Highlighted dishes include the French guinea fowl with octopus and caramel jus, hand-cut heritage beef tartare, grand Challans blood duck breast, and a 64 percent chocolate concorde cake infused with whisky.

Although @stkiyoshi looks like he is the real deal Sub Zero character in Mortal Kombat ™️, he isnt shooting out his ice to Snow Age this piece of 栃木県 Tochigi Wagyu Beef, where they do similar techniques in Japan too 🇯🇵🐮. Instead, it is Dry Aging it with a slightly rendered, infused Wagyu Fat coating of its own, slightly porous.
The Fat covering Aging technique is something I have twice eaten recently here at @silencio and also at @skyeparklane , they definitely work much better in taste & also in Science compared to the experimental Butter Coated Dry Aging, or Wet Aging. Versus traditional Hung Dry Aging, it is a deliberate creation, almost like a semi-confit + DA technique..

⛏️🔥 Charcoal Grilled Dry Aged Japanese Wagyu in its own fat, Seasonal Tubers of Gobo Burdock Cream, Summer Truffle, Smashed Potatoes then Caramelized, Black Garlic jus, etc. Topped with just correct judicial Kinome & Pepper.

從前禮頓道那家 le pain grille,新落戶鄰街食廈Cubus。店子依舊可愛,告別法蘭西純白懷舊調子,轉走現代簡約路線:蔓藤牆、花園小陽台、木頁窗、黑花崗巖餐桌,大自然氣息滿溢。木,白sofa,有小小酒吧,very pleasant,大方得體,比以前high class,亦好cozy!舊店食物強差人意,客人十居其九欣賞進餐氣氛。新餐牌銳意革新,不再拘泥傳統法菜,以當下流行歐法式混合菜上陣,頗有驚喜。
情人節當日推出的情人套餐,menu見心思,頭盤同樣是魚,不過,跟情人一人一款魚;鴨肝呢?一個食Terrine,一個食香煎;大家都有帶子,一個是水煮,一個是煎;主菜一個是羊,一個是牛,連甜品都是兩款不同,不單味道好,賣相漂亮。上菜前,還有一杯welcome drink歡迎,離開時候,有兩隻特製的香檳杯作為紀念禮物,$1,680,兩位,超值。
