Miss going to Plan B to eat their Kale's salad. So today I want to make my own version to fulfill my craving. It is a fun & colourful salad because in their recipe, they have added Mamee Monster's noodle crackers. The crunchiness makes the salad interesting and fun. Even kids who do not like green vegetables will end up enjoying it. Just like Lala!
Ingredients for 5 pax:
- 250g kale, thinly shredded
- 20 cherry tomatoes, cut
- 1 cucumber, shredded
- 1 bell pepper, diced
- 100g rocket leaves
- 1 green apple, shredded
- 1 carrot, shredded
- 20 strawberries, cut half
- 2 whole red onions, finely cut
- 2 lime, cut half
- 3 packs Mamee Monster crackers, crushed
- 5 to 6 tbsp Kewpie Roasted Sesame Dressing
- 3 to 5 tbsp extra virgin olive oil
- pinch of salt
- 1 tbsp mustard
You can basically add any kind of green leaf vegetable and fruits to this salad. My kids said they look like "Yee Sang" for Chinese New Year. Yayy!

Yong Tau Fu 酿豆腐 is a well known dish in the Hakka cuisine. It is a unique Chinese dish that is made of pork(originally), mackerel fish, tofu, and a variety of soy products and vegetables. Today, I am going to show you how to make Mel's style Yong Tau Fu and the various ways to use the stuffing/paste.
Because Max doesnt like fish, I am preparing the chicken version for him. It is not normal at all, but it works. We have also made brown rice Chee Cheong Fun and bean sauce to go with them.
As a child, growing up seeing my Poh Poh heating the chop board so hard with the fish paste, I was curious what she was doing. Luckily I still remember how she did it. I tried some years ago and started to add ingredients to make them more interesting.
Ingredients for the stuffing/fish paste:
. 1 mackerel fish with head and tail
. 1 kg Minced Chicken (if you plan to stuff the fish and make fishless YTF)
. chopped water chestnuts
. chopped onion
. shredded carrots
. chopped spring onions
. mashed garlic
. mashed ginger
. chopped coriander
. chopped shiitake mushroom
. oyster sauce
. soy sauce
. white pepper
. sesame oil
. salt
. 1 strip of salted fish in oil
For the vegetable and tofu for stuffing, you can get any kind of fried tofu, beancurd skin, hard tofu, bell pepper, big red and green chilis, lady fingers, eggplants, normal size bittergourd (I didnt have it then), mushrooms and any possible vegetable that can hold the stuffing to try out.
You can actually get the black bean sweet sauce from the market or just make your own.
Simplest Recipe Ingredients:
. 2 tbsp hoisin sauce
. 2 tbsp oyster sauce
. a bit of hot water
- Mix them all up and serve.
Once you stuffed the vegetables and tofu, you can pan-fry them like I did or steam them and then fry in pan again. Either way works.

白米 2杯/rice 2cups
水 2杯/water 2cups
B
絞肉 250公克/ minced pork 250g
花瓜 60公克/pickled cucumber in soy sauce 60g
花瓜汁 30公克/pickled cucumber soy sauce 30g
蔥花 15公克/scallion 15g
薑末 5公克/ginger 5g
C
蝦仁 8尾/ shrimps 8pcs
蒜末 15公克/garlic 15g
辣椒末 5公克/ chili pepper 5g
日式醬油 1大匙/bonito sauce 1tbsp.
米酒 1茶匙/cooking rice wine 1tsp.
D
蘆筍 30公克/asparagus 30g
甜椒絲 20公克/bell pepper
柳松菇 40公克/brown swordbelt 40g

作法:
1. 將所有材料B放入正方形內鍋中,攪拌均勻成瓜仔肉,蓋上密封蓋。

3. 將材料C和材料D分別放入長方形內鍋中,蓋上密封蓋。
4. 將作法1、2、3放入電蒸飯盒中,即可攜帶外出。
5. 將所有內鍋取出,打開密封蓋,在電蒸飯盒中加水至蒸煮水線,再放入所有內鍋,蓋上電蒸飯盒蓋,選擇【蒸煮】,蒸熟即可食用。
加熱各式料理 (紙包魚)
材料:
薄鹽鯖魚 1/2尾/salted mackerel 1/2pcs
薑絲 10公克/ginger 10g
辣椒絲 5公克/chili pepper 5g
米酒 1茶匙/ cooking rice wine 1tsp.
作法:
1. 取一張萬用調理紙,放上鯖魚、薑絲、紅辣椒絲,再撒上米酒後包起。
2. 將作法1放至蒸架中,電蒸飯盒中加水至蒸煮水線,再擺上蒸架、蓋上電蒸飯盒蓋。
3. 選擇【加熱】,調整時間至0.3即可。
蒸冷凍食品 (蒸包子)
材料:
包子 2個/bao 2pcs
作法:
1. 將冷凍包子放入蒸架上。

3. 蓋上電蒸飯盒蓋,選擇【燉湯】功能,蒸至時間結束即可。
煮粥煲飯 (地瓜粥)
材料:
白米 1/2杯/rice 1/2cup
水 4杯/water 4cups
地瓜塊 80公克/ sweet potato 80g
作法:
1. 地瓜塊放入正方形內鍋中,再放入白米、水(差不多加至內鍋水位線)。
2. 電蒸飯盒中加水至煮粥水線下緣,放入作法1,再蓋上盒蓋。
3. 選擇【煮粥】功能,至時間結束即可。
做優格 (優格)
材料:
優格 30公克/ yogurt 30g
鮮奶 400公克/ milk 400g
作法:
1. 將鮮奶倒入正方形內鍋中,再加入優格。
2. 電蒸飯盒中加水至優格水線下緣,放入正方形內鍋,再蓋上盒蓋。
3. 選擇【優格】,至時間結束即可。
