【匈牙利窮食之旅】

雖說我這個窮家女孩去旅行什麼都要「慳住使」,但作為一個為食之人,看到想吃的東西都會按捺不住,心想:「下次都不知何時有機會再來,今日不吃,更待何時?!」不過,吃都要吃得抵!還要適合我這個肚窄眼闊之人,不能浪費呀~
匈牙利除了夜生活精彩外,他們的食物也不能錯過,以下便是小妹以一人之胃品嚐過的道地美食,若果你有機會遊到此地也可一試啊~
1. Májas Hurka – Liver sausage
照英文的解釋就是「肝香腸」,查實是以豬肝,肉類和大米作餡料製作而成的香腸。因為有大米的關係,再加上比較膩的肝臟,吃一條已經好飽。對於女生來說,還想吃其他的東西都是跟別人分享好了。值得一提的是,Budapest的Central Market有很多的店舖都有售賣,生的熟的都有,而且是以重量計算價錢,也不會太昂貴!
2. Lángos
這個時必吃的東西!而且要在Central Market的某一檔吃,還要選舉以Sour Cream加Cheese作Toppings!簡單來說不過是油炸麵團上加材料令味道更豐富和肥膩,對,這是一份很邪惡的美食。但好味的東西從來都不會是健康,管他吧!它的份量也不少,也是最好兩人一份。
3. Töltött káposzta – Stuffed Cabbage
正確點說它不是傳統的匈牙利菜,而是起源於土耳其。可以曾經被其統治過,所以食物上都會充滿著土耳其色彩。特別的是,每個巴爾幹半島的國家都會就自己的菜才是最傳統,最歷史悠久。誰對誰錯先不要理,要知道的是無論在哪個國家吃這個菜,也有不同的口味。雖然都不過是由熟白菜的葉子包裹各種餡料的一味菜,多數為牛肉,羊肉或豬肉。
4. Hungarian Hot Dog
跟朋友提起要去匈牙利,他就跟我說一定要吃Hungarian Hot Dog,可惜我就忘了問為何一定要吃。吃過之後確實覺得它的香腸做得很「脆皮」,同樣也是很大份...但最愛裡頭的醬汁,有點香辣的很惹味!
5. (炸豬皮)?
不太記得它叫什麼名字,只知道賣肉的地方總會看到它。一時好奇下問了店主是何方神聖,誰知他就遞了幾塊給我試,有點像炸魚皮的感覺。細問下應該是豬肉的皮脂炸成的小吃吧,用來佐酒也不錯。
6. Ice Cream
下?這個會不會太不特別?不會!匈牙利的雪糕口味多的是,每上吃上一杯也嚐不完所有味道!而我手上的口味就是罌栗味!你沒有看錯,當真是鴉片罌粟的罌栗味!看到當然要試一試鴉片是什麼味道啦,說真的,它的口感有點先像黑芝麻粉,味道嘛,有點像Cookie and Cream...也是值得一試的,而且匈牙利雪糕超平的說!
7. Waffle
說真的,這不是匈牙利名物,只是行過看到突然思鄉想吃,哈哈。但它的Topping選舉蠻真多!而且可以雙味一起來,我就選舉了胡桃和合桃味。可以兩者都是堅果類,味道也差不多,卻很濃味,絕不是平價貨!你們有緣看到的也可一試~
8. 酥皮包
哇哇哇!這個超級好味!位於Central Market對出的一間麵包鋪,有著各式各樣的麵包,聽聞當中最有名氣的便是酥皮包,不同的餡料熱烘烘的上枱,超鬆脆的酥皮不在話下,裡頭的餡也惹味非常,價錢也相當便宜呢!喜歡吃麵包的你千萬不要錯過呀!
其實匈牙利還有很多好味的小食和主食,想來個美食之旅,這裡也是一個好主意!重要的是這裡消費都很便宜~

We are making Pho, a much-beloved Vietnamese soup. Using chicken wings and aromatic vegetables, we'll make a delicious soup quickly and easily. This soup is lightly seasoned but exceptionally tasty. It goes well with the flat rice noodles, and it is very delicious!
How to Make Chicken Pho

(serves 2) Cook Time: 50 minutes
[Broth]
800ml Water (3.38 cups)
3 Chicken Wings
1 Chicken Thigh, trim off the excess fat, net weight 240g/8.5 oz
3 slices Ginger Root
3 Garlic Cloves
1/2 Onion, cut into 1 cm slices across the grain
Coriander Roots, or coriander stalks
1 sheet Dashi Kombu Seaweed, 10x5cm/3.9x2 inches
2 tbsp Sake
1 tsp Chicken Stock Powder (Granulated)
1 tbsp Nuoc Mam, Vietnamese pungent sauce made from fermented fish, substitute: nam pla (Thai fish sauce)
1 tsp Salt
[Noodles]
150-200g Dried Rice Noodles (5.3-7.1 oz)
[Toppings]
1/4 Red Onion, sliced

美味しくにんじんを食べる4種の方法をご紹介します!

