最近好冷~全国都降温了,其实这是大自然给我们的指示啊——亲,这边建议火锅赶紧吃起来呢!羊肉锅在冬天真的是在我必吃榜前排的,其中我强烈推荐羊蝎子火锅,啃完脱骨多汁的羊蝎子,嗦嗦手指还能接着涮菜。这个酱羊蝎子我放了一些独门香料,味道完全不会腥膻,答应我一定要试试好吗~

腌制Seasoning for marinating:
羊蝎子1kg,1kg lamb spine
生抽2大勺,2 tbsp light soy sauce
盐1小勺,1 tsp salt
黄酒2大勺,2 tbsp Shaoxing wine
花椒粒1大勺,1 tbsp szechuan pepper
底料Saucepan bottom:
植物油5大勺,5 tbsp vegetable oil
香油1大勺,1 tbsp sesame oil
黄豆酱2大勺,2 tbsp soybean paste
红腐乳1块,1 piece red fermented bean curd
蚝油1大勺,1 tbsp oyster sauce
糖2大勺,2 tbsp sugar
草果1个,1 tsaoko cardamon
小茴香1大勺,1 tbsp fennel seeds
孜然1小勺,1 tsp fennel seeds
八角2个,2 star anise
桂皮1片,piece of Chinese cinnamon stick
香叶3片,3 bay leaves
陈皮1大片,1 piece of dried citrus peel
砂仁2个,2 fructus amomi
干辣椒一把,handful of dried chillies
白胡椒粒2小勺,2 tsp white pepper
花椒粒1大勺,1 tbsp szechuan pepper
姜一块,a piece of ginger
大葱一根,1 leek
青蒜,green onion
配菜Side dish:
冬瓜,winter melon
冻豆腐,frozen tofu
大白菜,Chinese cabbage
宽粉,wide starch noodles
羊肉片,slice lamb
茼蒿,crown daisy
毛肚,beef stomach

食材份量 Ingredients
急凍羊腩兩磅/900g 900g lamb brisket (frozen/fresh)
四顆蒜 4 bunches of young leek
一罐罐頭筍 1 can of bamboo shoot / fresh bamboo shoot
八隻浸發好的冬菇 8 large Chinese mushrooms (pre-soak)
兩片檸檬葉 2 lemon leaves
一包炸好/乾的枝竹 1 packet of fresh/dried bean curd sheets
60克薑 (切厚片) 60g ginger (cut into thick slices)
八粒馬蹄 8 water chestnut
芫荽適量 Handful of coriander
生菜/其他菜 Lettuce / green leaves of your choice
調味料: Marinade:
柱侯醬30克 30g Chu Hau paste
南乳40克+1湯匙南乳汁 40g fermented soy bean + 1TBS of its juice
20克冰糖 20g rock sugar
30克芝麻醬 30g sesame sauce
一湯匙紹興酒 1 TBS Shaoxing wine
一茶匙老抽 1 tsp dark soy
蒜頭50克 50g whole garlic
羊肉醬: Dipping sauce:
腐乳三磈 3 pieces fermented bean curd
半茶匙糖 1/2 tsp sugar
半茶匙麻油 1/2 tsp sesame oil
少許檸檬葉 1-2 lemon leaves (cut into thin strips)

Very tasty yet delicious Miso Ramen in 5 minutes!!!
Miso is a traditional Japanese seasoning made from fermented soybeans. It is a umami-rich paste to make a Miso Soup. There are tons of different kinds of Miso pastes in Japan. You can use any of your choice to enjoy this recipe.
I made this recipe for Vegan people but sure you can easily change the ingredients to make non-vegan Miso Ramen.

5 MIN Vegan Miso Ramen
Difficulty: VERY Easy
Time: 5 min
Number of servings: 1
Ingredients:
1 package fresh Ramen noodles
a bag of bean sprouts (remove the roots and heads if you prefer)
whole kernel corn (canned)
chopped green onion
((Miso Ramen Soup Base))
2 tbsp. Miso
1 tbsp. Soy sauce
1 tsp. Sugar
1 tsp. Kombu kelp Dashi powder
1 tbsp. ground white sesame seeds
1 tsp, garlic paste
1 tsp, ginger paste
1 tbsp. sesame oil
a few drops of La-Yu chili oil if you like
350ml hot water
Directions:
1. Wash the bean sprouts, place them in a microwavable dish, cover, then cook on medium (600w) for 2 min. Drain well, then season with salt, pepper, and sesame oil.
2. In a bowl, mix the ingredients of the Miso Broth, add hot water little by little then mix well.
3. In a pot, boil water. Add fresh Ramen noodles in the boiling water and gently stir noodles with chopsticks. Cook Ramen noodles according to your package. Drain the noodles in a strainer and place them in the soup. Then arrange the toppings.
