港珠澳大橋開通,去澳門覓食更方便。除了街頭小吃、葡菜、冰室,澳門數間國際星級餐廳,消費雖高,但出品頂級,值得一試。其中一間是位於永利皇宮酒店,曾摘下米芝蓮兩星榮譽的「泓」日本料理。
能夠成為澳門唯一獲得米芝蓮兩星榮譽的日本餐廳,實力是關鍵,餐廳邀來三位日本米芝蓮星級大師領軍,包括主理壽司的嶋宮勤,主理天婦羅的元吉和仁及主理鐵板燒的吉田純一,三位都是日本頂級日菜高手,尤其是七十多歲的嶋宮勤,他於1971年在北海道創辦「壽司善」,擅長製作江戶前壽司,曾獲米芝蓮兩星殊榮。嶋宮師傅在日本飲食界的地位顯赫,除了經常上電視,更獲日本政府頒發「現代之名匠」榮譽,是日本僅有兩位獲此榮譽的壽司大師之一。多年來他曾多次獲邀為世界各國的貴賓及名人,包括於美國總統克林頓及奧巴馬製作壽司料理。
嶋宮師傅十分注重食材的「時鮮、應季」,泓有專人在日本每天搜索最新鮮的食材然後空運到澳門。所以從日本各地引進的都是最頂級食材,包括來自北海道的海膽和秋鮭、青森縣的金鎗魚,石川縣的海鱸魚等。
其次是食材的處理及保存,不單是將海產放入雪櫃的簡單程序,亦包括了醃漬、熟成,例如吞拿魚就指定根據天氣,熟成五至七日不等,令肉質更嫩,魚味更濃。北海道海膽,嶋宮師傅也堅持按季節與地區去區分味道。夏日供應沾了鹽的紫海膽,提鮮增甜,初春供應馬糞海膽,味道最濃。
入秋是北海鮭魚當造季節,聯群結隊產卵,嶋宮師傅認為此時的鮭魚子味道最出色,故入秋來到他主理的餐廳,就可以嘗到鮮醃的生筋子,拌柚子汁吃,鹹鮮回甘,味帶清香,粒粒在口中爆開,都是海洋氣息。嶋宮師傅的廚藝亦十分出色,成名技術是三步做好一件壽司,這個方法讓手與食材接觸的時間可以減到最短,體溫便不會對食材有太大的影響。他建議食客坐壽司吧,認為壽司應該在呈上後三秒內吃,才是享受最佳味道的方法。
除了食物,裝潢方面亦十分講究,餐廳入口處一座黃色以鋼材鑄成的日本傳統摺紙工藝雕塑,內部以和服腰帶作設計元素,典雅高貴。日本扁柏製造的壽司吧,還有現代藝術家Sush Machida畫作,吃味道也吃環境,消費高一點也合理吧。
