秋日常見水果多偏涼
秋日常見水果如梨、柚子、楊桃、柿子等屬性都偏涼適合秋天天氣乾燥時候適量食用。梨子有生津潤燥的功效,有助紓緩秋燥帶來的不適,但體質偏寒、脾胃虛弱不宜多吃。而「寒底人」宜選擇屬性平和或溫熱的水果,例如可健胃生津的葡萄,健胃潤腸的無花果,以及有生津止渴功效的石榴。

柿子 — 性寒,有清熱潤肺、生津止渴的功效,適合痔瘡出血、大便乾結人士食用。

Autumn fruits are usually cool in nature
Fruits we see during autumn such as pear, pomelo, starfruit, and persimmon are cool in nature. Hence, they are suitable to be eaten during the dry autumn season.
Pear can relieve the discomfort caused by autumn dryness, as it can induce salivation and quench thirst, but individuals with a cold body and a weak spleen and stomach should not consume it excessively.
Those with a cold body should opt for fruits that are warm or mild in nature. For instance, grapes (induces salivation and strengthens the spleen), fig (strengthens the stomach and moistens the intestines), and guava (induces salivation and quench thirst).

Pomelo – cold in nature; can clear heat and relieve stagnation, clear the qi and phlegm, aid digestion and relieve hang over. It is suitable for those with digestion, bloating and belching problems, as well as those with a hangover.
Starfruit – cold in nature; can clear heat and induce saliva secretion, induce diuresis, relieve a cough and a hangover; suitable to relieve heaty lungs and coughs as well as the secretion of yellow phlegm that normally happen to frequent smokers and night owls.
Persimmon – cold in nature; can clear heat and moisten the lungs, induce saliva secretion and quench one’s thirst; suitable for individuals with bleeding hemorrhoids and dry stools.
*Those with cold-related body condition, as well as those with a weak and cold spleen and stomach should avoid eating.

What do flushed cheeks mean?
Many people think having flushed cheeks means they have a good blood and qi circulation, but from the perspective of Chinese Medicine, it can also be a heat-related symptom. If a person has warm and sweaty palms, hard and dry stools, sweats profusely, feels thirty regularly, and experiences a decreased output of urine that is yellowish, this means heat has already accumulated in the person’s body.
There are two categories of heat: asthenic heat and excessive heat. People who sleep late, women who have just given birth, and those with menopause tend to have asthenic heat, and having flushed cheeks is one of the symptoms. This is due to the lack of the yin energy. Hence, individuals with this condition need to nourish the yin and consume ingredients such as snow fungus, lily bulb, snow pear, dendrobium, radix ophiopogonis, and honey.
On the other hand, excessive heat refers to the accumulation of the yang energy. Heat would accumulate in a person’s body when he or she consumes grilled, fried, and spicy foods excessively. Likewise, symptoms may be flushed cheeks, dry mouth, bad breath, acnes, and urine in yellow color. To eliminate heat from the body, consume an appropriate amount of herbal tea and ingredients such as winter gourd, cucumber, watermelon, dragon fruit, and kiwi.

CheckCheckCin:陽光普照被視為好天氣,但熱邪過盛也會消耗氣和陰液,所以炎熱天氣下我們特別容易出暗瘡、頭瘡、喉嚨痛、發燒等上火症狀。如果所住地區溫暖又乾燥,身體需要一點點偏涼的湯水,宜選擇屬性偏涼的蔬菜入饌,例如番茄、西芹、青/白蘿蔔、白菜等,配搭具清熱解毒、消暑祛濕功效的綠豆,有助清熱解毒。
番茄 — 性涼,有生津止渴、健胃消食、涼血平肝功效,適合發熱口乾、食慾不振者食用,它亦有護膚美白的功效。惟注意番茄性涼,胃寒人士不宜食用,寒性痛經女士在月經期間勿吃,胃酸過多者不宜空腹食用。
番茄薯仔綠豆湯
功效:清熱健脾,紓緩炎熱天氣帶來的口乾、喉嚨痛、悶熱等症狀。
材料:番茄3個、薯仔2個、椰菜半個、西芹2細條、綠豆20克
做法:
1. 所有材料洗淨,番茄切件;薯仔去皮切塊;椰菜及西芹切塊備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Tomato - cool in nature, has the effects of promoting fluid promotion, quenching thirst, strengthening the stomach, aiding digestion, cooling blood and calming the liver. Suitable for fever, dry mouth, those with poor appetite. It can nourish and whiten skin. But it is cool in nature making it not suitable for those with cold stomachs. Women with cold type menstrual pain should not eat tomatoes during menstruation. Those with gastric hyperacidity should not consume it with an empty stomach.
Tomato and potato soup with mung bean
Effects: Clears heat and strengthens the spleen, relieves dry mouth, sore throat, stuffiness and other symptoms caused by hot weather.
Ingredients: 3 tomatoes, 2 potatoes, 1/2 cabbage, 2 stalks of celery, 20g mung bean
Preparation:
1. Rinse all ingredients thoroughly. Cut the tomato into pieces. Peel the potato and cut into pieces. Cut the cabbage and celery into pieces.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

