跟大家問好，我是誠品書店的企畫李絲絲，大家可以叫我絲絲。
大家午安大家好！

今天是4月21日星期六，我和作者都是從臺北到臺中，為什麼呢？為了在座的各位，舉辦我們的新書分享會，並且把一個非常流行的概念分享給大家。今天，非常適合親子來參加，因為我們要做創意甜點桌，是歐美非常新的概念。

通常去參加喜宴喝喜酒，有沒有發現到，在擺放新郎新娘婚紗照的旁邊，有個很漂亮的桌子？上面會放很多的糖果、蛋糕，有印象嗎？在入口處顯得特別的華麗。

再來，如果你有參加派對，派對上的桌子也擺滿了主題蛋糕、糖果、花束等等，迎賓桌迎接你，我身後就是一個簡易的創意甜點桌的概念。旋轉木馬、漂亮的蛋糕，全部都是可以吃的。

誠品臺中大遠百店開幕也有1、2年的時間，星期六的下午不定期的舉辦料理分享會，今天做糖果倒是頭一遭！也非常適合小朋友來學，因為學好了就能馬上吃~

先介紹今天的作者，我們都稱她為小綠老師，可以在粉絲頁「G Cake Revolution」跟老師互動與分享，年紀很輕，非常的專業。

小綠老師取得英國PME蛋糕裝飾認證教師、日本JSA糖霜餅乾認證講師。

取得認證已經很厲害了，還取得講師資格，難度是非常高的。

也代表臺灣參加蛋糕裝飾比賽經歷與相關展出。

大家上一次吃棒棒糖的時間是什麼時候呀？吃棒棒糖不稀奇，會做棒棒糖才厲害，星空棒棒糖看起來怎麼樣？像玩具，但是可以吃。小綠老師就要從無到有把它變出來，晶瑩剔透就像玻璃珠一樣。

Q：小綠老師是科班出身嗎？什麼時候對烘焙、甜點感興趣的？
A：我是從大學開始，因為對這有興趣，有空的時候就開始摸，沒有想到一摸之後就摸出興趣，變成全職的工作。因為一開始也是工作，想利用閒暇時間去鑽研這些東西，我是覺得說，大家只要有興趣的話，就會比較投入，最後一定有成果這樣。

絲絲：大家說吃蛋糕、吃糖果很容易發胖，可是大家看小綠老師很瘦喔。沒有什麼甜點是小綠老師不會做的。待會也會變魔術給大家看！來看一下《創意甜點桌》。

Q：請問創意甜點桌的由來是什麼？
A：是國外流行的，因為他們在婚禮、生日或是特殊節日的時候，請賓客到場參加派對，需要準備不同的食物或飲料，有些更講究的主人會擺設的更為漂亮，提供不同的甜點讓賓客做選擇。從歐美流行到臺灣，鎖定一些特殊節日，來辦一個Candy Bar。

Q：如果要佈置一個創意甜點桌，請一個專業的公司來場佈的話，這個場要花多少錢？
A：基本上外面要2~3萬，自己佈置的話可以省下很多錢。大家不用擔心說一定要上過課才會製作，針對不同的技巧，有時候新手是很容易上手的。

Q：小綠老師平常也在開班授課對嗎？
A：臺北在大福烘焙蛋糕裝飾專門店，臺中的課程是在M9靖維手作教室，向上南路。

就依照書的主題跟各位介紹一下內容，什麼是創意甜點桌。

Candy Bar 1 奇幻歷險
「奇幻歷險－翻糖三層主蛋糕」

Q：主蛋糕跟其他的小蛋糕、小糖果的概念是什麼？
A：通常會有一個比較主角的蛋糕體，映襯一些小裝飾，有時候主蛋糕旁邊會配2個小蛋糕。

Q：主題為什麼是奇幻歷險？
A：裡面用比較多愛麗絲的元素，所以有用比較多蝴蝶結、兔子元素來製作，佈置的話以蕾絲為主，是一個小公主或者是小女孩會喜歡的主題。

Candy Bar 2 積木玩具
「繽紛積木玩具－三層主蛋糕」、「積木玩具棉花糖彩球－甜點杯」

Q：哇！這個可以吃嗎？連樂高積木都可以做成甜點桌
A：我們看到一個一個的樂高積木，其實是用巧克力去做的，有專門的積木模型，只要把巧克力融化之後，灌模就可以做了，不會說很困難。

