Hailey:「最近沒有吃熱氣煎炸食物,但喉嚨痛持續出現,夏天特別容易出現此症狀嗎?」
CheckCheckCin:夏季五行屬火,所以在酷熱天氣下,就算如常飲食都容易「上火」,若加上熬夜、飲酒、多吃兩塊薯片,或者壓力大、曝曬過後或休息不足,第二天就可能出現喉嚨痛、口乾、口臭、大便偏硬甚至發燒等偏熱症狀。此時可適量進食一些清淡偏涼性的水果,例如火龍果、西瓜、或屬平性的蘋果。飲用具清熱作用的茶療,如竹蔗茅根紅蘿蔔水、粟米鬚茶、酸梅湯等。要謹記避免進食火鍋、燒烤、煎炸油膩、屬性偏溫熱的食物。如症狀持續,宜諮詢註冊中醫師治理。
竹蔗茅根紅蘿蔔水
功效:清熱健脾祛濕,適合身體有偏熱症狀如口臭、頭瘡、喉嚨痛、出痱滋等。
材料:紅蘿蔔2根、竹蔗4節、茅根300克、生薏米30克
做法:所有材料洗淨備用。紅蘿蔔、竹蔗去皮切成細件,茅根剪短。將所有材料加入約1500毫升水,武火煮至水滾,改文火煮約40分鐘,加入適量冰糖即可。

Getting sore throat all the time during summer?
“I have not had any deep fried foods lately, but my throat hurts all the time. Is this a common issue during summer?”
CheckCheckCin: Despite having normal diets, we might still end up with excessive heat when exposed to the hot summer weather.
The condition might get worse when we stay up late, consume alcohol, eat junk food, feel stressed, have lack of rest, and are exposed to the scorching sun. Heat-related symptoms such as sore throat, dry mouth, bad oral odor, hard stools, and even fever might develop.
We can consume fruits that are slightly cool in nature. For instance, dragon fruit and watermelon. We can also have apples, which is mild in nature. Drinking herbal teas such as corn silk tea, sour plum soup, and juice made from bamboo cane, cogongrass, and red carrot can also clear heat.
Avoid hotpot, barbecue, deep fried and greasy foods, or any foods that are warm in nature. If the condition persists, consult registered and licensed Chinese physicians.
Sugar cane water with carrot and chine
Effects: clears heat, dispels dampness and strengthens the spleen. Suitable for those with heat-related symptoms such as odorous breath, pimple on the scalp, sore throat, and canker sores.
Ingredients: 2 carrots, 4 sugar canes, 300g chine, 30g coix seed
Preparation: rinse all ingredients thoroughly. Peel sugar cane and carrot and cut into pieces. Cut chine into short pieces. Combine all ingredients into approximately 1500ml of water and cook on high heat until boiling. Turn to low heat and simmer for 40 mins. Add rock sugar to taste.

竹庶茅根馬蹄水,具有消暑清熱功效,最適合夏天或熱氣時飲,自家製完全無難度,閒時煲一大煲,飲唔晒放入雪櫃雪凍更加清涼🤪🤪

【竹庶茅根馬蹄水】(4人份量)
材料:
竹庶 3條
馬蹄 12粒
紅蘿蔔 2條
茅根 2扎
糖冬瓜 適量
清水 3公升
做法:
1. 竹蔗洗乾淨,可對切開;茅根洗淨;紅蘿蔔刨去皮切塊;馬蹄去皮洗淨。
2. 將所有材料 (糖冬瓜除外) 放入鍋中,倒入清水,煲滾後,加入糖冬瓜,大火煲15分鐘,轉小火煲1小時15分鐘,即成。

【合時湯水】你數得清今年打了多少次邊爐嗎?

冬天最期待吃甚麼?打邊爐!雖然香港人一年四季都打邊爐,但在冬天吃更好氣氛。不過無論選哪種湯底和食材,從中醫角度來看任何火鍋都會引致上火,令人容易出現口乾舌燥、咽喉腫痛、出口瘡、暗瘡、便秘等症狀,如果加上休息不夠,睡眠不足,更容易上火,出現嘴脣乾、口乾、心煩失眠等,所以冬天雖然屬於打邊爐的季節,但進食次數要節制,如果感到有上火症狀,可以喝碗清熱潤燥湯,緩減一下打邊爐的熱氣。
食材小貼士:
茅根屬性偏涼,有涼血止血,清熱祛濕的功效。適合大人小兒小便偏黃、容易流鼻血等症狀。
雪梨紅蘿蔔竹蔗茅根湯
功效:清熱滋陰潤燥,紓緩皮膚乾、口乾及便秘等症狀。
材料:雪梨2個、紅蘿蔔1條、馬蹄8枚、竹蔗1枝(約3-4段)、鮮茅根1札
做法:
1. 所有材料洗淨,雪梨去芯切塊;紅蘿蔔、馬蹄去皮切塊備用。竹蔗切半以刀背拍一拍即可。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮30分鐘即可。當湯底或加適量冰糖直接飲用都可以。

