Starting on our Christmas recipe series, we have a simple 40 minute recipe that is good for the whole family! Using Kuhlbarra’s barramundi fillet, we simply created a tasteful mix of pesto, crushed almonds, white pearl onions, tomatoes and rosemary for pairing.

Add some lemon zest and juice, bake it in parchment paper, and you’re good to serve - easy! You can also purchase their ready-divided fillet on their website here, complete with parchment paper for easy cooking.

Hey guys, we have for today an auspicious treat for your CNY preparation!
In a twist of the very popular squirrel fish recipe, we’ll recreate this dish found in many Chinese restaurants. It’s not only good, but also a conversation starter for guests visiting your home during the festive season.

We cut the fillet of barramundi in the shape of a pine cone, making sure that every part of the fish is coated evenly with potato starch. By doing so, the shape will ‘flower up’ during the deep frying process! Rather than to use a mix of sugar & ketchup, we’ll use lychee syrup instead to create a lychee flavoured sweet & sour sauce for the barramundi.
So let’s get cooking!

Steamed fish is best eaten fresh, and using Kuhlbarra’s barramundi belly we created a dish that is not only healthy yet incredibly tasty all within 20 minutes. Pairing the fish with kai lan and shiitake mushrooms, we added a fish stock and abalone sauce that gives the dish its depth and flavour. The dish not only looks classy and it's so easy everyone can make it at home.
