觀塘│純生素冰皮「月餅」
有朋友問我今年打算食哪款純素月餅?說真的,很開心看到今年多了很多純素月餅選擇 👏 不過,在食素前,我最愛的月餅是冰皮系列,因喜歡它像雪糕 😁 剛好今年認識到「純生素月餅」,即不經高溫烤焗,零膽固醇,無蛋奶,無麩質,無白麵粉,無精製糖的超級月餅 😂😂😂 而且一樣是冰皮!正啊!
圖中看到的並不是純生素月餅,而是純生素蛋糕,其實和純生素月餅也是同一系列,不經高溫烤焗!這小店今年只做了極少量純生素月餅 (我已率先試食過,真的.. 太好食喇!) 買唔到純生素月餅的話,極力推介這款蛋糕呢!正過傳統冰皮月餅 😉
結合雪糕與芝士蛋糕入口即融的綿密口感,濃郁順滑的質地是來自於天然腰果及有機椰子油!一件都幾飽肚,口味又夠創新,最重要零負擔啊,今年中秋,食多多都唔怕肥啦 ✌️ (看上去都有幾分似月餅,幾可亂真啊 🤣🤣)

Kwun Tong│Vegan Iced Raw "Mooncake"
Some friends asked me which vegan mooncake I plan to eat this year? Seriously, I’m very happy to see that there are many more vegan mooncake choices this year. However, before being vegan, my favorite mooncake is the iced series, because its texture likes ice cream 😁 But this year I found "RAW Vegan Mooncake", that is a super mooncake without high temperature baking, zero cholesterol, dairy free, gluten free, no white flour, no refined sugar 😂😂😂 and it is iced! nice!
What you see in the pictures are not mooncakes, instead they are raw vegan cakes. In fact, it is the same series as the raw mooncakes, which is not baked at high temperature! This little shop only made a very limited amount of raw vegan mooncakes this year (I have tried it, it is soooo good!) If you can’t find raw vegan mooncakes, I highly recommend this raw cake! Much better than the traditional iced mooncakes 😉
Combining the creamy texture of ice cream and cheesecake, the rich and smooth texture comes from natural cashew nuts and organic coconut oil! One piece is quite full, and the taste is innovative enough. The most important thing is zero burden. In this Mid-Autumn Festival, you can eat a lot without being afraid of getting fat✌️ (They look like mooncakes actually 🤣🤣)

Printed our precious memories of Joreen when she is 9 months old till 3.5 years old in a chronologically order on a hardcover photobook! I really enjoyed creating and designing Joreen's photobook. Although, it is quite tedious to pick the best images of our favourite memories out of so so so many pictures! ( Yes, Joreen has a #mamarazzi lol) I also spent more time customizing out the book as im not using the pre-designed templates. But for our eternal keepsakes, all worth it!
Joreen loves looking at our photos of happy memories over and over again! Hehe We had fun remembering each moment! She is especially curious with her each year birthday trip celebration especially the cake smash that we did for her at Phuket beach.
We also have another photobook created few years back, with all the milestones of baby Joreen from newborn to 9 months old. Joreen is always excited to look at her own baby version :P No regret creating these photobooks!

1st Layer - EDIBLE SAND
Use either graham crackers, wholewheat or digestive biscuits. Simple place the biscuits into a ziplock bag and crush it using a rolling pin or pastel until you get a sand like texture.
2nd layer - MOIST SOIL
3-ingredient Chocolate Mousse (serves 2)
1) 1 packet (300g) Silken Tofu
2) ¼ cup unsweetened Cocoa Powder
3) 2 - 3 tbsps. Maple Syrup or Honey
Blend all the ingredients until smooth. Pour into a bowl and chill in the fridge for 1 – 2 hours or until slightly firm.
3rd layer - DIRT
Chia Chocolate Muffins (makes 6)
1) ¾ cup Oat Flour
2) ¼ cup unsweetened Cocoa Powder
3) 2 tbsps. Nut Butter
4) 1 part of Chia Mixture: 1 tbsp. Chia Seeds + 3 tbsps. Water
5) ½ cup any Milk
6) 2 tbsps. Maple Syrup or Honey
7) 1 tbsp. Coconut Oil
8) ¼ tsp. Baking Soda
Steps
1) Pre-heat oven to 180°C / 350°F
2) In a large bowl, mix in all the dry ingredients, oat flour, cacao powder and baking soda.
3) In another bowl, mix in all the wet ingredients, milk, chia mixture, coconut oil, maple syrup, and nut butter. Stir until well combined.
4) To make the batter, pour the wet mixture into the dry mixture. Stir until you have a thick and consistent batter.
5) Scoop the batter evenly into 6 muffin tins. Bake for about 15 minutes, until the muffins are cooked through.
6) Allow them to cool down to room temperature and just use your hands to break up the chocolate muffins in chunky crumbles.
4th layer - TOPPINGS
1) Crushed Pistachios
2) Chocolate Covered Nuts and Raisins
3) Edible Chocolate Stones
4) Edible Flowers
STEPS
1) Take about ¼ to 1/3 cup of the crushed biscuits to make the "sand" layer. Spread it out evenly.
2) Next it’s the moist soil. Scoop the chocolate mousse and gently layer it on top of the sand.
3) Let’s put some “dirt” on, which will be the chocolate muffin crumble. Use about 1 - 2 muffins.
4) Now that you have all three layers, let’s decorate it! Sprinkle some crushed pistachio to mimic the “grass”. Then arrange the edible rocks and also chocolate covered nuts and raisins. And for the final touch, place your flowers right in the middle.
And there you have it, a healthy edible chocolate terrarium you can make and gift your family and friends. It’s simple, it’s stunning, it’s healthier and hey, YOU made it!
