Servings; 4-5 persons
Ingredients:
1 kg Chicken cut into 4-5cm pieces
50-100gm Meat Curry Powder
20-30gm Chili Powder (optional. I didn't put this in though)
3cm Ginger
8 cloves of Garlic
420gm of Water
1 medium size Tomato
2 medium size potato cut into 2cm cubes
Curry leaves (I took 2 fresh swigs off the garden)
50gm Cooking Oil (I used olive oil)
1 Cinnamon Stick
5 Cloves
5 Cardamom Seeds
1 tsp Fennel Seeds
1 Large Red Onion Sliced
Tamarind (I used asam keping 2 pcs)
Preparation:
1. Weigh in the chicken. Marinade with curry powder and salt (1 hour min)
2. Blend Ginger, Garlic and 20gm of water 10s/ Sp10
3. Add into bowl all spices, curry leaves, onions and oil. 8mins/ 120c/ Sp Reverse Spoon
4. Add marinated chicken with curry powder segala masuk. Add 400gm water. 10mins/ 100c/ Reverse Spoon
5. Add tomatoes, asam keping and seasoning (I used 1 tsp of homemade chicken stock and 1 tsp of homemade mushroom stock) 4 mins / 100c/ Reverse Spoon
I used a blade cover, only to realise tak payah. But my ayam look so perfect. hahahaha!

First time dabbing the taste buds with Sri Lankan Curry & Rice combinations by new food delivery concept @cocolombobkk, which is actually a spin off, developed by the @ministryofcrab.bkk people, meaning... They pretty well know their shhhtuff.
We loved how the meals came bundled up in thick banana leaves and natural rope keeping all that heat and juicines bound together. The reveal is the most astonishing part for those unfamiliar with this cuisine. Colours and fragrances just burst onto the scene. We tried the Mutton; thick curry marinated in spices, sauteed with lemongrass, onion garlic and tomato & slow cooked for two hours, and the Mango curry. A Sweet, sour, & tangy melody. made using raw mango, chili, curry powder, caramelized with jaggery.
The meals are accompanied with wafer thin and crisp pappadums and surrounding s bed of Thai Jasmine rice are an all-sort of exotic sides and spiced condiments; Coconut Dahl, Brinjal Moju (eggplant) , Cucumber Salad, 3 Sambols (Luna Miris, Seeni, Pol), Okura and Kottu Roti. It's seriously an assault in the mouth and for some, may repeat in the stomach but it's absolutely worth it. Ideal for sharing with friends as they are certainly hearty in size and for the price appropriate. Don't forget to cool down your tongue with the Banana bondis🍌🍌🍌 or Banana piyos in Sinhalese.
Highly satisfying, if simple, this dessert is drenched in palm treacle and topped with salted caramel. Mmmmmm! Why not take it up a notch, heat them up, add a scoop of vanilla ice cream and a dash of cinnamon! #cocolombobkk

Vegan and packed with protein, this Spiced Black Chickpeas by @beyond_the_pill is bursting with flavors! Black chickpeas have higher fiber content compared to white chickpeas, and they also have low GI. It’s such an exciting #meatless meal! 🌱
Ingredients
2 cups black gram or chana
2 medium onions, finely chopped
4-5 cloves garlic, finely chopped
3-4 green chilies, chopped
3-4 tbsp gram flour (besan)
1 tsp whole cumin seeds
1 tsp coriander cumin powder
8-10 curry leaves (I didn’t find it so didn’t add any, but makes a great addition)
1 tsp chili powder
1 tsp turmeric powder
2 tbsp tamarind chutney
3-4 tbsp oil
Salt to taste
1/4cup fresh chopped mint leaves
½ cup fresh chopped cilantro leaves
Lemon wedges for garnish
Method
Wash and soak black chickpeas for 3-4 hours or overnight.
Pressure cook the beans for 30 minutes in 6 cups of water and some salt.
In a large pot, on medium heat, add oil. Add in cumin seeds, then finely chopped garlic and onion and sauté until golden.
Add in all dry spices except gram flour. Mix well.
Add in gram flour and quickly mix so it does not burn. Next, add black chickpeas and mix well.
Stir in tamarind chutney and add boiled potatoes. Add fresh mint and cilantro leaves if you like.
Let it cook on low heat until gravy thickens.
Ready to serve. Enjoy it with rice or with some chips!

