"Shiratamako (rice flour)" is one of the necessary ingredients for mochi (rice cake,) dango (dumpling,) and other Japanese sweets.
It has chewy and smooth feeling, and it tastes good.
You can easily make them at home.
You can also decorate them and make these cute Snoopy dumplings.

【Ingredients】for 4 people
100g shiratamako (rice flour)
100g water
red-yeast-rice powder
pumpkin powder
black cocoa
uguisu kinako (soybean flour with light green color)
caster sugar
【Directions】
①Put shiratamako in a bowl, add water little by little and mix well each time to make a dough (a little harder than an earlobe)
②Divide ① into 3. Leave one of them plain, add red-yeast-rice powder and pumpkin powder to each of the rest and knead and mix well.
③Shape each dumpling Snoopy, Charlie Brown or other characters
④Boil ③ in boiling water for 2~3 min, when the dumplings start floating, boil more for 1~2 min.
⑤When they're boiled, cool them well in water with ice.
⑥Drain water well and skewer them.
⑦Spread soybean flour mixed with sugar on a plate, and put the skewered dumplings on the plate.
⑧Draw their faces with black cocoa dissolved in water, and serve!
⑨Powder them with uguisu kinako and eat!
*You can also use brown sugar syrup or chocolate sauce.
*When you draw the faces, remove wetness on the surface with paper towel.
【材料】4人分
白玉粉 100g
水 100g
紅麹パウダー
かぼちゃパウダー
ブラックココアパウダー
うぐいすきな粉
上白糖
【作り方】
①ボウルに白玉粉を入れ、水を少しずつ加えながらよく混ぜて、耳たぶよりほんの少し固いくらいの
固さの生地にする。
②①を3分割して、ひとつは何も加えずそのままで、残りふたつはそれぞれ紅麹パウダーとかぼちゃパウダーを
加えてよく混ぜておく。
③3つの白玉をそれぞれ、スヌーピーやチャーリーブラウンに成形する。
④沸騰したお湯に③を入れて、茹でる。
2~3分茹でて、白玉が上に浮いてきたら、そこから更に1~2分ほど茹でる。
⑤茹で上がったら、冷水に取って、氷水でよく冷やす。
⑥水気をよく切り、串に刺す。
⑦砂糖を加えてよく混ぜたきな粉を皿に敷き、その上に串に刺した団子を乗せる。
⑧水で溶いたブラックココアパウダーで顔などを描いて出来上がり。
⑨うぐいすきな粉をつけて召し上がれ~!
*黒蜜やチョコレートソースでも美味しいです。
*顔を描くときはキッチンペーパーなどで、表面の水分を少し取ってください。

Spicy Ginger Cookies
Difficulty: Super Easy
Time: 1 hr
Number of servings: 10 Cookies Using 2.5 Inch Pumpkin Cookie Cutter
Ingredients:
100g (3.5oz.) cake flour *all purpose flour is okay
1/2 tsp. ginger powder
1/4 tsp. cinnamon powder
1/4 tsp. clove powder
30g (1.0oz.) powdered sugar (confectioner's sugar)
50g (1.8oz.) butter *softened *you can use vegetable oil or olive oil, too
chocolate pen or chocolate
Directions:
1. Sift in all the dry ingredients in a large Ziploc bag. Add butter, make sure it is zipped, then mix well.
2. Roll out the dough in the Ziploc bag to 5mm (0.2 inch) thick. Refrigerate the dough for at least 1 hour to set and chill.
3. Preheat the oven to 170C (338F). Cut out the dough with cookie cutter. Place the cookies on a cookie sheet lined with parchment paper. Roll out scraps, and repeat.
4. Bake at 170C (338F) for about 15 minutes. Cool the cookies on the sheet or a wire rack.
5. Melt the chocolate pen or some chocolate in a pastry bag. Snip off the end and draw Jack-o'-Lantern faces.

Temari-Zushi (ball sushi) is a ball-shaped sushi made by shaping sushi rice and fish into a ball by hand using a plastic wrap.
Avocado sushi rice is pretty tasty and it goes great with smoked salmon. I hope you like it!

Halloween Jack-O'-Lantern Ball Sushi
Difficulty: Easy
Time: 20min (w/o rice cooking time)
Number of servings: 14
Ingredients:
300g (10.5oz.) cooked Japanese rice (short-grain rice)
A
* 2&1/2 tbsp. rice vinegar
* 1 tbsp. sugar
* 1 tsp. salt
1/2 avocado
14-28 slices smoked salmon
1/2 nori sheet
14 pumpkin seeds
mayonnaise
Directions:
1. Chop avocado into small pieces.
2. Place cooked rice in a bowl. Add A while the rice is hot and slice through rice using rice paddle to separate the grains. Then add the chopped avocado and mix well.
3. Place a sheet of plastic wrap on your hand. Then place 1 or 2 slices of smoked salmon in the center. Measure a bite-size amount of sushi rice and place it on the salmon. Shape them into a ball, twisting the plastic wrap. Unwrap and make the rest.
4. Draw a spider web on a plate with mayonnaise. Place the sushi balls on the plate.
5. Cut out nori sheet for the eyes, nose, and mouth. (Cut freehand to make expressive faces.) Place them on sushi balls.
6. Attach pumpkin seeds to each sushi ball to finish.
Preferably refrigerate before you serve!
