Had fun with Layla bonding over gardening on Sunday. We planted navy seeds together - hopefully it will start sprouting in the coming weeks. It's always such a joy to experiment new things with her, her response and reaction to new textures and smells is just too cute!
It's definitely a good way to introduce her to the wonders of how plants grow and how food is made. From a small little bean, to a plant and then into Lil Crunchies!
I'm not ashamed to say that I've been stealing Layla's snack since she's still not allowed to have it yet until she turns 1 year old! Haha! I personally prefer the White Cheddar Broccoli. It's so tasty and flavourful, yet feels light and healthy! They are baked with real navy beans, so it contains 2g of protein per serving! No preservatives, artificial flavours or colourings, it is also Organic and Non-GMO. Its definitely healthier than any of the snacks i have at home!
I've already put them in my staycay luggage that I'm packing. Erm, but my staycay isn't until 2 weeks later. Wahahaha!

I’ve always loved classic baked mooncakes — something Shangri-La Kuala Lumpur never fails to do. But they also have trendy mooncakes such as their Celebrity Michelin Starred Chef Recipe Gift Box Matcha with Red Bean & Yuzu and Kid’s Rabbit-Shaped Gift Box with Chocolate Orange & Nut and Mango, Passionfruit & Coconut snowskin range.
The classic baked mooncakes are good as expected. Smooth lotus paste filling and quality assorted nuts — Shangri-La standard, for sure.
And then we have the new mooncakes; red bean & yuzu which features a baked, melt-in-the-mouth pastry case, and red bean mochi centre. Quite good, this one.
The rabbit shaped gift box made MA so happy, because she’s been watching her mummy receive so many “special deliveries” and was delighted to receive her own from Shangri-La KL. Obviously, I didn’t get to eat her mooncake stash. “Mummy, got sugar. You cannot eat,” she said. Sorry, I cannot give you a review on that. She inhaled it.

@リンネル チャンネル リンネル 11月号増刊 特別付録のオサムグッズのシリコーンケーキ型を使ってスノースキン月餅を作ってみました。見た目はスノースキン感は弱いですが、月餅🥮の型がなくても、シリコン型で作れたのがポイント。伸びのよい柔らかな餅皮とホワイトチョコのミルキー感がとっても合います。包みやすい餅皮なので同量の餡でも包みやすいです。型離れのポイントは打ち粉。片栗粉を型や餅皮の側面に多めに振ってください。くっつかずに作業できます。型に餅が貼り付き、1回、失敗してしまいました。
昔から大好きだったオサムグッズ。付録でシリコン型が手に入るなんていい時代なんだ。
*レシピ*(およそ64mlの型 6個分)
ホワイトチョコ餡を作ります
1.ホワイトチョコ 42gを溶かす。
2.白あん 150gを入れ混ぜる。
3.6等分にする。
4.お好みにパウダーで着色する。
今回、かぼちゃパウダー・紫芋パウダー・いちごパウダー 各2g、バタフライピーパウダー・抹茶 各1gで着色しています。もちろんそのままでもOKです。
5.ラップで丸く包み、冷蔵庫または冷凍庫で冷やしておく。
餅皮を作ります。
6.耐熱ボウルに白玉粉 24g、水 96gを入れ粒がなくなるまで混ぜる。
7.加糖練乳 24g、サラダオイル 24gと上新粉 24g、薄力粉 8g、上白糖 24gをあわせてフルイ入れ、泡立て器で混ぜる。
8.ふんわりラップをして、600wの電子レンジで50秒加熱し泡立て器で混ぜる。
9.その後、20秒加熱を3回繰り返し、その都度、泡立て器で混ぜる。
10.更に20秒加熱を3回繰り返し、その都度、今度はゴムベラで混ぜる。
11.更に今度はラップをしないで、1分30秒加熱し混ぜないでそのまま粗熱を取る。
12.片栗粉を広げたバットなどに(11)を6等分する。
13.ラップの間に(12)を伸ばす。
14.(5)を包む。
15.シリコン型に押し込む。
16.冷蔵庫で冷やす。
17.型から取り出す。
18.でけた。かわいいうまい。オサムグッズかわいい。永遠だな。
I made snow skin mooncakes using the silicone cake mold of OSAMU GOODS. It doesn't look like snow skin, but the key is that it can be made with a silicone mold even if you don't have a mooncake 🥮 mold.The milky texture of the white chocolate goes well with the soft and stretchy rice cake skin. Since it is a rice cake skin that is easy to wrap, it is easy to wrap even the same amount of bean paste. The key to mold release is flour. Sprinkle more potato starch on the sides of the mold and the rice cake skin. You can work without sticking. Mochi stuck to the mold and I failed once. I've always loved OSAMU GOODS. It's a good time to get a OSAMU GOODS silicone mold in a magazine freebie.
* Recipe * (for 6 molds of about 64 ml)
Make white chocolate bean paste.
1.Melt 42g of white chocolate.
2.Mix in 150g of white bean paste.
3.Divide into 6 equal parts.
4.Color with powder as desired. This time, I used 2g each of pumpkin powder, purple sweet potato powder, and strawberry powder, and 1g each of butterfly pea powder and matcha. Of course, you can leave them as they are.
5.Wrap in plastic wrap and chill in the refrigerator or freezer.
Make mochi skin.
6.Put 24g of Shiratamako and 96g of water in a heat-resistant bowl and mix until there are no grains.
7.Add 24g of sweetened condensed milk, 24g of salad oil, 24g of Joshinko, 8g of cake flour, and 24g of white sugar, and mix with a whisk.
8.Wrap it gently, heat it in a 600w microwave oven for 50 seconds, and mix it with a whisk.
9.Repeat heating for 20 seconds 3 times, mixing with a whisk each time.
10.Repeat heating for another 20 seconds three times, each time mixing with a rubber spatula.
11.Furthermore, without wrapping this time, heat for 1 minute and 30 seconds and remove the heat as it is without mixing.
12.Divide (11) into 6 equal parts on a tray with potato starch spread.
13.Spread (12) between sheets of plastic wrap.
14.Wrap (5).
15.Press into the silicon mold.
16.Chill in the refrigerator.
17.Remove from the mold.
18.It's done. Cute and delicious. OSAMU GOODS are eternal.