にんじんドッグ
材料:
6人分
野菜ダシ 240ml
リンゴ酢 60 ml
醤油 大さじ2
メープルシロップ 小さじ1
燻煙液 小さじ½
マスタードパウダー 小さじ2
パプリカパウダー 大さじ1
コリアンダーパウダー 小さじ½
ガーリックパウダー 小さじ½
ブラックペッパー(挽いたもの) 小さじ1
にんじん 6本(洗って皮を剥いておく。グリルする場合は下茹でしておく)
オリーブオイル 大さじ1(にんじんをグリルするため)
ホットドッグパン 6本
トッピング
クラシック
甘酢漬け野菜
イエローマスタード
ケチャップ
赤玉ねぎ(みじん切り)
チリ
ベジタリアン・チリ(肉を使わないチリ・ビーンズ)
チェダーチーズ(ピザ用)
コリアンダー(みじん切り)
青椒肉絲風
飴色に煮詰めた玉ねぎ 40g
ピーマン
パセリ(みじん切り)
メキシカン
黒豆
とうもろこし
サルサソース
コリアンダー(みじん切り)
作り方
中くらいのボウルに、野菜ダシ、リンゴ酢、醤油、メープルシロップ、煤煙液、マスタードパウダー、パプリカパウダー、コリアンダーパウダー、ブラックペッパーを入れて混ぜる。
にんじんを耐熱皿に並べ、上から(1)を注ぎ、30分以上浸けておく。
オーブンを220℃に予熱しておく。
オーブンで焼く場合は、耐熱皿をアルミフォイルで多い、40分オーブンで焼いてから、アルミフォイルを外してさらに25分、にんじんがナイフで簡単に切れるほどやわらかくなるまで焼く。
グリルする場合は、オリーブオイルをフライパンで熱して、浸けておいたにんじんを、漬け汁をスプーンでかけながら焼く。少し焦げ目が付くまで、両面2分ずつ焼く。
(4)あるいは(5)で調理したにんじんを、ホットドッグパンに挟む。
お好きなトッピングをのせて完成!

1 cup vegetable broth(240 mL)
¼ cup apple cider vinegar(60 mL)
2 tablespoons soy sauce
1 teaspoon maple syrup
½ teaspoon liquid smoke
2 teaspoons mustard powder
1 tablespoon paprika
½ teaspoon ground coriander
½ teaspoon garlic powder
1 teaspoon ground black pepper
6 carrots, washed and peeled (and boiled, if grilling)
1 tablespoon olive oil, for grilling
6 hot dog buns
TOPPINGS
CLASSIC
relish
yellow mustard
ketchup
red onion, chopped
CHILI
vegetarian chili
shredded cheddar cheese
fresh cilantro, chopped
ONIONS & PEPPERS
¼ cup caramelized onions(40 g)
green pepper
fresh parsley, chopped
SOUTHWESTERN
black bean
corn
salsa
fresh cilantro, chopped
Preparation
In a medium bowl, combine the vegetable broth, apple cider, soy sauce, maple syrup, liquid smoke, mustard powder, paprika, ground coriander, garlic powder, and pepper.
Place the carrots into a baking dish and pour the marinade on top. Let marinate for at least 30 minutes.
Preheat the oven to 425°F (220˚C).
If baking, cover the baking dish with aluminum foil and bake for about 40 minutes. Remove the foil and bake for another 25 minutes, until the carrots are just tender enough to be poked with a knife.
If grilling, heat the olive oil on a grill pan on high heat. Add the marinated carrots to the pan and spoon a bit of the marinade over. Cook for about 2 minutes on each side, until slightly charred.
Place the carrots in buns and add your desired toppings.

1/2 tbsp Ginger Root, chopped
Sesame Oil
Vegetable Oil
- Sauce -
1 tsp Oyster Sauce
1 tsp Soy Sauce
1 tsp Sake
2 tbsp Chicken Stock, 1 tsp chicken stock powder + 2 tbsp hot water
Pepper
- Toppings -
Beni Shoga, pickled ginger, optional
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
