⭐秋分之後漸變日短夜長
⭐開始預防秋燥傷肺
#節氣煮煮Cin
秋分養生重點:「滋陰潤燥,補中益氣」
無花果:滋陰潤燥,健脾養胃
蜂蜜:補中益氣,潤腸解毒
蜂蜜芝士焗無花果
材料:新鮮無花果6隻、乳清芝士(Ricotta Cheese)100克、杏仁碎少許、鹽少許、蜂蜜適量
做法:
1. 焗爐預熱至攝氏180度。
2. 無花果洗淨,從頂部切開成十字,注意不要切斷底部。
3. 在無花果中間釀入乳清芝士,灑上杏仁碎及鹽。
4. 放入焗爐焗5分鐘。
5. 最後加上適量蜂蜜即可。

Baked figs with honey and ricotta cheese
Ingredients: 6 figs, 100g ricotta cheese, crushed almond, salt and honey
Preparation:
1. Rinse figs, make a cross cut in the top of the fig half way through.
2. Stuff figs with ricotta cheese, sprinkle some crushed almond and salt to taste.
3. Preheat oven to 180 Celsius degree and bake for 5 minutes.
4. Add honey to taste.

【#立秋】茄子是秋天的食材
⭐️不愛吃茄子的也會愛上
😘濕疹過敏人士就要忍忍口了

立秋養生重點:「清熱養陰,潤燥止渴」
茄子:清熱活血,寬腸通便
味噌:補中益氣,滋養心腎
茄子田樂燒
材料:茄子2個(首選圓茄子)、蔥半條、芝麻及木魚碎少量
味噌醬:味噌2-3湯匙、味醂1湯匙、糖1湯匙、麻油及熱水少量
做法:
1. 茄子及蔥洗淨。茄子切半,以刀𠝹十字紋;蔥切成蔥花備用。
2. 混合味噌、味醂、糖、麻油及少量熱水至醬汁狀備用。
3. 以少量油煎香茄子兩面至微焦。
4. 在茄子面塗上味噌醬,焗爐預熱180度,焗15分鐘。
5. 灑上蔥花、木魚碎及少量芝麻即成。

Healthy living during Beginning of Autumn Solar Term:
“Clear heat and nourish yin, relieve dryness and thirst.”
Eggplant: clears heat and promotes blood circulation, loosens the bowels to relieve constipation.
Miso: replenishes vital energy and qi, nourishes heart and kidney.
Grilled eggplant with miso sauce
Ingredients: 2 eggplants (round or oval eggplants are preferable), 1 segment of spring onion, small amounts of sesame and bonito flakes
Miso sauce: 2-3 tablespoons of miso, 1 tablespoon of mirin, 1 tablespoon of sugar, small amount of sesame oil and hot water
Preparation:
1. Rinse eggplants and spring onion. Cut eggplants in half and slice in cross pattern. Chop spring onion.
2. Mix miso, mirin, sugar, sesame oil and hot water into paste.
3. Heat the pan with oil, sear eggplants until golden brown.
4. Add miso sauce to eggplants. Preheat oven to 180C and grill for 15 minutes.
5. Serve with spring onion, bonito flakes and sesame.

⭐️北京填鴨健康變奏
⭐️少少惹味適合爸爸口味

夏至養生重點:「溫養陽氣,清熱養心」
鴨肉:滋陰補虛、養胃利水
山楂:開胃消滯,降血消脂
山楂醬涼拌手撕鴨
材料:鴨胸1件、青瓜半根、蘋果1個、紅辣椒1條、京蔥半根及蒜頭2瓣
醃料:料酒、白胡椒粉、生抽及糖少量
醬汁:乾山楂9克,蜂蜜1湯匙
做法:
1. 所有材料洗淨,青瓜及蘋果切絲,紅辣椒去瓤去籽切絲,京蔥切幼絲浸泡冷水,蒜頭切碎,鴨胸以醃料醃製半個小時備用。
2. 鑊中加入少量油剪香鴨胸兩面,焗爐預熱至150度,再放入焗爐烤2-30分鐘至熟透,放涼後以手撕開。
3. 鍋中加少量水,水沸後加入山楂片煮至軟身,加入蜂蜜調慢火,輕壓山楂成蓉,煮成醬汁,放涼備用。
4. 大碗中加入鴨肉、青瓜絲及蘋果絲,拌入蒜蓉及山楂汁。
5. 最後放上紅椒絲及京蔥絲,可隨喜好伴以墨西哥烤餅或春餅同食。
Healthy living during Summer Solstice Solar Term:
“Nourish yang qi. Clear heat and nourish heart.”
Duck: Nourishes yin and replenishes deficiency, nourishes the stomach and promotes diuresis.
Chinese hawthorn: Stimulates appetite, aids digestion and lowers blood lipids.
Chilled duck meat with Chinese hawthorn dressing
Ingredients: 1 duck breast, half cucumber, 1 apple, 1 red chilli, 1 segment of leek, 2 cloves of garlic
Marinade: cooking wine, white pepper powder, soy sauce and sugar
Dressing: dried Chinese hawthorn 9g, 2 tablespoons honey
Preparation:
1. Preheat oven to 150C. Rinse all the ingredients. Slice the cucumber and apple. Remove pulp and seeds for sweet pepper and red chilli and slice. Slice the leek and soak in cold water. Chop garlic finely.
2. Heat the pan with oil and sear the duck breast to golden, place in the oven and bake for 20-30 minutes. Let it cool down and tear into shreds.
3. Bring water to boil, add Chinese hawthorn and cook till soft, add honey and mesh into sauce, cool down to serve.
4. Mix the duck meat, cucumber and apple slices with garlic and Chinese hawthorn dressing.
5. Garnish with red chilli and leek, and serve with tortillas or Chinese springroll wrappers.
