I love experimenting with different styles of cooking each time. Pickling is one of the fun things to do and see the outcome. This Chinese cabbage is one of the pickles I like to try out. It is so easy to prepare.

Ingredients :
- 1 whole Chinese Cabbage
- Salt
*u need a big GLASS jar

Then I was thinking, hey, besides eating that cabbage as pickle, can I actually try to fry it as a snack? So here u go my recipe and ingredients for the deep-fry version. Ya this video took me 3 times to get it completed. Fun and Nice!

Ingredients for the deep-fry flour mix:
. 2/3 cups of all purpose flour
. 1/2 tsp of baking soda
. 1/2 tsp of salt
. 3 tbsp Roasted sesame
. 1 cup water
* Mix all these above together. It is quite wet which is fine.
. 1 flat plate with flour

I may also add chili powder into the wet mix. Make sure you have a hot sauce to eat this crispy snack. Extra yummy! So appetising! So easy to prepare, you just need time for the pickling! Must try!

Who doesn't like hawker food? We all miss sitting down in a hawker centre or kopitiam to makan right? So I bought these amazing nice fishballs and kuey teow/flat rice noodles, and thought I should make the simpliest ikan bilis/anchovies broth as the soup base. This soup is so easy to make. My Poh Poh used to cook for us, especially on her busy days. It takes less than half an hour to be ready.

Ingredients :
- 2.5 litres water (or depending on your portion)
- 20 Fish Balls or chicken fillets or fish fillets
- 1 whole lettuce or any kind of vegetable
- Salt to taste
- White Pepper
- 2 tbs Oil
- 1 pack Kuey Teow noodles or any noodles
- Hand full of Ikan Bilis

Do cut some fresh chilis with soy sauce to serve with it.

Lai Yee's Kitchen- Pandan Chicken Mel's style

Thailand again. We can never get enough of Thailand and their food.
Today I want to challenge myself to make my very first pandan chicken.
It turns out to be quite "pro" .. What I will do next time is to make the chicken thiner and slightly longer and roll up a little before I wrap with the pandan leaf. Definitely not in a big chunk size. That way all the flavours and marination will be in between the meat and It will make the chicken more juicy and flavourful.

Ingredients (enough for 6 of us):
. Pandan leaves around 20 to 30 leaves
. 1 kg chicken fillets
. oil for deep frying

For the marination:
. 5 cloves garlic
. 2 cm turmeric (Typo in my video -Oops!)
. 3 tbsp lemongrass
. 5 shallots
. 5 cm ginger (I didn't have fresh ginger and I used powder
. around 10 white peppercorns
. 2 tbsp soy sauce
. 2 tbsp oyster sauce
. 1 tbsp Tamarind juice
. 2 tbsp palm sugar or brown sugar
. 2 tbsp coconut milk
. 2 tbsp white sesame
. 1 tbsp sesame oil
. 4 coriander roots
* Blend all to a smooth paste.
* It was not funny, I accidentally deleted a part of my video and cant find it back.. So my video didnt have some of the ingredients in the clip. Apology!
* Add-on : If I am not cooking for the kids, I will add on chili to be grinded together.

For the dipping ingredients :
. 3 cut chili padi
. 3 tbsp cut shallots
. 2 tsp fish sauce
. 1 tbsp soy sauce
. 5 lime juice
. chopped coriander (I didnt show in video)
* Mix up and serve

It was so good though. I wonder if I can make a tom yam flavour version. I will definitely try soon. What is next for Thai food?