絲絲：很有趣吧，這都可以吃喔，是用翻糖的技法對不對？
小綠老師：對，蛋糕是用翻糖來裝飾的。左邊是積木、右邊是棉花糖彩球
其實是用絲絨彩球，白色的部分是以融化的棉花糖製作，它的甜點杯不用說一定要冰在冰箱，受溫度的影響，在夏天也不用擔心會融化。

絲絲：
如果家裡有小男生，為他們準備一個積木的甜點桌，超酷。

Candy Bar 3 小公主週歲派對

絲絲：有小男生，當然也要有小女生的週歲派對甜點桌
小綠老師：這邊用了比較多小女孩的元素，像是旋轉木馬，針對年紀比較小的BABY，或是休閒想要辦PARTY的時候可以使用。

絲絲：小嬰兒都會有手搖鈴，可以做成棒棒糖的造型喔。

Candy Bar 4 大紅喜慶

絲絲：一般常看到的都以西式為主，小綠老師很擅長中式婚禮。
小綠老師：因為是中式婚禮，用了比較多牡丹還有一些大紅元素來製作。

絲絲：在英國的比賽取得優勝，也是用這樣的造型對嗎？
小綠老師：也是用中國風的主題。

「新郎倌與新娘子－翻糖杯子蛋糕」

Q：古時候新娘子有旗袍扣，新郎倌有大紅彩球，是用什麼做的？
A：用翻糖杯子蛋糕呈現，所以今天示範的翻糖餅乾是相似的類似技巧，

絲絲：
如果你去參加結婚典禮，準備了一對杯子蛋糕，你要不要？很特別的，大家可以提供這個點子給即將要結婚的新人喔。

Candy Bar 5 閃爍星空
「閃閃耀眼－星空棒棒糖」

Q：我們今天的主題，為什麼叫星空棒棒糖？
A：它裡面做出來會有不同星球的變化，利用不同的行星來製作。

絲絲：
聽說九大行星現在已經變成七大行星了，今天要把各大行星做出來。星空棒棒糖主要用在創意甜點桌上面，可以呈現一個什麼樣的風格？

小綠老師：
因為大家對於星空的色彩很喜歡，也結合現在最流行的星空設定了主題的甜點，比較暗色系，感覺比較神秘的藍。

「寒星冷月－果凍」

Q：請問小綠老師這是什麼樣的概念？
A：因為現在也很流行用蝶豆花來做染色，所以這個果凍是以天然的蝶豆花來做變化的技巧，因為白色的部分是原本蝶豆花的顏色，紫的部分是搭檸檬汁產生酸鹼變化呈現。

Q：果凍杯上的光影變化很有趣，它怎麼可以做成斜的呢？
A：在製作的時候是故意讓果凍凝固時放斜的，等它凝固之後再擺正，灌入果凍的液體。

絲絲：
以上的甜點餅乾有在市面上看到嗎？
沒有，因為這些創意都是來自於小綠老師的發想。

Candy Bar 6 血腥恐怖萬聖節
「不給糖就搗蛋－三層主蛋糕」

Q：萬聖節來了，恐怖的萬聖節，小綠老師，多恐怖？
A：裡面用比較多血液的蛋糕絲襪，蟲蟲呀、加上手骨那些比較血腥的風格。

Q：主蛋糕上的手爪痕這個怎麼做呢？
A：用了2層的翻糖，先在蛋糕上蓋了紅色的翻糖之後，外面再披一層白色的翻糖，再用刀子劃開，在劃開的地方製作血跡的效果。

「魔藥」
黃色是柳橙汁、黑色是可樂，比較深色的都可以來製作。

絲絲：
利用各式各樣的甜點來布置非常的有氣氛。
今天要製作的是星空棒棒糖，接著是翻糖餅乾的公主裙。
今天是老師的第2場活動，第1場在臺北信義店，那天有好多小朋友把現場都擠爆了，在臺中這場比較幸福，除了可以吃到星空棒棒糖，還可以學到、吃到甜美公主裙的翻糖餅乾喔。