Created an ultra-simple curry set that can be eaten both vegan and milk vegan!
Curry ingredients:
One Thousand and One Nights Spices, cinnamon, bay leaf, black pepper, turmeric, cumin, red pepper powder, southern ginger, purple onion, diced tomato, vegetable oil, Coppola lentils (replace any beans you like)
naan:
All-purpose flour, water, salt
Final embellishment:
Yogurt (can be added or not), thyme, saffron

ひよこ豆カレー
4人分
材料:
サラダ油 大さじ2
玉ねぎ(中玉) 1個、角切り
にんにく 4片、みじん切り
カレーパウダー 小さじ4
パプリカパウダー 小さじ1 ½
カイエンペッパー 小さじ1
クミンパウダー 小さじ2
オールスパイス 小さじ½
しょうがのすりおろし 小さじ2
塩 小さじ2
黒こしょう 小さじ½
じゃがいも 900g、皮をむいて角切り
ひよこ豆 1缶(425g)、水を切っておく
野菜スープ 240ml
レモン汁 大さじ1
トマト缶(ダイス) 1缶(340g)
ココナツミルク 1缶(415ml)
ご飯、炊いておく
ナン
コリアンダー(飾り用)、刻んでおく
作り方:
1.中火にかけた大きい鍋で油を熱する。玉ねぎを入れて、透明になるまで、約3分炒める。
2.にんにくを加えて、香りが立つまで、約2分炒める。
3.カレーパウダー、パプリカパウダー、カイエンペッパー、クミン、オールスパイス、しょうが、塩、こしょうを加える。スパイスの香りが出てくるまで、混ぜながら約2分炒める。
4.じゃがいもを加えて、スパイスが満遍なく絡むまで、よく混ぜる。
5.ひよこ豆も加えて、よく混ぜる。
6.野菜スープ、レモン汁、トマト缶を加え混ぜ、そこにココナツミルクを注いでかき混ぜる。
7.火を強火にして、煮る。沸騰し始めたら、火を中火に下げ、じゃがいもがフォークで簡単に崩れるくらいまで、15-20分煮込む。
8.コリアンダーを飾り、ご飯とナンと一緒に召し上がれ!
Easy-Peasy Potato Curry
for 4 servings
Ingredients:
2 tablespoons vegetable oil
1 medium yellow onion, diced
4 cloves garlic, minced
4 teaspoons curry powder
1 ½ teaspoons paprika
1 teaspoon cayenne
2 teaspoons cumin powder
½ teaspoon allspice
2 teaspoons fresh ginger, minced
2 teaspoons salt
½ teaspoon black pepper
2 lb potato(900 g), peeled and cubed
15 oz chickpeas(425 g), 1 can, drained
1 cup vegetable broth(240 mL)
1 tablespoon lemon juice
14 oz diced tomato(400 g), 1 can
14 oz coconut milk(415 mL), 1 can
rice, cooked, for serving
naan bread, for serving
fresh cilantro, chopped, for garnish
Preparation:
1.Heat the oil in a large pot over medium heat until shimmering. Add the onion and saute for about 3 minutes, until translucent.
2.Add the garlic and saute for about 2 minutes, until fragrant.
Add the curry powder, paprika, cayenne, cumin, allspice, ginger, salt, and pepper. Stir and cook for about 2 minutes until the spices are fragrant.
3.Add the potatoes and mix well until well-coated in spices.
4.Add the chickpeas and stir to incorporate.
5.Add the broth, lemon juice, and tomatoes and stir, then pour in the coconut milk and stir to combine.
6.Increase the heat to high and bring the mixture to a simmer. Once bubbling, reduce the heat to medium and cook for 15-20 minutes, until the potatoes are tender and easily pierced with a fork.
7.Serve with cooked rice and naan and garnish with fresh cilantro.
8.Enjoy!
