Received a number of messages on FB and IG, requesting me to share some of my #canteenuncle recipes so here's the first one - Lu Rou Fan, or Braised Pork Belly Rice!
Disclaimer: I'm no professional chef, nor a food blogger. Just a regular Dad trying to vary daily recipes for my family while we are all stuck at home for HBL and WFH. My own special ingredient for this dish is I add a little of Caramel Sauce, which improves the taste tremendously. At least that's what my kids tell me. 😁 If you try it, do let me know how it goes! LU ROU FAN (Braised Pork Belly Rice)
INGREDIENTS
- Pork belly (500g, cut into thin pieces)
- 2 teaspoons oil
- 2-3 shallots (finely chopped)
- 2-3 garlic cloves (finely chopped)
- 3 star anise
- 6 cloves
- 1 cinnamon stick
- Hardboiled eggs
SAUCE
- 3 tablespoons light soy sauce
- 2 tablespoons dark soy sauce
- 2 tablespoons caramel sauce
- 1/2 tablespoon Chinese wine
- 2 cups water

Supposed to be in Taiwan eating Lu Rou Fan. But Covid is everywhere, the safest is still home without visitors.. and stubborn people who still goes out to gather w friends. Stewed this overnight. Woke up this morning to a juicy and aromatic flavor frm the kitchen 😋😋😋 Will have this for lunch later 😉 Recipe in the pictures.. Have fun cooking and eating yea.. Don’t step on the weighing machine until MCO ends ok.. Food is my current source of motivation to keep going 💯💪🏻😹

One of our favorite things to eat when we visit Taiwan, they serve them in small little bowls and you get to a Lu Dan (braised egg) or a sunny side up along with it. We recreated ours with one aim, which is when you taste it, your lips will somewhat get coated with a natural lip gloss from the collagen that is rendered from the pork skin and pork belly into the sauce.
Instead of a Lu Dan (braised egg) we decide to pair ours with a ramen / candied heart egg.When cooked with the right timing, when you break into the egg the runny yolk combines with the Lu Rou and steam rice it’s just too much! The Ramen eggs pair well with other dishes too, who can resist the bite of a flavorful runny egg..

2人分
材料:
豚バラ肉ブロック 200g
玉ねぎ(みじん切り) 1/2個
しいたけ(みじん切り) 2個
ゆで卵 2個
生姜(みじん切り) 1片
にんにく(みじん切り) 1片
八角 1個
水 250ml
砂糖 大さじ2
酒 大さじ2
しょうゆ 大さじ2
酢 大さじ2
オイスターソース 大さじ1
ごま油 大さじ1
チンゲン菜(茹でる) 適量
ごはん 適量
作り方:
1. 豚バラ肉は1cmの角切りにする。
2. 鍋にごま油を引いて弱火で熱し、生姜、にんにくを加えたら香りが出るまで炒める。
3. 玉ねぎを加えて炒め、玉ねぎが透き通ってきたら豚バラ肉を加え、肉の色が変わるまで炒める。
4. しいたけと八角を加え、軽く炒めたら、水、砂糖、しょうゆ、酒、酢、オイスターソースを加え、ひと煮立ちさせる。
5. ゆで卵を加え、弱火で30分ほど煮込む。
6. 器にごはんを盛って(5)をのせ、チンゲン菜とゆで卵を添えたら、完成!

(English Recipe)
Lu Rou Fan
Servings: 2
INGREDIENTS
200 grams pork belly
1 tablespoon sesame oil
1 teaspoon chopped ginger
1 teaspoon chopped garlic
½ medium white onion, chopped
2 shiitake mushrooms, chopped
1 star anise pod
250 milliliters water
2 tablespoons sugar
2 tablespoons sake
2 tablespoons vinegar
2 tablespoons soy sauce
1 tablespoon oyster sauce
2 hard-boiled eggs, peeled
Cooked white rice, for serving
Steamed bok choy, for serving
PREPARATION
Dice the pork belly.
Heat the sesame oil in a medium pot over low heat. Add the ginger and garlic and cook until fragrant, 1-2 minutes.
Add the onion and cook until translucent, about 5 minutes. Add the pork belly and cook until it starts to brown, about more 5 minutes.
Add the shiitake mushrooms and star anise pod and stir. Add the water, sugar, sake, vinegar, soy sauce, and oyster sauce, stir well, and bring to a boil.
Add the boiled eggs, turn to coat in the sauce, and simmer uncovered for 30 minutes.
Serve over rice with bok choy and halved boiled eggs.