小綠老師：
我先介紹一下材料，做星空棒棒糖的話，我們一定要用特殊的愛素糖，白色的糖跟珍珠糖很像，但是買的時候不要搞錯，因為珍珠糖加熱之後不太會溶解，只是外型長的很像。

買錯的話，珍珠糖是無法融成糖漿的。

有關愛素糖的部分，大家很常會問到為什麼不用砂糖？
砂糖經過加熱溶解之後，很快就變黃了，這樣做出來的星空，會是黃黃濁濁的，沒辦法這麼透，包含你放了什麼圖案都看不太清楚。所以我們一定要用愛素糖來做棒棒糖，等一下直接先加熱。

講義上有提到加水，如果說你後來煮糖很熟練了，建議還是不要加水比較好。因為臺灣比較潮濕，會加水的原因為一開始煮不熟悉，很容易外圈的糖因為太高溫而變黃，到時候煮好的糖反而沒這麼透。

加水會讓糖降低變黃的機率，所以才會說做熟練之後不加水會比較好。

Q：愛素糖哪裡買？
A：需要在特殊的烘焙材料行。因為一般的烘焙材料行有些賣的不一定是愛素糖，像我剛剛提到的可能會搞錯拿了珍珠糖給你。

絲絲：
粉末狀的愛素糖，是製作棒棒糖非常重要的食材，現在看到的是白色顆粒狀，等一下變魔術就不是這樣子了。

小綠老師：
等一下煮完全部會是透明的糖漿，不會是白色的。
等它溶解需要一些時間，要記得攪拌，不然外圈會變黃，裡面還沒有溶解。

等待的時候我們先來處理模具。
做星空圓球的部分是用矽膠模具，2個合起來就是一個立體的圓球。另外，我們也會做一個扁圓的，塑膠模具。模具需要先抹油，不然到時候會拿不下來。

塑膠模具有受紙棍長短的限制，大約10公分，有時候為了包裝會希望棍子是長一點的會比較好看，也可以挷個蝴蝶結之類的。所以我會在原來的塑膠模具放紙棍的位置再弄短一點，不受紙棍長度的影響，可以多一些變化來使用。

以後如果有使用到塑膠的模具，記得先抹油。用衛生紙沾一點白油、沙拉油都行，稍微塗抹，到時候才不會無法脫模。

絲絲：
請記得喔，到烘焙材料行買棍子的時候，一定要買紙做的，不要買塑膠做的。
老師，為什麼不要用塑膠棍呢？

小綠老師：
因為糖煮好是加熱超過100度的狀態，如果用一般的紙棍可能會融化，塑膠模具是耐高溫，可以到高溫150度，跟常見的模具80~90度就融化的紙棍比較不太一樣。

糖會慢慢溶解，如果平常是用瓦斯爐那種的明火，火力不要太大，寧可小火慢慢的加熱。

像外面賣這樣的棒棒糖，50元~150元都有，所以自己學會了怎麼做是最省錢的，還可以自己做變化想要的造型。

絲絲：如果1支150元，小朋友現賺300元耶XD
待會兒把大盆端下去，小朋友可以選2支，大朋友選1支，怎麼這麼好！

小綠老師：
圓頭的棒棒糖要先做哪個部分？先做半圓，有一個模具是放棍子的，另一個模具會放圖案，因為有棍子的部分會擋到圖案，建議大家不管是哪一種模具，只要是放棍子的那一個就放有顏色(黑色)的糖。

所以我們要先做沒有紙棍的模具，先灌入透明的糖漿。

Q：這個矽膠模具可以在一般烘焙材料行買得到嗎？
A：一般的材料行比較少，在裝飾烘焙材料行較容易取得。
今天要謝謝大福烘焙材料行贊助我們模具。

小綠老師：
現在糖漿溶解煮好會有很多氣泡是正常的，因為煮糖溶解之後有很多泡泡在裡面，這時候我們不會直接去灌模，因為先灌模的話泡泡會躲在裡面，做出來的糖果有時候空氣很多，所以會稍微靜置一下，讓它降溫。

剛剛煮的溫度會落在150~160度，通常不要煮超過160度，因為糖也是會變黃的。有時候會煮到150度的原因是，像我們一開始測是150度的溫度，但是糖仍持續加熱中，有可能當下是150度，但他升溫到160度了。當你不熟悉時，煮到150度趕快關火，有一些不同的技巧，請各位多注意一下。

