人類學家Barth曾經在他關於族群研究的討論中提到,他認為族群之間的邊界是複雜多元的,因此邊界實際上形成自族群間的長時間互動。簡單來說,Barth採取一種動態形成的態度來看待族群邊界。那麼,我們如果帶著Barth的觀點來重新看待南洋的「峇峇娘惹」,就會發現它一開始是一個外國人看待南洋男性(峇峇)與女性(娘惹),然後指涉的是南洋的土生華人(由華人移民與當地女性聯姻的下一代),最後是一個基於前述歷史記憶、認同情感而形成的南洋文化混合體。實際上,「峇峇娘惹」一詞本身就標示著某群特殊南洋人群與不同群體互動的歷史與文化融合之結果。那麼,判斷一個人是否屬於「峇峇娘惹」是不是有著固定、清楚的文化判准機制呢?還是依據血緣來進行族群邊界的判斷與認定?

上世紀5、60年代,娘惹是個電影題材,譬如芳艷芬《檳城艷》(1954)、林鳳《榴蓮飄香》(1959)、陳寶珠《娘惹之戀》(1969)、李麗華《娘惹與峇峇》(1956)、莊雪芳《馬來娘惹》(1959,廈語片)等都通過巨星來凸顯娘惹的風姿。
最近有人將這些昔日港片放上YouTube,冠狀病毒疫情阻斷措施期間,我陸續看了好些。影片中昔日新馬純樸的美景就像娥眉淡掃,對比之下如今則有些濃妝豔抹感。
我在水仙門居住的時候,隔壁數間店屋都有常穿娘惹裝出入的女子。當時並不知道她們是娘惹,只覺得她們的語言穿著都很特別。
娘惹指的是女性,半個世紀前外國人眼中南洋女子的化身。年紀小的女子稱為小娘惹,年紀大的尊稱為「bibik」,就像今日稱呼「auntie」一樣。至於男生,無論老幼都稱為峇峇。
峇峇娘惹是個複雜的詞彙。首先,他們也稱為土生華人。所謂「三代成峇」,第一代移民漂洋過海,到南洋落地生根,多少保留著家鄉的信仰與習俗。第二代吸收更多的在地元素,第三代已經完全融合於在地社會,文化語言等難免帶有當地色彩,因此形成峇峇文化(或娘惹文化)。
19世紀的土生華人能以中文、英文與馬來文溝通。到了20世紀,為了跟殖民地政府打工或做生意,他們的後裔多數進入英校唸書,逐漸失去以中文溝通的能力。
土生華人一般會說英語和峇峇馬來話(Baba Malay),那是一種摻雜馬來語和福建話的語言。打個比方,「Satu orang duduk tia, itu orang gua punya tia-tia」的意思是「有一個人坐在客廳,那個人是我的父親。」tia是福建話的廳,也是福建話的爹爹;gua是福建話的我。
此外,峇峇亦特別指早期華人移民族群,也就是當下的馬六甲,以及新馬獨立前在檳城和新加坡的峇峇。他們受到下南洋的「新客」的「威脅」,為了區別自己的年資與身份地位,以「Peranakan」或「僑生」自稱。簡單地說,峇峇是土生的,新客則是新移民,兩者的生活習慣和政治意識並不一樣。
雖然「peranakan」多數指土生華人,但也有土生印度人(仄迪人,Chitty),土生爪夷人(Jawi Peranakans),土生歐亞人( Eurasian Peranakans)等。我們在馬六甲葡萄牙村見到的土生歐亞人講的是kristang,一種混雜著葡萄牙語、馬來話和福建話的語言。據當地的土生歐亞人的說法,他們的先民來自16至18世紀間,屬於葡萄牙先民跟亞裔通婚的後代。土生華人在塑造現代新加坡扮演過重要的角色。譬如陳金聲捐錢建蓄水池,陳篤生捐錢建醫院,林文慶創建學校與為平民謀福利,李珠娘成為新加坡第一位婦產科女醫生,李光耀、吳慶瑞、杜進才等都是建國的中堅人物等。1831年,36位來自馬六甲的商人創建慶德會(Keng Teck Whay) ,那是新加坡最古老的土生華人互助式社團。慶德會是個完全封閉管理,不對外開放會員資格的協會,至今仍僅限於原始創會人的後代,目前只剩下22名會員。此外,1900年本地成立土生華人協會(The Peranakan Association Singapore),1910年成立戲劇協會(Gunong Sayang Association)。這些峇峇娘惹代表性組織依然存在。

The houses at Koon Seng Road were built in the 1920’s and 1930’s but it was until the early 90’s that they were to be officially marked for conservation.
The road is actually named after Cheong Koon Seng, born in the 1800′, who was one of the first thirteen students at Singapore’s Anglo-Chinese School. Until the 1970’s, the area was inhabited by Peranakan Chinese, which explains the colourful and unique Chinese architecture to be found in the area.
However, due to gang violence in the 1950’s, Koon Seng was a dangerous place to live. Many of the Peranakans moved out to safer abodes and other Singaporeans bought up many of the properties.
Either way, they’re worth millions today!

Nyonya or Peranakan cuisine is a mix of influence from the Chinese and Malay cuisines. Peranakans are descendants of early Chinese migrants who settled in parts of Malaysia, particularly Penang, Malacca and Singapore, inter-marrying with local Malays and combines Chinese, Malay and other influences. Some of them also settled in Indonesia. Compared to a typical Chinese steamed fish, Nyonya steamed fish is prepared with a twist of tanginess which is very refreshing. Feel free to increase the intensity of tanginess if you like so.
This dish is extremely suitable for Chinese new year, if you don't have kids in your family. Even if you have, just reduce the amount of chilli used so that this steamed fish can be child friendly too. Also, if you are serving this for special occasion, steam a whole fish rather than fish fillet.

Ingredients:
Serves 4
2 whole peeled tomatoes
3 cloves of garlic
1 shallot
20g of young ginger
4 bird's eye chilli - deseeded
5 pcs of kaffir lime leaves (can be replaced w/ 1 stalk of lemongrass - use only the white part)
1.5 tbsps of fermented bean paste (tau cheu) (https://amzn.to/358AaPU)
Juice from 3 pcs of calamansi (can be replaced w/ 3 tbsps of fresh lime juice)
1 tsp of sugar
1/2 tsp of salt
500g of red snapper fish fillet (you can use any white fish)
Steam the fish for 15 mins. If you're steaming a whole fish, also steam it for about 15 mins, depending on how thick the fish is. For bigger fish, you might like to steam it for 17 mins.

Feel free to increase the intensity of tanginess if you like so. You can also omit the addition of coconut milk per your preference.
Ingredients:
Serve 6
1 whole Fish (1.1kg) or Fish Head
1/2 cup of tamarind or assam juice (obtained by soaking 2 tablespoons dried tamarind in 6 tablespoons of water)
2 teaspoons of salt
500ml of coconut milk
2 thumb size ginger
7 cloves of garlic
20 pieces of shallots
3 stalks of lemongrass
12 pieces of green chilli
6 tablespoons of curry powder
1 tablespoon of turmeric powder
1 litre of water
10 - 12 lady's fingers
3 tomatoes - cut
1 whole brinjal - cut
3 onions - cut
