Hi, everyone :) Today we'll going to show you how to make French Version of deviled eggs--L'œuf mimosa. This dish takes its name from the beautiful yellow mimosa flowers, because it’s topped with a sprinkling of mashed egg yolks, just like mimosa in bloom. it’s why it’s called mimosa eggs. :-)
Oeufs Mimosa is nice recipe for summer weekend, if you don’t want to spend too much time in kitchen, you must try it. This dish can be served as a appetizer or main course with some green salad.

❅ Œufs Mimosa
Ingredients
fresh eggs, room temperature
homemade mayonnaise 3-4 tbsp
a pinch of salt
a pinch pepper
dijon mustard 1 tsp
parsley or other herbs, 1 tbsp
honey, 1 tsp
1. Place eggs in a saucepan and bring water to a boil over medium heat, remove from heat, cover with a lid for 12-14 mins
2. Transfer the cooked eggs to an ice bath so they stop cooking
3. Peel the eggs.
4. Cut eggs in half lengthwise. Gently remove yolks.
5. Press the yolks through a sieve by a spoon.
6. Take out part of mimosa yolks for garnish. Now make the filling, Add the mayonnaise and mustard and honey to the yolks in the bowl, season with salt and pepper and some parsley. Mix well.
7. Ready to Assemble the eggs. Fill the whites with the yolk mixture. Sprinkle the mimosa yolk for garnish, All down, enjoy.

❅ French Mayonnaise
Ingredients
egg Yolk 1, room temperature
grape seed oil 135ml
a pinch of salt
a pinch a pepper
dijon mustard 1 tsp
white wine vinegar 1 tsp
lemon juice 1-2 drops
Instructions
1. In a mix bowl, add the yolk, salt, pepper, and mustard, whisk slowly to combine all together
2. Use a teaspoon to add the oil at the beginning, make sure the oil you add is well incorporated. Repeat the process in 3 times.
3. Pour rest of oil bit by bit while stirring continuously until the oil is gone.
3. Add white vinegar and few drops of lemon juice. Mix well.
4. Finally, adjust the seasoning to taste. Homemade mayonnaise will keep for 2-3 days in refrigeration.