靜置後的泡泡不見，比較透的時候，就可以來灌模。

糖漿倒入模具的時候，比例盡量把它倒滿，若沒有倒滿，在脫模的時候容易有空洞，盡可能跟模具一樣平。

圓球棒棒糖冷卻要比較久，
等待的時候來做透明的扁圓，先放上紙棍，今天棒棒糖總共教3種。
先把紙棍放好，再倒入糖漿，這個做法可以依據自己喜歡什麼圖案，只要是加可以吃的東西都可以，例如果乾、乾燥花瓣，或是糖珠、糖片都可以，隨自己變化。

記得糖倒完之後，紙棍也要轉一圈，讓它整個是有裹到糖漿的，脫模在包裝的時候才不容易斷掉。
趁它還未凝固的時候灑上想要的圖案，才可以整個黏在棒棒糖上面。

灑上藍色珠金沙，製造出海洋的效果，加上一些海豚的糖片，有不一樣的變化。大概5~10分鐘的時間，這樣子放著等它冷卻就完成了。

立體圓珠大概需要20分鐘左右，因此可以在一開始做立體棒棒糖時，搭個2~3組扁圓棒棒糖一起做，讓等待的時間不無聊，也會覺得時間過得比較快。

現在回到星空棒棒糖。
準備做另外一半的部分，大家看到我手上的是「食用星空紙」，它是威化紙、糯米紙那種，用食用色素印表機印的，整個都是可以吃的，有專門的打孔機打洞，也能用剪刀剪，時間花費長一點點。

剪好的星空紙放入透明糖漿模具時，紙朝下，這樣才不會擋住了背後的黑色星球宇宙畫面，在等待透明糖漿冷卻，是有很多事情可以做的。放星空紙的時候也不能等到完全冷卻再放，不然會完全分離，沒有黏合的效果。

放的時候要小心，糖漿只要是流動狀的，都有100多度的高溫，不小心黏到手會起水泡，請多留意。

在放上半圓模具倒入糖漿之前，記得擺好紙棍定位，先把剛剛冷卻的糖漿再加熱，為了讓棒棒糖有神秘的感覺，後面的糖漿會染色，如果你要透明的也行，只是沒有星空的神秘感，這個步驟可以自己選擇想要怎麼呈現。

一般是黑色或增加為黑紫色，只要滴一點點的黑色色膏就可以染成黑色糖漿，還會加食用的珠光粉，仿銀河的效果，很像女生的眼影。

就可以倒入模具凝固，紙棍也要轉動，都裹到糖漿。凝固後才能合在一起的原因是因為，剛煮完的2個模具糖漿還是流動的，可能會燙到手，請記得一定要等到定型不會流出來，才能反過來合模。

稍微凝固的時候就先蓋起來，如果糖倒得太過，蓋起來的時候要小心流溢出來的糖漿還是滾燙的，不要去碰。先這麼放10~15分鐘凝固。

因為黑色糖漿還有一些，我們可以做扁圓棒棒糖，一樣倒滿模具。

絲絲：
如果學會做糖果有個好處，就像你學會做甜點一樣，做好裝成禮盒，可以逢年過節、特殊日子送給親朋好友的小禮物，收到的人若是知道是送禮本人做的，會更驚訝並佩服你。今天學會了星空棒棒糖，效果一級棒！

小綠老師：
這一款扁圓棒棒糖在書裡有提到，在未完全凝固前先用夾子放上食用星星亮片，點綴裝飾。用灑的也可以，只是灑的比較隨性，用夾子夾的比較精準、比較好看。

小朋友不能回家後看到美勞作品上的星星拿來塞嘴巴，這2種星星是不一樣的東西喔。

絲絲：
後面晚上的朋友一定覺得我們在上美勞課，很多材料理看起來像不能吃的東西。

小綠老師：
現在棒棒糖的糖漿都灌好了，就等它凝固，我們這樣做完一輪之後，一開始的扁圓棒棒糖也可以脫模了。怎麼判斷它已經好了可以脫模？從模具的旁邊稍微一剝，它如果OK就會掉下來。