スコーンもHビスケットも同じような感じですが、卵を加えていないのでHビスケットに分類されるのかも^^

【Ingredients】 Makes about 5-6 scones
250g Bread flour
8g Baking powder
20g Cane sugar(or Granulated sugar)
2g salt
70g Cold Unsalted butter
110g Cold Soy milk(+more for brush the top~1sp)
【Directions】
①Dice into 1cm cubes and cool it in the freezer for 10minutes.
②Combine flour, baking powder, sugar, and salt in a bowl and mix well.
③Add cold butter, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
④Add Cold soy milk, use a dough scraper or spoon to stir until combined.
⑤knead the dough until it comes together.
***If the dough is too sticky, add flour until it is manageable.
⑥Using a rolling pin, to flatten layers.
Fold it in three.
⑦Rotate the dough and fold in three.again,repeating this step 3-4 times.
⑧Place in the freezer for 15 minutes.
Preheat the oven to 392 °F/200℃.
⑨Cut the dough into circles with a cutter.
Or to avoid leftover dough scraps, cut the dough into squares or diamonds with a bench knife or sharp knife.
⑩Once you have gotten as many biscuits as possible out of the dough, gently re-work the dough to get out another biscuit.
⑪Place on a baking sheet.
Brush the biscuits with milk, to enhance browning.
⑫Bake for 20 mins until risen and golden on the top.

【作り方】
①バターは1cm位にカットして冷凍庫で10分ほど冷やす。
②ボウルに強力粉、ベーキングパウダー、砂糖、塩を入れてよく混ぜる。
③そこに冷たいバターを加えて指でバターを潰しながら粉に混ぜ込んでいく。さらさらの状態になればok
④よく冷やした豆乳を加えてカードやまたはスプーンなどでバターが溶け出さないよう手早く混ぜる。
***気温が高い時期はすべての材料を冷凍庫で冷やしても。
⑤ひとかたまりになるよう少しこねてまとめる。
使う小麦粉の種類によってもしべたつくようなら、ここで少し小麦粉を足して調整する。
⑥麺棒で生地を伸ばして、三つ折りにする。
⑦生地を90℃回転させ、また伸ばして三つ折りにする。
これを3-4回繰り返す。厚さ2cmにまとめる。
⑧冷凍庫で15分冷やす。
オーブンを200℃に予熱スタート。
⑨生地を丸型で抜く。
⑩型で抜いて残った生地はひとまとめにし、また抜く。
***丸型は可愛いが無駄が出るので、包丁で四角や三角にカットしても。こうすると丸型で抜くよりも生地の無駄がない。
⑪天板に抜いた生地を並べて、上に刷毛を使って豆乳を塗る。
豆乳を塗ることで焼き色がつく。
⑫膨らんできつね色になるまで20分焼く。
***焼き立てが美味しいですが、翌日食べる時はホイルに包んでトースターなどで温めるか、ラップをしてほんの少しレンチンしてください。
冷凍するときはファスナー付き袋にいれ、自然解凍後トースターで温めて下さい。
生地のまま冷凍も出来ます。
好きな大きさにカットしてからファスナー付き袋に入れて冷凍、焼くときは早めに冷蔵庫へ移しておき、そのあとに焼きます。

1. Heat up oil 100ml at high flame in wok.
2. Put tapioca starch 1 tbsp in the squid, mix well. Fry at medium flame. Cover up the wok for 2 minutes.
3. Add in salt 0.5 tsp in the squid. Turn to high flame. Fry well.
4. Complete. Put on plate. Serve.