We're changing the paradigm of how to make strawberry daifuku! Is this the dawn of the new age of strawberry daifuku!? We wondered if we could wrap the strawberry whole and boil it, so we gave it a try!
Well, it's not a daifuku, but a rice dumpling... But it tastes like strawberry daifuku, so please watch with an open mind!
* Recipe * (Makes 9)
1. Add 15g of sugar to 90g of white rice flour and mix.
2. Color 90ml of water with red food coloring. If you use a liquid dye, one drop is plenty. We used two drops and the color was too strong.
3. Add 2 to 1 while watching the texture and knead. Adjust the amount of water to make it as hard as your ear lobe. (We used 75ml of water this time.)
4. Wash the strawberries well and cut off the tops. We'll use the tops later, so put them aside for now.
5. Divide 3 into nine 20g sections.
6. Spread each section out, put 5g of white bean paste and wrap up the strawberries.
7. Use a toothpick to poke six holes in the top. It's good to make the holes quite deep.
8. Boil for three minutes in boiled water. You may boil them a litter longer if you are worried.
9. Remove and place into cold water to cool.
10. Place on the strawberry tops.
11. Finished.(Bellsprout...)
Since sugar was added to the white rice flour, it can be kept in the refrigerator and be eaten the next day without going hard.
We also made a version where we wrapped the entire strawberry with the top on, but the boiling always made the color change, so we went with this method in the end.

いちご大福の作り方の常識をくつがえす!? 新しい苺大福の誕生です?生の生地で苺を丸ごと包んで、そのまま茹でて作れないかな、とやってみました。まぁ、大福じゃなくて白玉だんごなんですが・・・味はいちご大福だから、大目にみてください。
*レシピ*(9個分)
1.白玉粉 90gに砂糖 15gを入れ混ぜる。
2.水 90mlを赤の食用色素で着色する。液体着色料でしたら1滴で大丈夫です。今回、2滴入れたら濃すぎました。
3.1に2を様子を見ながら加え、こねる。耳たぶくらいのかたさになるように水の量を調整する。(今回 75ml入れました)
4.イチゴはよく洗い、ヘタを切り落とす。ヘタは使うのでとっておく。
5.3を1個あたり20g、9個に分ける。
6.5を丸く広げ、白あん 5gをのせ、4のイチゴをのせ包む。
7.爪楊枝の上部分で6に点々をつける。少し深めにつけるとよい。
8.沸騰したお湯で3分弱茹でる。心配ならばもうちょっと茹でてください。
9.冷水に取り冷ます。
10.4のヘタをつける。
11.でけた。マダツボミも...
白玉粉に砂糖を加えてあるので、冷蔵庫で保存して次の日でも固くならずおいしく食べられました。
ヘタを落とさずにそのまま包んだバージョンも作りましたが、茹でることによって、どうしてもヘタが変色しがちだったので、最終的にこの作り方で落ち着きました。

Ingredients:
Serves 40 (assuming about 1 piece per person)
2kg pork belly
3 cubes of fermented bean curd
1 tablespoon of five spice powder
0.5 tablespoon of salt (normal)
2 tablespoons of rice wine
0.5 tablespoon of baking powder (not baking soda)
1 tablespoon of coarse sea salt
1 to 2 tablespoon of white vinegar
A few dashes of white pepper
Temperatures used
180C for 1 hr (middle rack)
240C for 20 mins
Remove from oven and then brush oil on skin. We used peanut oil. Please do not use olive oil as it has Low smoking point unless if you’re using very high quality olive oil
Back in the oven at 240C for 20 mins (top rack)
Note:
Please pay attention when it’s roasting in the oven during the last segment of 20 mins. If your pork skin starts to brown too much, you wanna reduce the temperature. No worries if they are a little charred. You can use a butter knife to scrap the charred bits out.