像剛剛才灌模的整個還很軟、很燙，是不能動的。
要特別注意的是，預備脫模的棒棒糖，一定要在旁邊先備好包裝紙。

很常有人會問我說，為什麼我做好的棒棒糖會黏，其實是因為臺灣很潮濕，能脫模的時候一定要趕快包裝起來，不然待會兒一定會受潮。

如果是在下雨天做棒棒糖，一定要更特別注意這個問題。如果太潮濕的情況下，還會融化，濕到出水的狀態。

回到星空棒棒糖。
去摸模具沒有溫度的時候才可以去開模，如果硬開模發現糖漿還是軟的，上下一定會分離甚至變形，記得一定要比較冷卻了再開模。

像我們剛剛用塑膠模具做的棒棒糖是透的，不用再回烤，但是矽膠的話孔氣比較大，因此做出來的糖會有空洞，利用直火式的打火機去噴它，讓它從霧霧的變透明。

記得火不要太大，火太火會把整個棒棒糖給融化了，怕會滴下來。整個都烤一下會比較清楚。

直火的概念是怎麼轉都會固定一個方向，因為一般打火機轉換方向會去燙到自己。之前有試過，用一般打火機烤出來的糖最後還是會變成黑色，所以還是用直火式打火機比較適合。

Q：我想知道這個糖可以直接加蝶豆花煮出來的汁嗎？
A：汁比較不適合，因為比較適合加的材料是乾燥的，除非經過特別濃縮，水分不要過多，有時候會去影響到糖的凝結度，像示範的是硬糖，如果水分加超過10%比例，容易變軟，硬不了，有這樣子的差別。

Q：一次用不完的糖漿，可以放冰箱下次再拿出來回溫用嗎？
A：可以，像剛剛一開始沒有全部用完，可以再重新加熱使用的。因為重新加熱的糖容易變黃，所以重新加熱的動作不能太多次，或是可以加水去加熱，讓變黃的速度慢一點。

糖是天然的防腐劑，放在常溫就可以了。只是要使用時再加熱即可。

Q：棒棒糖可以放多久？
A：因為糖是天然的防腐劑，放半年都沒有問題，但是臺灣的天氣比較潮濕，而且我們不是用密封的包裝，久了之後會受潮，變霧，再回烤之後還是會回復亮亮的，如果要保持這個漂亮的狀態，建議在2個星期內吃完。

基本上2~3個月內吃都沒關係，只是形狀上的差異。

Q：藍色矽膠模需要抹油嗎？
A：怕不好脫模的話，可以上一點油，但是只要完全凝固的狀態，雖然沒有上油，一樣可以拔得下來。

白色塑膠模具如果沒有上油而硬拔的話，會整個碎掉。

Q：白油是什麼？
A：無色、無味，可以放常溫的是白油，效果比較好。
之前試過用沙拉油，會完全的沾黏，脫不了模。

Q：可以直接用烤盤油嗎？
A：可以，用油的目的是防止沾黏。

Q：做棒棒糖的蛋糕模可以拿來用嗎？
A：因為這個需要時間來凝固，烤蛋糕是要靜置後等它膨脹，去撐那個空間，會灌不了糖，整個做好是不能從孔洞倒糖下去的，容易燙傷，不適合拿來做棒棒糖。

「甜美公主裙翻糖餅乾」

小綠老師：
這邊有事先做好3個分解動作，這個還滿簡單的，沒有太困難。
首先，書裡有基本的餅乾配方，一定要先烤出裙子外形的餅乾底，在製作裙子的餅乾底會用到模具，翻糖就像是可以吃的黏土，操作方法跟黏土很像，只要熟悉這個材料之後，在製作上是很方便的。

基本上翻糖是以白色居多，比較少有顏色，我們只要準備食用色膏把白色染成想要的藍色做使用，記得去桿皮之前，因為我們等一下要鋪這個平底，在開始前要把翻糖再揉一下比較好操作，若直接去桿的話容易有裂痕，所以會用桿麵棍稍微桿平。

