蕃茄雞蛋牛肉上海麪
材料:
蕃茄(大)4個
急凍金錢腱半隻
上海粗麪2個
雞蛋6隻
蔥1條
處理:
1. 大火煲滾1鑊水,放上海麪,水再滾起時,冚蓋,熄火,浸30分鐘。
2. 牛腱,清水解凍。
3. 牛腱解凍大約3分鐘,打橫切薄片,再用清水解凍。
4. 上海麪已浸了30分鐘,檢查一下是否已軟身,擎乾水,清水沖洗乾淨,擎乾水。
5. 牛腱已完全解凍,清水沖洗乾淨,擎乾水,廚紙索乾。
6. 牛腱調味:
a. 生粉1湯匙
b. 油1湯匙
c. 胡椒粉半茶匙
d. 蠔油1湯匙
e. 糖半湯匙
撈勻。
7. 蕃茄,去椗,1開4。
雞蛋,打在碗內,打勻。
蔥,洗淨,切粒。
烹調:
1. 白鑊,大火,加入蕃茄爆香1分鐘,加入清水2湯碗(約800毫升)。
2. 加入調味料:
a. 雞粉1茶匙
b. 糖1茶匙
c. 茄汁100毫升
大火煮滾。
3. 加入上海麪。
4. 另一邊鑊,大火燒熱油2湯匙。
5. 倒入蛋漿,四面推至凝固,放上碟。
6. 麪已滾起,加入牛腱,再大火滾1分鐘。
7. 夾起麪,放入湯碗內。
8. 放好蕃茄及牛肉,加入滑蛋。
9. 注入蕃茄濃湯。
10. 放上蔥粒。
11. 完成,可享用。
Beef Shanghainese noodles with tomatoes and eggs
Ingredients:
Tomatoes (large) 4 Nos.
Frozen golden coin muscle half No.
Shanghainese noodles (thick) 2 Nos.
Eggs 6 Nos.
Green onion 1 No.
Preparation:
1. Heat up a wok of water at high flame. Put noodles. Wait for boiling up. Cover up the wok. Turn off fire. Soak for 30 minutes.
2. The beef, defrost in tap water.
3. The beef has been defrosted for 3 minutes, thinly slice it horizontally. Defrost in tap water again.
4. The noodles have been soaked for 30 minutes, check if it is soft. Drain. Rinse thoroughly. Drain.
5. The beef has been totally defrosted, rinse thoroughly. Drain. Dry with kitchen towel.
6. Season the beef:
a. Tapioca starch 1 tbsp
b. Oil 1 tbsp
c. Pepper 0.5 tsp
d. Oyster sauce 1 tbsp
e. Sugar 0.5 tbsp
Mix well.
7. Tomatoes, remove anchors, divide each into 4 shares.
Eggs, break in a bowl. Beat well.
Green onion, get it rinsed and diced.
Steps:
1. Plain wok, with high flame. Put tomatoes, fry for a minute at high flame. Add in 2 big bowls of water (about 800ml).
2. Add seasoning:
a. Chicken powder 1 tsp
b. Sugar 1 tsp
c. Tomato ketchup 100ml
Heat up at high flame.
3. Add in noodles.
4. On the other side, heat up oil 2 tbsp at high flame in wok.
5. Add in egg syrup, push to the centre of wok until it gets condensed. Put on plate.
6. Noodles have been boiled up, add in beef. Heat up at high flame for a minute.
7. Pick up noodles and put in a big bowl.
8. Put tomatoes and beef on plate in good order, add in scrambled eggs.
9. Pour in tomato thick soup.
10. Put green onion cubes on top.
11. Complete. Serve.

Being a Youtuber in Taiwan, I've had the opportunity to travel around and see a fair share of what the island has got to offer. Living 4 years in the same country usually means there's nothing that can really surprise you anymore.

En tant que YouTuber à Taïwan, j'ai eu la chance de voyager dans tout le pays et voir plus ou moins tout ce qu'il y avait à voir. Après 4 ans passé au même endroit, c'est facile de se dire qu'on a fait le tour.

대만에서 3년동안 유튜브 영상을 찍으면서 갈곳을 이미 다 가봤고 볼 것을 이미 다 본것 같은 느낌 들기 시작했어요. 4년이나 같은곳에 살면 길 가다가 놀라울만한 일이 거의 없어요.
그래도 가끔씩 인스타 볼때 천국 같은 풍경 사진 나오는데 사진 밑에 해쉬태그 #taiwan 이라고 써 있더라고요
이럴때마다 이런 사진 제가 잘 아는 대만에서 찍을 수 있다는거 믿기지 않아요.
작년부터 전세게가 락다운중이었을때 SNS에서 대만과 관련 뉴스 퍼지기 시작했어요. 대부분의 사람들이 나가지 못했을때 대만에서 거의 평소대로 지내고 있었어요. 그 화면들 인스타나 패북에서 보일 수 있었고 대만에게 어마어마한 광고가 되었고 그영상이나 사진들이 대부분 일반인이 찍은것이었어요.

清炒菜心 (4人份量)
材料:
菜心2斤
鹹蛋1隻
皮蛋1隻
薑1舊
處理:
1. 菜心,搣去菜梗,1開2,放一邊,菜遠放另一邊。
2. 菜心,清水洗2次。
3. 薑,去皮。
4. 皮蛋,菜刀輕手拍一拍外殼。
5. 鹹蛋,加入少量清水,刮去灰,清水洗淨。
6. 薑,1開2,拍鬆。
7. 皮蛋,1開8 。
8. 鹹蛋,打在碗內。
烹調:
金銀蛋菜心湯:
1. 一個人1碗水,加清水入煲內,加入菜心,大火煲滾。
2. 加入鹹蛋及皮蛋。
3. 湯已滾了1分鐘,加入鹹蛋白,等湯再次滾起。
4. 完成,湯倒入大碗中,可享用。
清炒菜心:
1. 大火在鑊中燒熱油1湯匙。
2. 放菜落鑊。
3. 冚蓋,轉慢火,焗2分鐘,焗軟菜心。
4. 轉大火,炒幾下。
5. 完成,上碟,可享用。

Salted egg 1 No.
Century egg 1 No.
Ginger 1 No.
Preparation:
1. Choy sum, tear off the rough stems, divide them into 2 halves. Put on one side. The green portion, is to be put on the other side.
2. Choy sum, rinse 2 times.
3. Ginger, get it peeled.
4. Century egg, beat the shell lightly with chopper.
5. Salted egg, add in little water. Remove the ash. Rinse thoroughly.
6. Ginger, divide it into 2 shares. Beat well.
7. Century egg, divide it into 8 shares.
8. Salted egg, break in a bowl.
Steps:
Choy sum soup with century and salted eggs:
1. One person, 1 bowl of water, add in together with choy sum in pot. Heat up at high flame.
2. Add in salted and century egg.
3. Soup has been boiled for a minute, add in salted egg white. Wait for boiling up again.
4. Complete. Pour into a big bowl. Serve.
Stir frying choy sum:
1. Heat up oil 1 tbsp at high flame in wok.
2. Put choy sum in wok.
3. Cover up the wok. Turn to low flame. Leave it for 2 minutes until choy sum turns soft.
4. Turn to high flame, stir fry for 30 seconds.
5. Complete. Put on plate. Serve
