Earlier this year, while co-hosting the Asian Pastry Cup, I had the pleasure of meeting a legendary pastry chef who has founded and innovated several pastry and ice-cream techniques. He has also founded the Coupe du Monde de la Patisserie, known as the biennial World Pastry Cup held in Lyon. The one and only, Chef Gabriel Paillasson!