絲絲：現場展示的旋轉木馬的表面，就是由翻糖製作成的。

小綠老師：
先把桿好的藍色翻糖拿出來，使用模具挖好，把餅乾蓋住。
記得壓模的時候要稍微轉動一下模具，把翻糖切的比較乾淨，不會有太多的毛邊。

也有準備好食用膠水，書的一開始也有教大家如何用泰勒粉去調製。

刷食用膠水在背面，貼住餅乾底，記得不要塗太多，因為糖滿怕水，過多的膠水會使糖溶解的。

接著使用白色的翻糖，
當藍色的底完成後，我們要來做衣服，袖子的部分，需要用到餅乾模的上緣，切好之後，記得因為我們有做層次，白色翻糖在製作上滿快的，確定好圖案刷上膠上，黏上。

絲絲：
感覺好像在做紙娃娃 ^_^

小綠老師：
袖子好了，來做裙擺的部分，也會呈現皺摺，先切一段梯形的大小，把剛剛完成的餅乾底拿來比量一下，不用太長，需要3分之2長度，要寬一點，因為抓完皺摺之後會變細，有毛邊的地方用手指稍微收一下，再來抓上面的裙擺皺摺。

絲絲：
翻糖的可塑性很高，這幾年也都非常流行翻糖蛋糕，比較特殊，在歐美流行的一種技法。

小綠老師：
上下摺好皺摺之後捏緊，再稍微刷一下食用膠水後貼上去，這是第2步驟。接下來我們會切一些長條邊，因為我們剛剛完成的2個步驟會有明顯的收口不好看，利用長條邊修飾它。

絲絲：這個長條邊，是不是就是腰帶呢？
小綠老師：對，確定長度之後，再塗一點食用膠水貼上，就完成了，其實餅乾很快。今天準備了藍色、紫色、粉紅色、桃紅色的翻糖公主裙餅乾。

Q：翻糖的甜度可以調整嗎？
A：買來是現成的，我會在餅乾體的部分減少糖量，去綜合整個甜度。而且翻糖的甜度若沒有到一定的標準，也不好塑型和定型，會跟後續的操作有關係。

Q：翻糖會變硬嗎？
A：不要超過1~2天，如果是平整的，天氣潮濕還會出水，盡量用保鮮膜蓋起來，會延長它的食用期限。

Q：剛做好的翻糖餅乾需要馬上包裝嗎？
A：因為我們用泰勒粉，讓它比較容易變硬、定型，不會非常軟塌；如果不是用泰勒粉直接包裝起來會容易變型。

Q：翻糖買來一定用不完可以保存的時間？
A：通常，不要有揉過的話，可以放到保存期限，通常都有到1年。如果已經有揉過的話，也怕手上有細菌，建議在1個月內用完它。因為糖有一種發酵的酒味。

Q：做好的翻糖需要冰嗎？
A：不用冰，放常溫就可以了。剛有提到翻糖怕水，退冰沒有退好整個會是黏黏的，因為翻糖的成分都是糖，放常溫是不會壞掉的。

Q：因為糖水乾了也有黏性，食用膠水可以用糖水代替嗎？
A：如果說用一般的水也可以黏，也不一定非要用糖水，像平面的可以這麼做。因為泰勒粉的黏著性高，在製作立體翻糖蛋糕上，部分配件較重的情況下，用泰勒膠水比較能黏得住。

Q：如何防止翻糖產生裂痕？
A：有時候是運送過程有破損；有時候是比較乾的情況下，像剛剛說在使用前先揉過，揉過之後比較不會裂，因為你充分揉過之後比較軟，在製作一些配件的時不容易有裂痕。

Q：請問小綠老師幾歲？
A：我79年次。

Q：做糖果一定要用那個模型嗎？
A：其實模型是為了做出那個形狀，像扁圓的部分比較簡單，可以做在烤焙紙上，只要倒下去呈現自然的圓也可以。模具是幫助定型，不會有大有小的差別。