Clear moistening hotpot soup base
What do we all look forward to during winter? Hotpot! Hong Kong people love this activity all-year round but it is most enjoyable during the winter season.
However, no matter what choice of soup or ingredients we use, they are considered hot natured from the perspective of Chinese Medicine, and would cause symptoms such as dry mouth and tongue, sore throat and the swelling of the throat, canker sore, acne, insomnia and stress.
Though winter is a lovely season to enjoy hotpots, we need to watch our intake and not consume it too regularly. If we feel heat is slowly accumulating in the body, we can drink a bowl of clear moistening soup, to relieve heat from the hotpot.
Tips on ingredients:
Couch grass root is cool in nature, can cool the blood and stop bleeding, clear heat and eliminate dampness from the body; it is suitable for adults and children with yellowish stool and frequent nosebleeds.
Sugar cane and couch grass root soup with pear
Effects: Clears heat, nourishes yin and relieves dryness. Suitable for those with dry skin, dry mouth and constipation.
Ingredients: 2 pears, 1 carrot, 8 water chestnuts, 1 sugar cane (3-4 segments), 1 bunch of fresh couch grass root
Preparation:
Rinse the ingredients throughly. Peel pear and core pear. Peel carrot and water chestnuts and cut into pieces. Cut sugar cane in half and smash with back of the knife.
Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 30 minutes as hotpot soup base or add rock sugar to taste.

遠離藥房街及水貨客,一個有24年歷史的石湖墟市政街市,算是區內最能尋回民生味道的地方。
走上滿滿人潮的街市一樓,是尋找蔬菜的寶地,皆因單是菜檔已有超過二十多檔。當中佔三個鋪位,全街市內最大型菜檔潤澤,更是無人不曉的番薯專賣店。檔主是人稱佘太君的劉秋琴,八十年代已在上水舊墟經營菜檔,到1994年遷入市政街市,已擺檔賣菜三十年。
十多年,前面對街市裏菜檔檔口多又競爭大,為突圍而出,看準了番薯愈來愈受歡迎的熱潮,慢慢發掘不同番薯品種放在檔口內售賣。「我們常常到聯和墟菜欄取貨,欄口的人問:有番薯你試不試?好吧!取一些試試看好不好賣,想不到銷路很不錯。」佘太君說。
至今檔口已有十多款不同產地品種的番薯,本地與中國的有七八款,還有外國貨,像是印尼、日本、澳洲及越南等。因為每款番薯都必會試清楚味道,十多年下來,佘太已變成番薯專家,對不同番薯的產地、味道、質地如數家珍,只要告知想怎樣吃,煲糖水或燒烤或蒸,佘太君都會有好推介。番薯購回來後,佘太君都會細心處理,把不優質的丟掉,整理乾淨再整齊地分門別類排列,「客人吃過覺得好,覺得值得買,人又老實,番薯又優質,就能吸引多點顧客來關照。」佘太君說。
番薯以外,同時有售煲湯料,像野生粉葛、竹芋、牛大力、土茯苓、紅菜頭、粟米鬚、石馬蹄、栗子、甘蔗、青紅蘿蔔、茅根、牛蒡等等。全部都會去殼去皮斬件,買回家只需清洗一下就能熬湯,「告訴我多少人喝,想止咳潤喉清熱或是要怎樣的功效,我就會介紹給他們。像現在這天氣要喝潤湯,就可以熬淮山栗子海竹及龍眼肉,這個效果很不錯,夠滋潤。」佘太君說。

上次三煲齊開就係煲咗呢煲蔗水,比阿仔下火清下毒?次次馬蹄都會去皮,前排同菜檔姨姨傾開計,佢話馬蹄吾去皮煲會更加出味,今次試左堅得!
功效:竹蔗、茅根、馬蹄有清熱下火,生津止渴,涼血解毒,舒緩肺燥,咽喉腫痛,降血壓。而紅蘿蔔和栗米就健脾益氣
材料:
竹庶 2支
茅根 1束
馬蹄 10粒
紅蘿蔔 1條
水 2.5L
做法:
1) 竹蔗同馬蹄先用水加百潔布清洗一下表面竹庶劈開,馬蹄切走頭尾然後輕輕拍一拍,紅蘿蔔去皮切粒,茅根洗乾淨備用;
2) 水滾後將所有材料放入,大火滾10分鐘,轉細火煲30分鐘便完成

1)馬蹄可以不用去皮,只需切走頭尾然後輕輕拍一拍,更加出味
2)本身竹蔗已經好香甜,所以我冇落甜;大家可以飲之前試試,自行調味(如需要可落冰糖)
