☑️10oz fresh wide rice noodles
☑️4 tbsp vegetable oil
☑️2 tbsp Shaoxing wine
☑️2 tbsp sesame oil
☑️2 tbsp Maggi sauce
☑️2 tbsp dark soy sauce
☑️1 tbsp sugar
☑️Scrambled eggs to your liking
☑️Salt and pepper to taste
☑️Chili oil
☑️Shrimp and Vietnamese ham (any protein your heart desires)

Homemade Rice Dumpling 🎋 Bought all the required ingredients n asked our sifu (my mom 😝) to teach us. The wrapping part is challenging though but I guess practice makes perfect, just need to do this few more rounds n we’ll be good 💯 Many times, homemade / homecooked food are tedious n require lots of work as compared to eating out, but the end result are very satisfying when the food we prepared are tasty n delicious. Looking at how much others enjoy the food makes us feels happy too bcs it only means our effort did paid off. 𝘽𝙪𝙩 𝙘𝙤𝙤𝙠𝙞𝙣𝙜 𝙞𝙨 𝙧𝙚𝙖𝙡𝙡𝙮 𝙣𝙤𝙩 𝙛𝙤𝙧 𝙚𝙫𝙚𝙧𝙮𝙤𝙣𝙚. Especially those who don’t enjoy long process, reading recipes, understand the taste of each ingredients or working near the hot stove.. If we anyhow cook without first understand the basic, we can’t really expect others to enjoy our food? Or expecting it to be delicious uh? This is the only dumpling filling recipe you’ll ever need that’s quick and easy to make!
[Ingredients]
750g minced meat
1kg round cabbage, shredded thinly
½ cup cooking oil
½ cup shaoxing rice wine
¼ cup sesame oil
¼ cup soy sauce
¼ cup water
1 tbsp salt
1 tbsp white pepper
To assemble, mix all the ingredients until evenly combined. Wrap them with store-bought dumpling wrappers (they are equally as good, we promise) and seal by dampening the edges. Whether boiled or pan-fried, these dumplings are delicious when dipped in black vinegar with thinly sliced fresh ginger!

材料
A
水餃皮 適量 dumpling wrappers q.s.
B
絞肉 600公克 minced pork 600g
鹽 1茶匙 salt 1tsp.
C
雪裡紅 300公克 salted vegetable 300g
高麗菜 400公克 cabbage 400g
鹽 1茶匙 salt 1tsp.
蔥花 20公克 scallion 20g
薑末 10公克 ginger 10g
糖 1茶匙 sugar 1tsp.
白胡椒粉 1茶匙 white pepper powder 1tsp.
醬油 1大匙 soy sauce 1tbsp.
米酒 1大匙 cooking rice wine 1tbsp.
香油 1大匙 sesame oil 1tbsp.
作法
1. 高麗菜切小片加鹽拌勻,靜置20分鐘後,擰乾水分備用。
2. 雪裡紅洗去鹽份後擰乾,再切碎備用。
3. 絞肉加鹽拌勻至有黏性,加入蔥花、薑末、糖、白胡椒粉、醬油、米酒與香油拌勻成肉餡。
4. 將肉餡分成兩等分,一份加入高麗菜拌勻,一份加入雪裡紅拌勻。 (一次完成兩種餡料)
5. 取餃子皮將邊緣略往外拉大。(小字—邊緣拉大,外薄內厚,更好包餡料)
6. 餃子皮邊緣抹水,每片包入約30公克的餡料,再收口成包子狀。(邊緣抹水收口不易散開)
7. 熱煎鍋,表面噴點油,將煎包的收口向下排入鍋面。(收口向下加熱不會裂開)
8. 再加入約150ml的水,蓋上鍋蓋以中小火煎至表皮膨。
9. 煎包表面淋少許油,撒上黑白芝麻即可。

美味秘訣:

海鮮包 3包/ seafood mix 3pcs(500h)
絞肉 500公克/ minced pork 500g
薑末 20公克/ginger 20g
蔥粒 150公克/scallion 150g
水餃皮 適量/ dumpling wrappers q.s.
B
水 120公克/water 120g
麵粉 1大匙/ flour 1tbsp.
調味料:
鹽 2茶匙/salt 2tsp.
白胡椒粉 1茶匙/ white pepper powder 1tsp.
糖 1茶匙/sugar 1tsp.
醬油 1大匙/soy sauce 1tbsp.
米酒 1大匙/cooking rice wine 1tbsp.
香油 1大匙/ sesame oil 1tbsp.
作法:
1. 海鮮料退冰後切成小塊。
2. 絞肉先加鹽摔打至有黏性。
3. 再加入薑末、白胡椒粉、糖、醬油、米酒,攪拌均勻。再加入海鮮料、蔥粒、香油混合拌勻。
4. 水餃皮中央放入適量餡,皮的邊緣抹上少許水。
5. 將餃子皮對折,從右端開始將單邊水餃皮捏出皺摺,再將皺褶捏緊。一直捏志左端,再將兩端封口處捏緊成半月形即可。
6. 材料B混合成麵粉水。
7. 熱鍋,倒入約1大匙油,排入煎餃,淋上作法6的麵粉水,蓋上鍋蓋。
8. 用中小火煎約12分鐘。至水份收乾、底部酥脆即可。

雞胸肉 500公克/ chicken thigh 500g
花瓜碎 250公克/ pickled cucumber in soy sauce 250g
花瓜汁 50公克/ pickled cucumber soy sauce 50g
蛋白 1顆/egg white 1pcs
薑末 20公克/ginger 20g
蔥花 100公克/scallion 100g

水餃皮 適量/ dumpling wrappers q.s.
調味料:

白胡椒粉 1茶匙/ white pepper powder 1tsp.
米酒 1大匙/cooking rice wine 1tbsp.
B
香油 1大匙/ sesame oil 1tbsp.
作法:
1.雞胸肉攪打成絞肉狀。
2.將雞胸肉與蛋白拌勻,摔打至有黏性。
3.分兩次加入花瓜汁,慢慢攪拌至肉吸收醬汁。再加入所有調味料A拌勻。
4.加入薑末、蔥花和香油,混合拌勻成瓜仔雞肉餡。
5.取水餃皮,邊緣抹上水,包入適量雞肉餡,對折捏緊,折出皺摺。
6.蒸盤抹上少許油,再排入餃子,放入水滾的蒸鍋中,蓋上鍋蓋。
7.大火蒸約6分鐘即可。