Q：像剛做好的星空棒棒糖也是需要馬上包裝嗎？
A：經過火烤冷卻1~2分鐘的時間，就要做包裝的動作，不能馬上，因為會黏在袋子上。

Q：請問台中的教室在哪裡？
A：向上南路一段186號，靖維手作教室。

Q：請問翻糖的部分可以用塑巧代替嗎？
A：可以，但是會受溫度的限制。
塑巧就是塑型巧克力，通常在蛋糕需要冰的時候會用到。

其實今天是我第一次來大遠百，感受到臺中人的熱情，謝謝大家來參與並且花時間來學棒棒糖。

平常小綠老師都忙於開課教學，一堂課都要花不少錢，在誠品書店的這幾場是免費的，希望把這個甜點桌的概念傳達給更多人知道，希望大家可以變成糖果高手。

----------【食譜】----------

【閃閃耀眼 星空棒棒糖】
材料：
愛素糖400g、水35g、沙拉油( 或白油)、紫色色膏、黑色色膏
食用金色星星亮片、食用白色星星亮片
工具：
2.8cm 立體圓球矽膠星空模、3.5cm 扁圓星空模、衛生紙
棒棒糖紙棍、鍋子、2.8cm 星球圖案食用紙、鑷子
製作步驟：
溶解愛素糖
1.愛素糖加水小火慢慢熬煮，並一邊使用溫度計測量。溶解後煮到約150 度熄火，記得確實使用溫度計測量避免溫度過高導致愛素糖變黃。
Tips:熄火後先靜置幾分鐘，待大氣泡消除後再將愛素糖漿倒入模型中。

圓球星空棒棒糖
2.衛生紙沾取適量的沙拉油或白油塗在模型上，油量不能太少，否則將難以脫模。
Tips:使用白油較易脫模，但口感較差。
3.先將透明的愛素糖糖漿倒入無棍棒的圓球模中至滿模。
4.靜置待涼，等待時可裁剪星球圖案食用紙。
Tips:可將烤盤裝少許冷水，將模型放上可加速糖漿降溫冷卻。
5.待半圓球的愛素糖糖漿表面微涼呈固態後，星球圖案面朝下放上食用紙，成品才不會被棒棒糖棍擋住。
Tips:請確實確定糖的表面已凝固，如糖漿還在液態狀就放上食用紙容易導致兩旁翹起。

6.將剩下的愛素糖糖漿加熱溶解，並加入黑色及紫色色膏調色，增加星空的神祕感。
7.另半邊的模型放入棒棒糖紙棍，並將調好的黑紫色愛素糖糖漿倒入至全滿。
8.蓋上另一半邊已冷卻的半圓模具，並翻轉使愛素糖糖漿充份填滿模具。
9.待愛素糖糖漿冷卻後脫模即完成。
【扁圓星空棒棒糖】
10.衛生紙沾取適量的沙拉油或白油塗在模型上，油量不能太少，否則將難以脫模。
11.放入紙棍，將黑紫色愛素糖糖漿倒入模具中至全滿。
12.將紙棍轉一圈確實裹上愛素糖糖漿。
13.當愛素糖表面凝固後，使用鑷子放上食用星星亮片裝飾，脫模後即完成。

【甜美公主裙、童話鑰匙 翻糖餅乾 】
「甜美公主裙」
材料：
水藍色翻糖50g、白色翻糖30g

工具：
擀麵棍、翻糖工具刀、公主裙子切模
製作步驟：
1.烘烤出所需形狀的餅乾，作法請參考P.26「基礎食譜－餅乾」。
2.在藍色翻糖上用公主裙子切模切出所需翻糖，並刷上食用膠水黏貼在餅乾上。
3.在白色翻糖上，切出上衣的部分，並裁切。
4. 切出一塊白色梯形翻糖。
5.將上方抓皺並黏貼在餅乾上。
6.切出一條長條翻糖當腰帶即完成。

The downpours, pelting over Kowloon as though they were bullets from above, had finally subsided. For Liverpool, however, this was the inception of the storm.
嚟香港踢波先落狗屎，唔同連個天都唔鍾意我。但原來對利物浦嚟講，果日只係惡夢嘅開始。

Before the sun could fully crack through the scattered clouds that Friday morning in Hong Kong last July 21st, Jurgen Klopp’s phone screen was crowded with notifications from sporting director, Michael Edwards, and Fenway Sports Group president, Mike Gordon.

Klopp’s designs for the pre-season tour had already been scaled back due to monsoon conditions that prompted cancelled training sessions and improvised workouts.

It is Saturday, January 6 2018, where a long-scheduled New Year’s celebration for Liverpool’s staff at the Klopp residence has coincided with the £142m sale of Coutinho to Barcelona.
