藤、下方則是葡萄酒盒造型的法式慕斯蛋糕(entremets),主要結構包括香料蛋糕(pain d’épice)、熱紅酒煮西洋梨(poire au vin chaud)、香草輕奶餡(crémeux vanille)與焦糖杏仁酥脆層(croustillant amande caramélisé)等。最令人感到驚奇的,其實是 Dominique 主廚在創作時為一般消費者設想的貼心,從外觀看來像是很堅硬的巧克力雕塑,其實不管是慕斯蛋糕還是巧克力榛果帕林內葡萄藤都很容易切開,在自家聖誕節餐桌上也可以毫無困難地和大家分享。味道則是超乎想像的輕柔,一點都沒有酒精味,熱紅酒的香氣、西洋梨的圓潤和香料蛋糕帶來的聖誕節氣息交織在一起,能夠為聖誕大餐劃下完美的句點。
Dominique 主廚為半島酒店設計的聖誕節下午茶甜點,則圍繞著秋冬常見的食材與風為主題,如栗子、榛果、巧克力等,熱紅酒與西洋梨的搭配也再次以「迷你巴巴」出場,另外還有熱帶水果搭配米布丁、櫻桃搭配優格的組合。當天幾乎每一樣甜點都非常清爽、完全不膩口,能夠把幾乎所有甜點都有餘力地品嚐一遍,真的很令人開心。

I got invited to taste the 2019 Yule log creation and Christmas tea time pastries of the chef Dominique Costa at The Peninsula Paris the other day. While I was already very interested in the “Vigne Enchantée” (“Enchanted Vine”) yule log since its exhibition earlier at Salon du Chocolat, I felt really lucky to be able to taste it finally at the hotel.
Inspired by the indispensable “vin chaud” (French mulled wine) during the festive season, “Vigne Enchantée” composes of a chocolate sculpture of a grape vine and a mousse cake shaped like a wooden wine box. Consistuting by a crispy layer of caramelised almonds, a gingerbread (pain d’épice), mulled wine poached pears pears, vanilla crémeux, and coated by a thin layer of Dulcey chocolate, the cake is extremely easy to be cut and sliced. The chef has apparently taken into consideration that it’s something to be shared on the Christmas dinner table, so he has put extra efforts in it. Flavour-wise, it is slightly spiced by the ginger bread and full of the sweetness of mulled wine and pears. Amazingly light, it is for sure a true delight to the Christmas dinner.
Patries offered at the Christmas tea time surround popular ingredients of the season, such as chestnuts, nuts, and chocolate. The "mulled wine & pears” combination is highlighted once again and transformed into a mini baba. Other pastries like rice pudding mini tarts and cherry yogurt mousse cakes are very lovely as well. Most of them are very light and refreshing which is a good news for those who would like to have a bite on everything.
This year the Peninsula Paris is collaborating with Citroën for the Christmas celebrations. Displays such as a vintage Citroën, part of the hotel collections, and huge Christmas trees decorated by mini Citroëns are installed at the hotel hall lobby. A mini Christmas market and a pop-up pastry shop are also available to all guests. Mini Gingerbread House Mug Topper Recipe
🎄 Preparation:

➋ piping bags and nozzles, or make a parchment bag for piping, 2mm is for sticking, 1.5mm is for decoration
🎄 Yields: Can make 14~16 gingerbread houses
✎ Ingredients
🎄 For the cookies
unsalted butter 125g, softened
brown sugar 90g
molasses 58g
egg 1, at room temperature
all purpose flour 370g
baking soda 5g
salt 2.5g
grated ginger 10g
ground cinnamon 1.5g
nutmeg powder 1g
🎄 For the Royal Icing
vanilla extract 1.5g
powdered sugar 200g, sifted
powdered egg white 7.5g
warm water 25g~30g
✎ Instructions
🎄 For the cookies
1. In a large bowl, add butter, sugar and molasses, beat on mid-low speed, mix well until light and smooth.
2. Add egg and ginger, beat on medium speed until well combined. Scrape down the sides and the bottom of the bowl and beat again if needed to combine.
3. Sift the flour, baking soda, ground cinnamon, nutmeg powder and salt.
4. Fold in all dry ingredients, continue to mix until well blended, the dough should come together.
5. Transfer the dough out onto a work surface and knead until the dough is smooth and combined. Wrap the dough with plastic wrap and place in the fridge for 1 hour to chill.
6. Preheat the oven to 170°C.
7. Lightly flour the work surface and roll the dough to about 3mm thick.
8. Dust the dough lightly with flour to avoid sticking. Place the house pattern pieces on the dough, dip the knife into flour and cut out the pattern pieces from the dough (cut the door, but remove it after baking). You will need TWO of each shape.
9. Bake at 170°C for 10 minutes or until the edges are just beginning to brown. Large pieces will need more time.
10. Once baked, cut the door first, and then remove all cookies on racks to cool completely.
🎄 For the royal icing
1. Sieve the 200g of powdered sugar and 7.5g of powdered egg white in a bowl.
2. Add 1.5g of vanilla extract and 25g of warm water and beat at medium speed for 5 minutes.
3. Fill the Pastry Bag With Royal Icing. You will need at least two piping bags, one is for a thick line to glue the pieces of house together. Another one is a thin line to decorate the house. The royal icing is the best icing to use for gingerbread houses, it'll dry hard and last throughout the holiday season.
🎄 Assembling
1. Start with the front and the back pieces and two sides, then take the side piece and stick them together, do the same with the other side.
2. Grab the back piece and give it a nice firm. Then the base of the house is done. Wait for the icing sets before adding the roof.
3. Sticking the roof pieces in the same way, add lines of icing on all the edges, hold them together and allow the icing to set. It's probably best to let this dry overnight that way all the royal icing is definitely hard before decorating.
4. You can decorate with any pattern you like and custom detail. You can practice how to draw a line or draw a pattern on a board or plate before putting them on your house. But remember, once finished the decorating, please let the icing dry for a couple hours. Have fun.
